SMOKED PORK CHOPS WITH POTATOES & SAUERKRAUT
I love this no fuss dinner. It is perfect for those cold days of Autumn. I like to add a layer of apples on top of the chops before covering them with the second layer of potatoes & Kraut.

Steps:
- Mix the potatoes and the kraut.
- Place half the sauerkraut/potato mixture in a Pyrex pie plate.
- Spread 1 1/2 tbsp of mustard over the sauerkraut.
- Place the chops on the sauerkraut.
- Spread remaining mustard on the chops.
- Cover with remaining sauerkraut/potato mixture.
- Season with salt & pepper.
- Put the pat of butter on top.
- Seal with foil and bake in a 350°F oven for 45 minutes to an hour.
- I like uncover the chops for the last 15 minutes or so to lightly brown the potato topping.

SMOKED PORK CHOP & SAUERKRAUT CASSEROLE
I searched 8 pages of Sauerkraut recipes and not one had smoked pork chops so I made up this recipe and - well, not bragging, but it tickled our taste buds! This is not a recipe for a true sauerkraut lovers as it is very mild re the sauerkraut. Hey you non "Kraut" lovers you may love it! Instead of tomato juice you may substitute wine, chicken stock or apple juice, This recipe would cook nicely in a crock pot too I think. I would layer it the same and cook on low for 6 hours. Meal in one dish

Steps:
- Preheat oven to 325°F.
- In a 1 quart size casserole put the kraut on the bottom, then the potato slices, next the carrots, tomato & onions. Pour in the tomato juice.
- Place the chop(s) on top.
- Spread the mustard on the chop(s) and cover with the applesauce.
- Cover tightly and bake in 325°F oven for 2 1/2 hours.

SMOKED PORK CHOP WITH SAUERKRAUT, POTATOES & APPLESAUCE
This is a throw together, pop in oven & 45 minutes later it's dinner time. I had some left over apple sauce, potatoes and a chop so I created this recipe - it was very tasty so I thought I would share the recipe. I have made this recipe for one serving but increase as many times as you wish. Add more potato if you wish.Could be cooked on the BBQ too

- Place a piece of foil in a baking dish large enough to hold the chop and other ingredients. The foil must be large enough to seal over the top of the chop
- Place half the apple sauce in the bottom of the dish.
- Add half of the sauerkraut.
- Add half the potato slices.
- Season with pepper.
- Coat one side of the chop with half the mustard and lay it, mustard side down on the potato slices.
- Coat the top side of the chop with remaining mustard.
- Add remaining applesauce, then kraut and top with remaining potato slices.
- Seal the foil over the top.
- Bake in 350° oven for 45 minutes.
- If you wish open the foil to brown the taters for the last 15 minutes.
SMOKED PORK CHOPS WITH SAUERKRAUT

- 1. In large, heavy skillet over medium heat, cook bacon, apples and onion together until onion is softened. 2. Add sauerkraut, cumin, juniper berries, wine and water. Cook uncovered for 10 minutes. 3. Add chops, cover, and simmer for 1 hour.
SMOKED PORK CHOPS IN SAUERKRAUT
Steps:
- Preheat your oven to 300F. In a dutch oven, heavy pot or deep saucepan quickly brown the chops in a small amount of oil or pork fat. Remove the chops and set aside. Lower the heat and add the sauerkraut and remaining ingredients. Tuck the browned pork chops into the sauerkraut mixture, making sure they're completely surrounded to retain their moisture. Place in the oven uncovered for 1 to 2 hours. Serve with warm German-style potato salad and asparagus.
KNOCKS AND CHOPS: KNOCKWURST WITH SPICED SAUERKRAUT AND SMOKED PORK CHOPS WITH BACON, APPLE AND ONION

- Pierce the casings of knockwurst and arrange in medium skillet. Add 1 inch of water, bring to a simmer and warm wursts through. Remove from the pan. Drain the skillet and add butter. Melt butter over medium heat. Cut each knockwurst into 1/3 and add back to the pan to crisp casings. Add sauerkraut to the pan, sprinkle in caraway, add bay leaf and peppercorns. Pour the beer into the skillet. When the beer comes to a bubble reduce heat to simmer.
- Heat a second skillet over medium high. Add oil, 1 turn of the pan and add chopped bacon. When the bacon renders its fat, add onions and saute 3 to 5 minutes, then add sliced apples and saute mixture another 2 or 3 minutes. Add smoked chops to the pan and caramelize meat on both sides, 2 or 3 minutes. Remove chops to a plate and loosely cover with foil. Pour the beer into the pan and reduce heat to a simmer.
- When you are ready to serve, cut several slices of pumpernickel in half down the middle. Place a bowl of spicy mustard alongside the pumpernickel bread for passing at the table.
- Place 2 or 3 chunks of the knockwurst on each dinner plate on a bed of spiced sauerkraut. Serve 3 pieces of smoked pork chops topped with bacon, apples and onions. Place deli style large dill or half sour pickles, German cheeses and pretzels out for an evening of uber snacking!
GERMAN PORK CHOPS AND SAUERKRAUT
As a soldier during WWII my Dad learned to make this hearty pork dish from a local German woman during the Allied occupation of Germany. I don't know the German name for it, but it is delicious!

- Preheat oven to 350 degrees F (175 degrees C).
- Heat a large nonstick skillet over medium-high heat, and brown the pork chops on both sides, about 5 minutes per side. Place the chops into a 9x13-inch baking dish.

BRAISED SAUERKRAUT WITH SMOKED PORK

- Boil smoked pork chops in large pot of water 5 minutes. Drain pork chops well.
- Heat olive oil in heavy large Dutch oven over medium-high heat. Arrange half of sauerkraut in bottom of Dutch oven. Sprinkle sauerkraut with sliced garlic, bay leaves and whole peppercorns. Arrange pork chops, potato pieces and quartered tomatoes over. Cover with remaining sauerkraut. Pour 3 cups water over. Bring mixture to boil. Reduce heat; cover and simmer 25 minutes, stirring occasionally (be careful not to break up potatoes).
- Uncover and boil until most of liquid evaporates and potatoes are tender, about 20 minutes. Remove Dutch oven from heat. Cover and let stand 15 minutes. Discard bay leaves and peppercorns.
- Transfer pork chops, potatoes and tomatoes to large plate. Cut potatoes into large serving-size pieces. Spoon sauerkraut and any remaining liquid in Dutch oven onto center of serving platter. Arrange pork chops, potatoes and tomatoes on serving platter around sauerkraut and serve.

- Combine the paprika, coriander, 1 teaspoon salt and black pepper to taste in a small bowl. Season both sides of the pork with this spice mixture.
- Add the oil to the preheated skillet. Add the pork in a single layer in the pan. Cook, without moving, until lightly golden brown, about 1 minute. Flip the meat and scoot to the outer edges of the pan. To the open space in the middle, add the onions and a pinch of salt. Cook for 2 minutes, stirring the onions occasionally.
- Add the sauerkraut and continue cooking until the onions have softened and the sauerkraut turns golden brown, about 1 1/2 minutes. - In a large skillet or electric frying pan, cook bacon until it just begins to brown. Pour off fat, then add onion. Saute until onion is transparent.
- Stir in sauerkraut, carrots, brown sugar, chicken broth and wine.
- Tie up spices and herbs in a small bag of cheesecloth. Bury in the center of the sauerkraut mixture. Cover and simmer 10 minutes.
- Diagonally score 1 side of each bratwurst. In a separate skillet brown the bratwurst and pork chops.
- After the sauerkraut mixture has simmered 10 minutes, add potatoes, working them down into the mixture. Top with browned bratwurst and pork chops. Cover and simmer 15 minutes.
- Add smoked sausages. Simmer, covered another 15 minutes.
- Remove pouch of seasonings before serving.
