SKINNY 3 FLAVORS CITRUS MOUSSE PIE
This is a delicious warm weather desert. I created it to be made in three different citrus flavors. Choose Lime, lemon, or orange. It is like a mousse. There is a very fattening high sugar pie similar to this out there. I wanted to create something cool refreshing and low-fat. If you're dieting, or if you're not dieting....

Steps:
- 1. Note: Match your Jell-O flavor with your juice and zest. orange Jello, Use orange zest and juice. Lime Jello, use lime zest and lime juice. Lemon, use lemon zest and lemon juice
- 2. Gather ingredients
- 3. Mix water with jello thoroughly. Place in fridge to cool down. Cool about 15-20 minutes.
- 4. Beat cream cheese, sugar, yogurt, lime, lemon, or orange juice, with lime, lemon, or orange zest. Beat together until smooth.
- 5. On low speed add in the cooled jello liquid to cream cheese mixture. Mix until smooth.
- 6. Fold cool whip into mixture until well combined and no streaks show.
- 7. Pour into crust and refrigerate until firm about 4-6 ours
- 8. Slice and serve with fat free cool whip, cool whip free, or any fat free canned whipped cream. Garnish with lime, lemon, or orange zest

Steps:
- In a saucepan, combine gelatin, lemon juice and water.
- Stir over medium heat until dissolved.
- Remove from heat and stir in grated lemon zest.
- Set aside.
- In a large bowl, combine cream cheese and sugar.
- Beat until smooth.
- Blend in gelatin mixture.
- Refrigerate 15 minutes until thick.
- Fold whipped cream into cream cheese mixture.
- Spoon filling into baked pie crust.
- Refrigerate 1 hour or until firm.

- For Crust:
- Preheat oven to 350°F. Finely chop nuts in processor. Add ground cookies, sugar and butter and blend in using on/off turns until moist crumbs form. Press mixture firmly onto bottom and sides of 9 1/2-inch deep-dish glass pie dish. Bake crust until golden, about 10 minutes. Cool.
- For Filling:
- Boil grapefruit juice and 1/4 cup sugar in heavy medium saucepan over high heat until reduced to 3/4 cup, about 15 minutes. Meanwhile, sprinkle gelatin over lime juice and let stand 10 minutes. Add gelatin mixture, white chocolate and 1/4 cup cream to grapefruit mixture and whisk over low heat until white chocolate and gelatin melt and mixture is smooth. Pour into large bowl. Refrigerate until cool but not set, whisking occasionally and scraping down sides of bowl with rubber spatula, about 2 hours.
- Beat cream and sugar to stiff peaks. Spoon whipped cream into pastry bag fitted with large star tip. Pipe 15 rosettes of cream around edge of pie. Place 1 lime slice rounded side up between each rosette. Fill center with chocolate curls if desired. (Can be prepared 4 hours ahead. Refrigerate.)

- In bowl, stir boiling water into gelatin, mix until dissolved. Add ice cubes and cold water; stir until dissolved. Whisk in milk, zest, juice and food coloring until smooth. Chill 1 hour or until slightly thickened. Fold in 3 cups topping until blended. Pour 3 cups filling into crust; freeze 2 hours. Chill remaining filling 2 hours or until thickened. Spread thickened filling over frozen filling. Freeze 8 hours or overnight. Spread pie with remaining whipped topping. Let stand 30 minutes before serving.
