Smoky Chicken Skewers image

Steps:

  • Heat broiler and move rack close to heat source. Soak wooden skewers in hot water. Combine oil, paprika, sugar, salt and pepper in a bowl. Thread chicken, tangelos and onion on skewers, alternating pieces and packing tightly. Place skewers on a large rimmed baking sheet and brush with oil mixture. Broil, turning once or twice and basting with pan drippings, until chicken is no longer pink inside and tangelos and onion are browned, 7 to 10 minutes.

8 wooden (or metal) skewers
3 tablespoons olive oil
2 1/2 teaspoons smoked paprika
1 teaspoon brown sugar
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 pounds chicken tenders (about 16 tenders), cut crosswise into 1-inch chunks
4 tangelos (or small oranges), peeled and segmented
1 medium red onion, cut into 1-inch chunks

Steps:

  • You need 15 skewers: if wooden, soak in water for 10 mins. Cut chicken into 3cm pieces and place in a bowl. Add 1 tbsp olive oil, the spices, garlic and vinegar, toss well and season. You can do this up to a day before and refrigerate.
  • Thread 2-3 pieces on each skewer. Pour remaining oil in a frying pan or rub onto a griddle pan. Get the pan hot and sear the chicken for 3-4 mins on each side - you may have to do this in batches, keeping the cooked skewers warm in a low oven. Serve with smoky aïoli if you like.

Steps:

  • Cut the chicken thighs into chunks - about 1.5in and then set aside.
  • Make the marinade. Strip the leaves from the tarragon and place them in a mortar with the roughly chopped chili. Add the garlic, a generous pinch of salt, a grinding of pepper and pound everything to a paste with a pestle (alternatively use a food processor).
  • Stir in 1 teaspoon of smoked pimenton (this adds a lovely smoky flavour to the marinade). Add the tomato paste, balsamic vinegar and olive oil. Stir thoroughly and pour over the chicken. Leave the chicken to marinate until ready to cook.
  • Preheat the grill. Thread the chicken pieces onto skewers and cook the chicken for 4-5 minutes on each side, until golden and cooked through. Serve immediately.
