ENGLISH TEA CAKE AND RUSSIAN TEA
A specialty of England, even if they don't serve Russian tea

Steps:
- Combine yeast and 1 teaspoon sugar in a small bowl. Let stand for 10 minutes. Combine milk and water in a pot; heat until lukewarm.
- In a large bowl, combine flour and salt. Rub in butter with fingertips. Add yeast mixture and remaining sugar. Gradually add the warmed milk. Blend until the dough becomes elastic and starts to pull away from the sides of the bowl. Mix in the fruit and peel.
- Turn dough onto a lightly floured board and knead until smooth and pliable. Dust inside of a warm bowl; place dough in it. Cover with a lightly floured clean towel. Leave in a warm place, about 100 degrees F., until doubled in bulk, about 1 1/2 hours.
- Turn dough out onto lightly floured board. Gently knead; do not overwork. Cut dough into 6 even pieces. Shape into even, smooth rounds.
- Place cakes onto a baking sheet and cover with a towel. Let rest another 30 minutes. Meanwhile, preheat oven to 450 degrees F. Once rested, bake cakes for 30 minutes.
- To make glaze: dissolve 1/4 cup sugar in water over low heat. Brush over hot cakes. Cool and serve.
TEA CAKE

- Grease 4 microwave-safe teacups with butter. Put the milk in a microwave-safe bowl and microwave on high until very hot, 1 to 2 minutes. Steep the tea bag in the hot milk, about 4 minutes. Remove the tea bag and whisk in the sugar, oil, egg, lemon juice and vanilla until smooth, about 2 minutes. Whisk in the flour, baking soda and salt. Pour into the prepared teacups until they are about two-thirds full. Microwave, one at a time, until puffed and a toothpick comes out clean, about 2 minutes; let cool slightly. Top with whipped cream and cinnamon.
MISSISSIPPI TEA CAKES
This is my mother's recipe, her mother's recipe, and so on... Basic, simple, down-home and delicious!! My grandmother's advice is to enjoy warm with a big glass of ice-cold milk!!! Poor folks' heaven!!!

TEA CAKE, ISLAND-STYLE
While traditional afternoon tea is only a memory in most households, the tea cake deserves to be remembered. It's excellent served with tea, coffee, hot chocolate or milk. This version combines fragrant lemon peel, with generous wedges of Hawaiian fresh pineapple and buttery streusel crumbs. A light sprinkle of powdered sugar over the cooled cake adds a finishing touch. Serve warm for a special treat at any time of the day. From the newspaper.

- Trim and peel pineapple. Cut 6 slices, 1/2-inch thick, and cut fruit into wedges, removing cores.
- Prepare Streusel and set aside.
- Re-sift flour with baking powder and salt. Combine butter, granulated sugar and egg, and beat until well-blended. Stir in lemon peel, and about half the flour mixture. Stir in the milk, then stir in the remaining flour mixture.
- Turn into well-greased and lightly floured 8-inch springform pan (or baking pan 6 by 9 by 2 inches). Sprinkle with half the Streusel. Arrange pineapple wedges over top and sprinkle with remaining Streusel.
- Bake in moderate oven (350 degrees F) for 55 to 60 minutes, until cake tests done and edges begin to pull away from pan. Remove from oven to wire rack and let stand 10 to 15 minutes, then remove from pan.
- Sprinkle with a light sifting of powdered sugar.
- Serve warm or cool. Makes 8 servings.
- Streusel: Combine 1/3 cup brown sugar (packed) and 1/4 cup flour. Cut in 3 tablespoons butter or margarine until particles are like coarse crumbs.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9-inch round pan.
- In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, mixing until fully incorporated; stir in the vanilla. Combine the flour, baking powder and salt; stir into the batter alternately with the milk. If the batter is too stiff, a tablespoon or two of milk may be added. Spread the batter evenly into the prepared pan.
- Bake for 30 to 35 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. Cool in pan on a wire rack, then turn out onto a serving plate. Dust with confectioners' sugar right before serving.

- In a bowl, whisk together the flour,baking powder, baking soda, salt, and nutmeg.
- In a stand mixer fitted with the paddle attachment, cream together the butter and sugar on medium speed until light and fluffy, 2 to 3 minutes. Scrape down the sides of the bowl. Add the eggs, one at a time, beating well after each addition. Scrape down the sides of the bowl again, then beat in the buttermilk and vanilla.
- Gradually add the flour mixture, beating just until smooth and well blended. Divide the dough in half. Flatten each half into a disc. Wrap in plastic and refrigerate until chilled and slightly stiff, at least 1 hour, but overnight ideally.
- Preheat the oven to 375°F. Line baking sheets with parchment paper.
- On a lightly floured surface, working with one portion at a time, roll the dough to a ¼-inch thickness. Cut with a floured 1½-inch round biscuit cutter. Gather the scraps, reroll, and cut again. Sprinkle lightly with demerara sugar. Transfer the tea cakes to the baking sheets and space them about 1 inch apart.
- Bake until the tea cakes are lightly browned, 8 to 10 minutes. Cool on the pan for 1 minute, then transfer to a wire rack to cool completely. The tea cakes will keep for about 2 weeks in an airtight container.
RUSSIAN TEA CAKES
These are the cookies that must be made at Christmas at my house. If these are the only cookies made, so be it, but they must be made.

- Cream butter and sugar, add remaining ingredients, except for powdered sugar.
- Roll into balls, small, about a"quarter" in diameter.
- Bake for 5 minutes on 275F, then 20 minutes at 350F degrees.
- Roll in powdered sugar while still hot, we usually do 2-3 coatings of sugar.

- Warm the milk with the butter in a pan until the butter has melted, then add 100ml water to cool the mixture to room temp. Tip the flour, yeast, sugar, spice and 1 tsp salt into a bowl, making sure the yeast is on the other side of the bowl to the salt. Make a well in the flour mixture and pour the milk and butter in, mixing until it forms big flakes, then bring together with your hands. Tip on a surface and knead until smooth (about 5 mins). Put the dough into a large, lightly oiled bowl, cover with a damp tea towel and leave until doubled in size, so about 1-1 ½ hours.
- Line a tray with baking paper. Tip the mixed dried fruits into the dough and knead them in, trying to disperse them evenly throughout the dough. Cut your dough into 6 even-sized balls, take each ball and, using the cup of your hand, and pressing down a little with your palm, roll the ball in a circular motion on the surface to create tension across the top of the bun and a neat round shape. Place onto a tray about 5cm away from each other and press down with your palm to flatten the dough down a little, creating the teacake shape. Cover loosely with an oiled sheet of cling film, for a further 45 mins, or until they have doubled in size.
- Meanwhile, heat the oven to 200C/180C fan/gas mark 6. Brush the top of each bun liberally with the egg wash, then bake for 20 mins on the top shelf of the oven, until the buns are golden and well risen. Allow to cool on a wire rack, then slice in half, toast and slather with butter if you like.

EASY IRISH TEA CAKE
Currants are soaked overnight in cold tea overnight and then cooked into a simple cake. Great with a cuppa. Simple and no mix-master needed I haven't tried to make this recipe with gluten free flour as yet.

- Soak currants in the tea and add the brown sugar. Leave fruit overnight to soak.
- Next day add the self-raising flour and the SR Flour and the lightly beaten egg.
- Mix well with a wooden spoon and place into a greased and lined small loaf tin. I think these are also referred to as a bar tin.
- Bake in a pre-heated moderate oven for about 1 hour. Turn out and cool.
- Serve sliced and buttered. This loaf keeps very well for at least a week.
- Cooking and prep time does not include overnight soaking of the currants.

There were nine children in our family and Mother had to stretch the budget, so she made these often for dessert. I loved them when I was a child, and they're still a special treat. In fact, I've never met anyone who doesn't like these cookies. They're so simple and quick to make.
