POLYNESIAN PORK LOIN

Polynesian Pork Loin image

Steps:

  • Rub 1/2 teaspoon salt and pepper over roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 1 hour., Meanwhile, in a small saucepan, combine the water, pineapple, tomato paste, brown sugar, onion, green pepper, vinegar, ginger and remaining salt; bring to a boil. Reduce heat; simmer, uncovered, for 20-25 minutes or until slightly thickened, stirring occasionally. Reserve 1-1/4 cups sauce; set aside., Pour remaining sauce over roast. Bake 1-1/2 to 2 hours longer or until a thermometer reads 160°, basting occasionally. Let stand for 10-15 minutes before slicing. Serve with remaining sauce.

Steps:

  • Combine 2 tablespoons cornstarch with soy sauce; toss with meat until all meat is coated. Brown in hot oil; when done drain.
  • Drain pineapple reserving juice. Add reserved juice, vinegar, sugar, and garlic salt to meat.
  • Bring to boil, then reduce heat; cover and simmer 45 minutes.
  • Dissolve remaining 1 tablespoon cornstarch in water; add to meat. Cook stirring constantly until thickened and translucent.
  • Add pineapple, heat through.
  • Serve on a bed of cabbage.

Tahitian Pork Curry with Taro image

Steps:

  • Get all the ingredients and tools ready.
  • Wash and peel the taro, cut into cubes and blanch 10 minutes in salted water.
  • Drain and put aside.
  • Peel and chop the onion and the garlic.
  • Cut the meat into cubes.
  • Sear the meat in a heavy Dutch oven, add the onion, paprika and curry, singe with the flour.
  • Add salt and pepper.
  • Put water, add garlic and the taro.
  • Cook for 40 minutes stirring regularly.
  • Check seasonings, bind with the coconut milk and serve hot.

1 kg taro root (Tarua)
1 1/2 kg pork loin
6 teaspoons curry
6 teaspoons paprika
1 onion
2 cloves garlic
2 teaspoons flour
2 teaspoons cooking oil

  • Place the roast on a 22x18-in. piece of heavy-duty foil; sprinkle with liquid smoke and soy sauce. Wash bananas and place at the base of each side of roast. Pull sides of foil up round meat; add water. Seal foil tightly; wrap again with another large piece of foil. Place in a shallow baking pan; refrigerate overnight, turning several times. , Preheat oven to 400°. Place foil-wrapped meat in a roasting pan; bake for 1 hour. Reduce heat to 325°; continue baking for 3-1/2 hours. Drain; discard bananas and liquid. Shred meat with a fork. Freeze option: Freeze cooled meat with some of the juices in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little water if necessary.

Steps:

  • With a sharp knife, make several small slits near the edges of the pork chops to keep them from curling when fried.
  • Into a large resealable plastic bag, add the soy sauce, garlic, sugar, white wine, and five-spice powder. Place chops into the bag, and close the seal tightly. Carefully massage the marinade into chops, coating well. Refrigerate at least 1 hour, turning the bag over every so often.
  • In a large skillet, heat enough vegetable oil to fill the skillet to a depth of about 1/2 inch. Remove chops from resealable bag without wiping off marinade. Lightly sprinkle cornstarch on both sides of the chops.

  • Place pork roast in slow cooker. Combine jam, brown sugar, garlic, vinegar, soy sauce, molasses and chicken broth. Mix well.
  • Pour over roast. Cover and cook on low for 8 hours.

I recently inherited my Great Aunt's recipe collection. This is a recipe from her recipe box that she clipped out of the Chicago Tribune. It had won the "$5 Favorite Recipe prize." From the splatters on the clipping, I imagine my Aunt enjoyed this one. These days,I might try browning the meat in a little olive oil instead of the bacon drippings. Despite the name, I doubt this is a traditional Polynesian dish, but rather is one inspired by Polynesian cuisine.

Prize-winning Polynesian Pork over Rice image

Steps:

  • In a large skillet, brown pork on all sides in bacon drippings.
  • Add soy sauce, ginger, garlic salt, vinegar, and brown sugar.
  • Cover and let simmer for 15 minutes.
  • Add tomato sauce and simmer, uncovered, for 30 minutes longer or until pork is fully cooked.
  • Stir in pineapple with canning juices and bring to a boil.
  • Remove from heat and taste for seasonings, adjusting as needed.
  • Serve ladled over mounds of hot cooked rice.
