SPINACH AND CHEESE MEATBALLS

These meatballs are simple to make, and freeze really well. I found this recipe online and made some modifications (the original source of the recipe has since disappeared). Note: I usually make these with GoLean ground beef substitute

SPINACH MEATBALLS

This recipe provided by Texas Beef Council. It is lean and packed with iron. Baked, not fried and can be frozen.Update: 03/13/2010 Elainemae, a reviewer suggested we use infant's rice cereal instead of breadcrumbs and it serves a dual purpose - increase the iron content. Great idea! :)

BAKED SPINACH, FETA, AND TURKEY MEATBALLS

These spinach, feta, and turkey meatballs are quick and easy to make, easy to freeze, and taste great when reheated. My son and I call these "Combine Nuggets." Did you know that a combine is a giant tractor that harvests crops from the field? Well, I most certainly didn't until my 3-year-old told me! Therefore, thanks to the hardworking combines we can put the green things in our nuggets.
