Steps:

  • Using a sharp knife, carefully cut down each side of the central bone of the Monkfish to leave 2 fillets. Wash and dry the fillets.
  • Lay the proscuitto or bacon slices widthwise on a clean work surface so that they overlap slightly.
  • Lay the fish fillets lengthwise on top of the ham or bacon so that the two cut sides face up.
  • Mix together the chopped herbs and lemon rind. Season well. Pack this mixture onto the cut surface of one of the Monkfish fillet. Press the 2 fillets together and wrap tightly with the ham or bacon. secure with string or toothpicks.
  • Heat the olive oil in a large ovenproof frying pan and place the fish in the pan, seam side down first, and brown the wrapped Monkfish tail all over.
  • Cook in a preheated oven at 400F for 25 min until golden brown and the fish is tender. Remove from the oven and allow to rest for 10 min before slicing thickly.
  • Serve with shredded stir-fried vegetables and potatoes.

Steps:

  • Lay 1 monkfish tail fillet on a board, sprinkle with thyme leaves and season. Lay the other fillet on top with tapering tip in the opposite direction, so each end has one thick and one thin end butted together.
  • Lay the bacon on a board, slightly overlapping and put the monkfish in the centre. Wrap the fish in the rashers so that it holds together quite firmly.
  • Heat the grill for 3-5 mins. Line the grill pan, lay the monkfish on it, with the bacon joins underneath.
  • Grill for about 7-10 mins until the bacon starts to crisp, then carefully turn over and cook for another 7-10 mins. At the same time, grill the tomato halves. As soon as the monkfish feels firm when pressed on top, remove and leave to stand for 5 mins. Save any pan juices from the paper and drizzle into the vinaigrette. Cut the monkfish into medallions, slightly on the diagonal. Dress the watercress salad with the vinaigrette and juices and divide between four plates. Place monkfish on top, season with pepper and serve tomatoes alongside. Nice with baby new potatoes.

11 SIMPLE MONKFISH RECIPES TO TRY TONIGHT - INSANELY GOOD

From insanelygoodrecipes.com

Category Recipe Roundup, Seafood
  • Poor Man’s Lobster. Because of its texture, monkfish is often called “poor man’s lobster.” It’s less expensive than lobster and is very similar in taste and appearance.
  • Monkfish in Tomato Garlic Sauce. This recipe really showcases the monkfish while still enhancing it with a delicious sauce. Cook the monkfish with salt and pepper and let the tomato garlic sauce do the rest of the work.
  • Monkfish with Lemon Butter Sauce. I love lemon on fish and I love butter on, well, pretty much everything. This pan-seared monkfish is flavored with simple ingredients but it’s still so tasty!
  • Catalan Monkfish. This dish originates from a part of Spain called Catalonia. This is where Spain and France meet on the Mediterranean side. The sauce is a really important part of this dish.
  • Baked Monkfish with Lemon, Rosemary, and Breadcrumbs. Since monkfish is a really firm fish, it can stand up to a crispy topping like this recipe. The breadcrumbs are flavored with lemon juice, rosemary, and garlic.
  • Spiced Monkfish. This recipe is full of strong flavors that pack a punch. Ginger, saffron, and curry seasoning are an exquisite blend of spices. Monkfish is a really good fish for them because of its meaty texture and naturally sweet flavor.
  • Roast Monkfish with Lemon and Parsley Butter. Monkfish really lends itself to different cooking methods due to its firm and meaty texture. I love when meat is pan-seared and then finished in the oven.
  • Grilled Monkfish with Roasted Pepper. Not all fish can be grilled because they fall apart easily, but monkfish can easily stand up to a grill. Grilled peppers and onions also play a big role in this recipe.
  • Pan-Seared Monkfish with White Wine Garlic Sauce. I love this white wine garlic sauce and monkfish recipe. The sauce is absolutely heavenly. Monkfish is pan-seared with salt, pepper, and olive oil.
  • Monkfish and Chips with Remoulade. Any time I have a hearty, firm fish like monkfish, I debate making fish and chips. It does really well in the fryer because of its meaty texture.
