"I was cooking summer squash for dinner when my grandchildren informed me they'd just had it the night before," writes Marguerite Shaeffer of Sewell, New Jersey. "To disguise the vegetables, I added pasta, spaghetti sauce and cheese, and the kids loved it! I often make it for lunch these days."

- In a skillet, saute squash in oil for 2-3 minutes or until tender. Stir in pasta and spaghetti sauce; heat through. Transfer to a greased 3-cup baking dish. Sprinkle with cheese. Bake, uncovered, at 350° for 5-10 minutes or until heated through and cheese is melted.

BUTTERNUT SQUASH PASTA CASSEROLE

- Preheat the oven to 375 degrees F.
- Cook the pasta in boiling water to not quite al dente according to the package directions. Drain and transfer to a casserole dish.
- Add the olive oil to a large pot over medium-high heat. When the oil is hot, add the onion and cook for a minute or so to slightly soften. Add the butternut squash and season with salt and pepper. Pour in the stock, bring to a boil, reduce to a simmer and cook until the squash has softened, about 5 minutes. Puree in the pot with an immersion blender.
- Stir the squash mixture into the casserole dish with the pasta, then mix in the peas, red pepper and goat cheese. Cover the pasta mixture with the grated cauliflower, then season with salt and pepper. Top with the mozzarella, Parmesan and half the parsley.
- Bake until the casserole is browned and bubbling, 40 to 45 minutes. Sprinkle with the remaining parsley.
BAKED SPAGHETTI SQUASH
Spaghetti squash is easily prepared in the oven--just cut it in half and bake it until the skin is easily pierced with a fork. You can then use it as a low-carb pasta substitute or turn it into salads. I often just eat it simply with some Parmesan cheese and olive oil. If you want you can season it before you bake it, but I usually spice it up later.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet with olive oil.
- Place spaghetti squash, cut-side down, on the baking sheet.
- Bake in the preheated oven until skin can easily be pierced with a fork and spaghetti squash is tender, 40 to 60 minutes, depending on size of spaghetti squash.
- Remove from oven and allow to rest until cool enough to handle. Scrape out flesh with a fork and discard skins.

NO PASTA "PASTA" BAKE WITH SPAGHETTI SQUASH FOR TWO
Having been recently diagnosed with insulin resistance, I often have difficulty finding low-carbohydrate meals I like. I heard a lot about spaghetti squash as a replacement for spaghetti and thought I would give it a try. This dish is excellent served with a fresh salad and a glass of red wine.

- Preheat oven to 350 degrees.
- Fill a small baking dish with 1/2 to 3/4 of an inch of water.
- Cut the spaghetti squash in half and place flat side down in the water. Cover with foil and bake for 40 minutes.
- In a small bowl, combine ricotta, Parmesan, parsley, Italian seasoning and salt and pepper. Use a garlic press to crush the garlic clove and add it to the mixture.
- When the squash is finished cooking, allow it to cool long enough to be handled. Use a fork or spoon to scrape the flesh of the cooked squash. Use long strokes lengthwise and the squash will come out looking much like spaghetti.
- Empty the water out of the baking dish and spray it with fat free cooking spray. Return the squash flesh to the baking dish.
- Combine the ricotta mixture with the squash and spread evenly in the baking dish.
- Spread the spaghetti sauce over the squash and ricotta mixture and spread the mozzarella cheese evenly over the top. Sprinkle more parsley flakes over the top to add color.
- Bake uncovered in the 350 oven for 30 minutes or until the mozzarella begins to bubble and turn brown.
- Allow the dish to cool for 5-10 minutes before eating.
WINTER SQUASH PASTA BAKE WITH COLLARD GREENS
This is a lovely, wholesome one-dish pasta and collard greens dinner that lends itself well to substitution. This is a great meal by itself with just garlic bread and a crisp Riesling.

- Preheat the oven to 425 degrees F (220 degrees C). Roll deli ham and thinly slice; set aside.
- Mix squash, 1 tablespoon olive oil, and salt in a bowl and place on a baking sheet.
- Bake in the preheated oven until firm, but tender, about 20 minutes. Turn on the oven's broiler.
- While squash bakes, bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain, reserving 1/2 cup pasta water.
- Heat remaining olive oil in an oven-proof skillet over medium heat. Cook and stir onions and rosemary until onions are translucent, about 5 minutes. Add collard greens and cook and stir until they begin to soften, 4 to 5 minutes. Add ham; cook until greens are soft and ham is warmed through, about 5 minutes. Add cooked pasta and 3/4 cup Parmesan cheese. Slowly add chicken broth and stir. Add pasta water as necessary to achieve a creamy consistency. Add warm squash; season with salt and pepper. Sprinkle with remaining Parmesan cheese.
- Place briefly under the broiler until cheese is slightly browned, 2 to 4 minutes.

- Add butternut squash and onion to a parchment paper-lined baking sheet, and season with olive oil, salt, pepper, and nutmeg.
- Roast for 25-30 minutes, or until tender.

- Heat olive oil in a large pan.
- Add the butternut squash and salt, and sauté for a few minutes.
- Then add garlic, turkey, Italian seasoning, pepper flakes, and black pepper, and stir until meat is fully cooked.
- Add in spinach and salt until the spinach is wilted.
- In a large bowl, add ricotta, egg, cheese, and a pinch of salt and pepper. Mix well.
- Add the cooked squash mixture into the bowl. Mix until evenly blended.
- Cook a box of jumbo shell pasta al dente. Set aside in a bowl covered in olive oil to prevent sticking.
- Heat butter in a medium pan. Once melted, add in flour.
- Cook the flour until it turns light brown.
- Add milk to the pan and stir continuously until the sauce thickens.
- Add a pinch of salt and pepper.

- Stuff each jumbo shell pasta with the stuffing and place on top of the sauce.
- Bake at 400°F (200°C) covered for 30 minutes.
- Sprinkle parmesan cheese and bake again for 5 minutes until the cheese melts.

CREAMY VEGAN BUTTERNUT PASTA BAKE
Vegan comfort food to the max. Butternut squash, garlic, smoked paprika ... pureed into a velvety sauce that smothers al dente whole wheat penne. And then sprinkled with herbed bread crumbs, and baked until bubbly and golden-brown. Mmmm.

- Bring a large pot of water to a boil. Cook pasta according to package directions, stopping 1 to 2 minutes short of the recommended cooking time so that the pasta is nice and al dente. Drain, return to pot, and set aside.
- While the pasta is cooking, start the sauce. Set a large saute pan over medium heat. When hot, add the olive oil. Add the onions and saute, stirring occasionally, until soft and turning brown, 7-8 minutes. Add garlic and cook, stirring, for another minute.
- Add broth, stirring to loosen up the bits of cooked onion at the bottom of the pan. Stir in the dry mustard, smoked paprika, salt, black pepper, and Tamari. Add the butternut squash. Bring to a boil. Reduce to a simmer and cover the pan. Cook until the squash is tender, 7-8 minutes.
- Preheat oven to 350 degrees Fahrenheit.
- Remove veggies from heat, remove lid, and let sit until cool enough to handle. Transfer to the pitcher of a blender. Add coconut milk and lemon juice. Puree until smooth. Taste and add additional salt and pepper, if desired. If the sauce is too thick to move around in the blender, thin it with a little more vegetable broth.
- Pour the butternut sauce over the pasta in the pot. Stir gently to combine. Pour into a 2-quart baking dish (approx. 8-inch by 8-inch should be fine). It will seem seem soupy, but it will thicken up when it bakes!
- Make the breadcrumb topping. Add Panko breadcrumbs to a small bowl along with the thyme, paprika, and salt. Mix to combine. Drizzle the olive oil over the breadcrumb mix and stir until combined. Spoon over the top of the pasta.
- Bake at 350 degrees until bubbly and the breadcrumbs are golden brown, about 25 minutes.
- Let cool for a few minutes before serving.
