Gingerbread Pudding Cake image

Steps:

  • Mix molasses and 1 cup water. Cream softened butter and sugar until light and fluffy, 5-7 minutes; beat in egg white and vanilla. In another bowl, whisk together flour, baking soda, salt and spices; add to creamed mixture alternately with molasses mixture, beating well after each addition. Fold in pecans., Pour into a greased 3-qt. slow cooker. Sprinkle with brown sugar. Mix hot water and melted butter; pour over batter (do not stir). , Cook, covered, on high until a toothpick inserted in center comes out clean, 2-2-1/2 hours. Turn off slow cooker; let stand 15 minutes. If desired, serve with whipped cream.

  • 2. IN A MIXING BOWL BEAT THE BUTTER WITH AN ELECTRIC MIXER ON MED. SPEED FOR 30.SECONDS.ADD THE SUGAR AND BEAT UNTIL FLUFFY, BEAT IN THE EGG AND CANE SYRUP.
  • 3. ADD DRY INGREDIENTS AND MILK ALTERNATELY TO BEATEN MIXTURE, BEATING UNTIL COMBINED,SPREAD BATTER IN THR PREPARED PAN, BAKE IN A 350* OVEN ABOUT 25 MIN. OR TIL CAKE TESTS DONE. COOL IN THE PAN ON A WIRE RACK, SPRINKLE COOLED CAKE WITH POWDERED SUGAR OR FROSTING

  • Cream shortening and sugar gradually, then add molasses and eggs. Mix in sifted ingredients. Stir in hot coffee; batter will be thin.

Indian Pudding Cake With Molasses Cream image

Steps:

  • Preheat oven to 350-degrees. Coat a 9-inch round cake pan with non-fat cooking spray; line bottom with wax paper. Coat wax paper with cooking spray, and set pan aside.
  • Combine first 6 ingredients (brown sugar through vanilla) in a large bowl; stir well, and set aside.
  • Combine cornmeal, flour, baking powder, spices and salt in another bowl; stir well, and set aside.
  • Beat egg whites and cream of tartar at high speed of a mixer until foamy. Gradually add 2 tablespoons brown sugar, beating until stiff peaks form.
  • Gently fold egg whites and cornmeal mixture alternately into molasses mixture, beginning and ending with egg whites. Pour batter into prepared pan. Bake for 35 minutes or until a wooden pick inserted into center comes out clean.
  • Let cool 10 minutes in pan on wire rack. Loosen cake from sides of pan, using a narrow metal spatula, and turn out onto a wire rack. Carefully peel off wax paper; let cool completely.
  • Place cake on serving plate; sift 2 teaspoons powdered sugar over cake.
  • Place cream cheese in a bowl, and beat at medium speed of a mixer until smooth. Add remaining ingredients, and beat until well blended. Serve with cake.

Pomegranate Molasses Butter Cake image

Steps:

  • Heat oven to 350 degrees. Butter a 9-inch-square baking pan, dust lightly with flour and knock out excess.
  • Sift together 1 1/2 cups flour, baking powder and salt. In a separate bowl, combine milk and 2 tablespoons pomegranate molasses.
  • In a large bowl, cream together stick of butter and 3/4 cup granulated sugar with an electric mixer until light and fluffy. Add eggs one at a time, beating after each until well combined.
  • Add flour mixture in 3 batches, alternating with milk mixture. (Begin and end with flour, and mix after each addition until just combined.)
  • Pour batter into pan and bake until top is golden brown and a toothpick inserted into the center comes out clean, about 35 to 40 minutes. Cool for 10 minutes, then run a knife around the edges, turn cake out onto a rack, and then turn right side up again.
  • Whisk together confectioners' sugar, cream, and 1 tablespoon pomegranate molasses. Brush glaze over cake, letting it drip down sides.
  • In a small, preferably nonstick skillet over medium-high heat, combine nuts, 1 teaspoon pomegranate molasses and 4 teaspoons sugar. Stir constantly and watch carefully until sugar melts and coats nuts, about 2 minutes. Sprinkle over top of cake.
