CINNAMON-SUGAR PITA CHIPS
These are so easy to make and addictive to eat! They are a hit with all my friends, some of whom just eat them without any dip. They are great on their own or with dessert hummus. Try them with my recipe for Pumpkin Pie Dessert Hummus; you won't be disappointed.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Cut each pita bread into 8 wedges and brush with olive oil. Sprinkle cinnamon and sugar on top and place wedges on a baking sheet.
- Bake in the preheated oven until crispy on the edges and slightly soft in the middle, 12 to 14 minutes; they will harden as they cool.
- Serve immediately or store in an airtight container after cooling.

I sort of made up this recipe, and it turned out to be pretty good. I was trying to imitate a pita with garlic butter sauce appetizer this one restaurant makes.

- Melt 1 tablespoon butter in a skillet over low heat. Mix in the olive oil, 1/2 the lemon juice, garlic, and garlic powder.
- Place the pita bread in the skillet, and top with remaining butter and lemon juice. Cook 10 minutes, turning often, until golden brown.

Steps:
- Combine oat flour, potato starch, cornstarch, tapioca flour, xanthan gum, yeast, sugar, and salt in the bowl of a stand mixer; whisk until well mixed, about 1 minute.
- Whisk milk, egg, olive oil, and vinegar together in a separate bowl until well combined, about 1 minute. Stir milk mixture in gradually to the flour mixture on low speed; mix until a soft dough comes together, about 5 minutes.
- Line 2 baking sheets with parchment paper. Divide dough into 6 equal pieces; roll each piece on a floured surface to a 6-inch circle. Place on the prepared baking sheets; cover with plastic wrap and set aside for 1 to 1 1/2 hours.
- Preheat the oven to 450 degrees F (230 degrees C). Heat a pizza stone in the oven.
- Spray pita breads with water and place them straight on the hot pizza stone.
- Bake in the preheated oven until puffed and lightly golden, 5 to 7 minutes.

- Pour oil in a large cast iron skillet or heavy saucepan to a depth of at least 1 inch. Heat to 365° over medium-high heat. If you use a saucepan, you can use less oil to reach the 1-inch depth. You'll just fry fewer at a time.
- Meanwhile, slice apples crosswise into 1/4-inch thick slices. Using a small circle cookie cutter remove center of apple so there’s about 3/8-inch apple remaining. You can also carve out the center with a knife or apple corer. You can toss the seeds and core but don’t throw away the apple in the centers! Chop them up in chicken salad or eat as a healthy snack (tomorrow after you’ve eaten the fried apples today!)
- In a small bowl, combine 1/3 cup sugar and 1 teaspoon cinnamon to make Cinnamon-Sugar for coating apple rings.
- In a medium bowl, whisk egg lightly; gradually add milk. Add flour; top with 2 tablespoons sugar, baking powder and salt. Whisk dry ingredients together lightly on top of milk, then dig in and whisk all together. I just saved you a bowl so you don't have to mix dry ingredients together separately.

- Peel, core, and slice the apples. Place the sliced apples into a medium bowl. Drizzle the lemon juice over the apple slices and toss lightly to coat.
- When the butter is melted, add the apple slices to the pan. Saute until the apples begin to soften, about 5-8 minutes. You’ll notice a slight change in color from crisp white/green to a creamy white/yellow. If you're pressed for time, cover the skillet with a lid.
- Stir the sugar and cinnamon into the apple mixture. Add a dash of nutmeg if desired. Continue cooking until the sugar dissolves into the butter and forms a sauce. Removing the lid from the skillet will help thicken the sauce. (if you've opted to cover the pan with a lid.)
