Spiced Watermelon Honey image

Steps:

  • First, remove all green outer rind and red meat from watermelon rind and discard, retaining only the white part. Force remaining white rind through food chopper, using coarse blade. Measure it, there should be 6 cups. Put in a large saucepan or stockpot with water.
  • Cook slowly, uncovered, for 25 minutes, or until melon is translucent. Add sugar and lemon. Tie spices in a cheesecloth bag and add with salt to first mixture. Cook slowly, stirring frequently, for 1 hour, or until thickened. Remove spice bag, ladle mixture into hot sterilized jars; seal.
  • Yield: about 2-1/2 pints.

Steps:

  • In a small pan over medium heat, bring the honey and 1/2 cup water to a boil. Remove from the heat and add the star anise and thyme sprig. Let it cool, then strain and set aside.
  • Add the pineapple, cantaloupe, honeydew and red and green grapes to a large bowl and pour over half the spiced honey. Toss gently to coat. Add more honey if you like.

  • For glaze, place soy sauce, chili sauce, honey, garlic and 2 cups watermelon in a blender; cover and process until pureed. Transfer to a small saucepan; bring to a boil. Cook, uncovered, over medium-high heat until mixture is reduced by half, about 10 minutes. Reserve 1/4 cup glaze for serving., On 4 metal or soaked wooden skewers, alternately thread shrimp, onion and remaining watermelon. Sprinkle with salt and pepper., Place kabobs on an oiled grill rack over medium heat.   • Put the lemon slices, cinnamon sticks and honey into a saucepan.

  • Place watermelon rind in a deep pot and add the sugar.
  • Cover and let stand at room temperature overnight (at least 4 hours) to macerate.
  • In the morning, bring to a simmer, stirring to thoroughly dissolve the sugar.
  • Add the remaining ingredients, cover and simmer for 2 1/2 hours. Cubes will be translucent when done.
  • Uncover and bring to a boil. Cook for 30 minutes, stirring often, to reduce the syrup to a thick caramel-like liquid.

Steps:

  • In a large bowl, stir together oil, vinegar, lime zest and juice, honey and jalapeño. Season generously with salt and pepper. Add the red onion and toss to coat. Let marinate, 10 minutes.
  • While the onions marinate, chop the watermelon and the pineapple into 1-inch cubes, discarding any seeds. Add watermelon and pineapple to the vinaigrette and toss to coat; season to taste. Refrigerate until serving.
