TASTY FROZEN COLLARD GREENS

Was looking for a low fat and healthy way to fix Collard greens that DH would eat as all the low fat version we had tried always left him saying its ok although a bit too spice. This recipe has a very slight sweet under tone which I believe comes from the sweet onion and the Sriracha chili sauce.

Tasty Frozen Collard Greens image

Steps:

  • In a large pot over medium heat oil and butter, sauté the onions and garlic until softened, but not browned just about 2 minutes.
  • Add frozen chopped collard greens, water, flavor boost and Sriracha chili sauce. Cover and simmer 6-8 minutes until greens are tender.
  • Serve piping hot with addtional Sriracha chili sauce on the side.

1 lb frozen chopped collard greens
1/4 cup water
1 chicken or 1 vegetables, flavor boost
1 tablespoon sriracha chili sauce (more or less to taste, found a tablespoon keeps everyone happy and those who want more can)
salt & freshly ground black pepper

Southern-Style Collard Greens image

Steps:

  • Brown 4 slices diced bacon in a pot; drain on paper towels. Add 1 cup diced onion to the pot and cook 3 minutes. Add 1 pound thawed frozen collard greens, 1 cup chicken broth and water to cover; simmer 20 minutes. Stir in the bacon, some butter, salt and pepper.

Soul Cafe's Collard Greens image

Steps:

  • Heat olive oil in a large pot. Add onions and cook over medium-low heat until caramelized. Add vinegars and water and bring to a slow boil. Add collard greens. Simmer until tender.
  • Add vegetable base, cayenne and sugar. Continue to simmer until flavors are absorbed by greens. Serve hot.

1/2 cup apple cider vinegar
1/2 cup balsamic vinegar
1 1/2 cups water
4 pounds collard greens, roughly chopped
1 tablespoon vegetable base (concentrated vegetable stock)
1 teaspoon cayenne pepper
1 1/2 cups sugar

Additional Information If you used frozen collards, simply pour them - frozen - right from the package to the pot. If you use smoked neck bones, they usually don't take as long to cook as ham hocks. Save the extras in the refrigerator. They should keep for a long time.

Steps:

  • Take 2 or 3 smoked ham hocks and put them in a large (6 quart) pot of water. Bring the water to a boil and let boil for about 1 1/2 hours. Add water as it boils down. You want the ham hocks to be falling apart before you add the collard greens.
  • Take the collard greens and separate the leaves (if fresh) . Rinse each leaf individually under cold running water. Stack several leaves on top of each other. Roll leaves together, and slice the leaves into thin strips.
  • Next, add collard greens to the pot. Since this is a lot of collards until the pot is full. Allow them to wilt as they cook - then add more. Add salt, cover and cook for 30 minutes on medium heat. Stir every few minutes to distribute the smoked meat taste evenly. Taste to confirm they are the tenderness you prefer.
  • Serve with your favorite meat dish such as chitterlings.

Vegetarian Southern-Style Collard Greens image

Steps:

  • In a large pot over medium heat, heat oil and butter. Saute the onions until slightly softened, about 2 minutes, then add the red pepper flakes and garlic, cook another minute. Add collard greens and cook another minute. Add the vegetable stock, cover and bring to a simmer. Cook until greens are tender, about 45 minutes. Add tomatoes and season with salt and freshly ground black pepper. Add a little smoked paprika and cider vinegar to taste if desired. Enjoy!
