Steps:
- Preheat the oven to 425 degrees. Heat the butter in a small skillet and add the onion and garlic. Cook until wilted, and cool briefly.
- Place the meat in a mixing bowl and add the bread crumbs, nutmeg, Tabasco, cumin, salt and pepper. Add the onion mixture, herbs of your choice and yogurt, then blend well. Pack the mixture into a loaf pan about 9 by 5 by 3 inches. Smooth the top with a spatula.
- Set the pan in a baking dish and pour 1 1/2 inches of boiling water around the pan. Bake for 45 minutes.
- Let rest in a warm place for about 15 minutes before serving. Serve with the mushroom sauce.

- Sauté mushrooms, onion, carrot, celery, jalapeno and green pepper until soft.

- Saute onion in oil in a small skillet until tender. Cool to room temperature., Combine the eggs, milk, Worcestershire sauce, mustard, crackers, salt, pepper, thyme and onion in a large bowl. - Heat oven to 350ºF.
- Chop 1/2 cup parsley and 3 cloves garlic. Add to large bowl with next 5 ingredients and 2 Tbsp. dressing; mix lightly. Shape into oval loaf in 13x9-inch baking dish sprayed with cooking spray; top with sage leaves.
- Bake 50 min. Brush with 2 Tbsp. honey. Bake 15 min. or meatloaf is done (160ºF). Remove from oven; cover loosely with foil. Let stand 10 min.

- Make the meatloaf: Heat oven to 350 degrees and grease a rimmed baking sheet with oil. Heat 2 tablespoons oil in a medium skillet over medium. - Preheat oven to 375 degrees. Pulse bread in a food processor until finely ground. (You should have about 2 1/2 cups breadcrumbs.) Transfer to a medium bowl.
- Pulse garlic, onion, celery, carrot, and parsley in food processor until finely chopped. Add to breadcrumbs. Add meats, egg, 1/4 cup ketchup, the mustard, Worcestershire sauce, 1 tablespoon salt, and 1/2 teaspoon pepper; mix together using your hands. Transfer mixture to a 5-by-9-inch loaf pan.
- Stir together remaining 1/2 cup ketchup and the brown sugar until smooth; brush onto meat. Set pan on a rimmed baking sheet, and bake until an instant-read thermometer inserted into the center reaches 160 degrees, about 1 hour 20 minutes. Let cool slightly.

This is by far my favorite meatloaf recipe. It is moist and savory, and has always been a big hit anytime I've made it. If you want to lighten it up, you can substitute ground turkey, and it still turns out great!
