SWEET & SPICY ASIAN PORK
Makes a great less than 30 minute week night dinner. An original recipe that I created for the 2 for 1: Leftovers Challenge in Cooking Photos. Make it your own by adding other or more veggies, and by increasing the hot red chili sauce--if you're a red hot lover. LOL

Steps:
- In jar with lid, combine all the sauce ingredients; shake to blend and refrigerate at least 2 hours.
- Cook rice or noodles, drain and set aside,covered.
- Heat oil in wok or large skillet over Med-Hi heat.
- Add pork and cook for about 3 minutes; add onion, celery, and green pepper (and mushrooms, if using).
- Saute all for another 2-3 minutes. (The pork will brown nicely.).
- Add sauce and lower heat to medium.
- Cook until sauce thickens slightly; stirring to coat veggies and meat with sauce. Do not overcook the veggies; need to be crispy.
- Place rice or noodles in bowls or on plates and pour on the pork mixture.
- Sprinkle with green onions to serve.

- Add the pork tenderloin, and set the steam release handle to 'sealed'. Cook on high pressure for 5 minutes, then allow the pressure to naturally release for 7 minutes. If there is any pressure remaining, release it.
- Check that your pork tenderloin has reached an internal temperature of 145°F using a digital thermometer. If it is ready, remove the pork tenderloin from the Instant Pot and set aside to rest. If not, set the pot to 'sautee' and simmer the pork tenderloin for a few minutes, until 145°F is reached.
- Stir together the cornstarch with 2 tablespoons of cold water, then add to the sauce in the Instant Pot. Press the sautee button and allow to cook, stirring frequently, until thickened.

- Take the pork tenderloin (usually two come in the pack) and slice it into medallions/discs about 1/2-inch thick. Place the pork medallions into a gallon freezer bag and set aside
- In a mixing bowl, make the marinade by combining 1/2 cup of the beef broth, the brown sugar, kosher salt, 1 tsp of the Chinese Five Spice, paprika, soy sauce, cooking sherry, 1 tbsp of hoisin sauce, crushed garlic, crushed ginger and miso paste (if using). Mix together very well and then pour over the pork in the bag. Press the air out of the bag, seal tightly and place in the refrigerator for 24 hours, flipping once mid-way through (Do NOT skip this step. Trust me – you want that magical sauce seeping into every crevice of that pork).
- 24 hours later, dump the bag with the pork and all of its marinade into the Instant Pot. Add in the additional 1/2 cup of beef broth, 1/4 cup of hoisin sauce, 1/2 tsp of Chinese Five Spice and 1/3 cup of honey. Mix well and make sure the pork is nice and submerged into the marinade (it is fine if some of the pork protrudes above it)
- Secure the lid and cook on “Manual” or “Pressure Cook” High Pressure for 8 minutes. Allow a 10 minute natural release and follow with a quick release.
