I didn't think I liked asparagus until trying this recipe at a Christmas dinner. Now I cook it for any special occasion and everyone oooh's and aah's when I say it's on the menu.

SESAME ASPARAGUS
This is my favorite way to prepare asparagus. I try other recipes, but always come back to this one. It's also super fast to prepare, which is always nice.

- Snap off tough ends of Asparagus. Remove scales if desired.
- Cover & cook Asparagus in a small amount of boiling water for 2 minutes or until crisp-tender.
- Drain & rinse with cold water (I throw some ice cubes on top of them to stop the cooking).
- Combine Vinegar, Sesame Oil, & Sesame Seeds in large Zip-Lock bag.
- Add Asparagus.
- Chill 2 hours, turining occasionally.
- I double the recipe with 1 lb of Asparagus. Sometimes I cut back on the Red Wine Vinegar if I cooked the Asparagus too long.

TENDER CRISP BALSAMIC SESAME ASPARAGUS
I love asparagus and have gotten picky kids to eat asparagus cooked this way. Takes less than 10 minutes start to finish and the result is a decadant and flavorful bright green veggie. Yum. I'd eat this every night for dinner if DH would go for it.

- Heat the olive and sesame oils together in a large skillet over medium heat.
- Meanwhile, cut tough ends off the asparagus and wash. Let dry for a few seconds on a paper towel.
- Place asparagus spears in hot oil all spread out so they are not on top of each other. Roll spears around to coat with oil, then add balsamic vinegar and roll again.
- Sprinkle salt and pepper over spears and cook over medium heat about 5 minutes, rolling spears around in pan once or twice for even cooking.
- Add water and turn down heat to medium low. Cover and let steam until tender crisp. Do not overcook. Spears should be a bright green color. Sprinkle with toasted sesame seeds if you desire. Serve immediately.

- Place the asparagus in a large pot filled with water 1 inch deep. Bring to a boil, and cook until tender, but still bright green. This will take about 5 minutes, or longer if your asparagus spears are thick. Drain and place on a serving dish.

Of all the spring vegetables, aspargus is my favourite and this is a very simple but delicious way to prepare it. Pecorino is a cheese from Sardinia, Italy but Parmesan is a good substitute.

- Trim the tough ends off the asparagus and discard.
- Blanch in a pot of boiling water for no longer than five minutes, then drain and set aside in a shallow dish.
- Keep warm.
- Melt the butter over a low heat in a large frying pan.
- Add the balsamic vinegar then toss in the asparagus.
- Stir to coat and let the aspargus cook gently for just a couple minutes.
- Put on a serving plate, pour over the lovely juices and season with salt and pepper.

- Wash, and snap off tough ends of asparagus.
- "Sprinkle"a jelly roll pan with olive oil.
- Place whole asparagus on the oiled pan, and jiggle a bit to coat lightly.

Before asparagus got moved to its own botanical family, Asparagaceae, in the early 2000s, it was part of the lily family along with onions, chives, shallots and garlic. It makes sense then, that asparagus and garlic make such a good duo. When cooked with care, both can be mild and sweet (or pungent and bitter when cooked carelessly). To highlight the best of both ingredients, gently fry garlic into chips for a crispy topping, then use the lightly infused oil to sauté the asparagus. Both thin and chubby spears work, as would nearly any other vegetable you like with garlic: broccoli, kale, snap peas, fennel and more.

- Place a paper towel-lined plate next to the stove. In a medium or large skillet, combine the garlic and olive oil over medium-low heat. Cook, shaking the skillet often, until the garlic is very light golden, 3 to 5 minutes. - Cook asparagus in a pot of boiling salted water until almost crisp tender.
- If serving chilled, cook until crisp tender.
- Drain.
- Place in a bowl of ice water to stop the cooking process.
