Steps:

  • Combine a half-pint of raspberries, all the blueberries, sugar, zest and 1/3 cup water in a saucepan and bring to a boil. Lower the heat and cook uncovered over medium-low heat, stirring occasionally, for 8 to 10 minutes. The juice will become a syrup and the berries will be slightly cooked. Off the heat, stir in the remaining raspberries and the framboise, if desired.

3 half-pints fresh raspberries, divided
Half-pint fresh blueberries
1/4 cup sugar
1/4 teaspoon orange zest
1/3 cup water
2 teaspoons framboise (raspberry brandy), optional

Steps:

  • Bring a pot of water to a boil and immerse the peaches in the water for 1 to 2 minutes, until the skins come off easily. Remove them with a slotted spoon and place them in a bowl of cold water to stop the cooking. Peel the peaches and then slice them in wedges off the pit and into a bowl. Stir in the sugar, Sauternes, and orange liqueur. Cover and refrigerate for at least 2 hours, or overnight. Serve cool but not cold.

6 to 8 very ripe yellow or white peaches
3 tablespoons sugar
1 (375 ml.) bottle good Sauternes
1 tablespoon orange-flavored liqueur (recommended: Grand Marnier)

Steps:

  • Combine peaches plus any peach juice from slicing, sugar, and lemon juice in a medium saucepan over medium-high heat, stirring occasionally. Bring mixture to a boil. Reduce the heat to a simmer and cook the mixture for 10 minutes, or until peaches are tender. In a small bowl, stir together cornstarch and water. Add cornstarch mixture to the peaches, stirring to combine. Bring mixture to a boil and boil for 1 minute, or until slightly thickened. Remove from heat. Stir in brandy, if using, and cool slightly.

Stewed Peaches:
4 cups peeled and sliced fresh peaches, plus any accumulated juices
1/4 to 1/2 cup sugar (depending on the sweetness of the peaches)
1 teaspoon fresh lemon juice
2 teaspoons cornstarch
2 teaspoons water
1 tablespoon red wine or brandy, optional

  • In a medium bowl, toss together peaches, lemon juice, salt, and cinnamon; set aside.
