THAI CHICKEN AND SWEET POTATO SOUP
A smooth and and spicy chicken soup with a vibrant colour that's packed full of Asian aromatics

Steps:
- Heat the oil in a large saucepan. Add the garlic, chilli, ginger, lemongrass, coriander stalks and curry paste and cook for 2 - 3 minutes until the aromas are released.
- Add the chicken stock, coconut cream and sweet potatoes and cook for 15 minutes or until the potatoes are soft. Remove the lemongrass and discard. Carefully transfer to a blender and blitz until smooth. If freezing, for best results freeze at this point, otherwise as an easier option freeze complete recipe.
- Return to the saucepan, add the chicken and cook gently for 5 - 10 minutes or until the chicken is cooked through. Stir through the lime juice, sugar and fish sauce, scatter with the coriander leaves and serve.

THAI HOT AND SOUR SOUP
Fantastic authentic Thai hot and sour soup. Ideal as a starter in a Thai meal. Not very filling, but a great appetizer. Very quick and easy to prepare. The tom yum paste is hot, so try the soup before adding the chile and decide if any extra heat is required. Do not attempt if you do not have fresh coriander, as this is vital!

- In a large saucepan, bring the chicken stock to a boil. Stir in the tom yum paste and garlic, and cook for about 2 minutes. Stir in the lemon grass and kaffir lime leaves. Place the chicken in the saucepan, and cook 5 minutes, or until no longer pink and juices run clear.
- Mix in the mushrooms. Add the fish sauce, lime juice, and green chile pepper. Continue cooking until well blended. Remove from heat, and serve warm with the coriander and basil.

- Heat the oil in a large pot over medium heat. Cook and stir the ginger, lemongrass, and curry paste in the heated oil for 1 minute. Slowly pour the chicken broth over the mixture, stirring continually. Stir in the fish sauce and brown sugar; simmer for 15 minutes. Stir in the coconut milk and mushrooms; cook and stir until the mushrooms are soft, about 5 minutes. Add the shrimp; cook until no longer translucent about 5 minutes. Stir in the lime juice; season with salt; garnish with cilantro.

THAI DESSERT SOUP
This is an adaptation of a typical Thai Dessert and similar to those I've had in restaurants. It's got eye appeal, is refreshing, light and delicious. If you don't care for tapioca, you can leave it out. Or you can use dessert tofu. You can also make packaged Almond jelly dessert and cut it into little cubes. The choice is yours.

Steps:
- Boil the tapioca stirring constantly until the pearls are translucent.
- Remove from heat and stir in sugar.
- Bring back to the boil.
- Remove from heat immediately.
- Let the tapioca cool.
- Prepare your fruit.
- Slice strawberries but leave other berries whole.
- Dice other fruits.
- Stir sugar into the milk of your choice and make sure it is dissolved.
- Add extract.
- Select 4 attractive chilled bowls for your desserts.
- Put several tablespoons of tapioca pearls in each bowl.
- Divide the fruit into each bowl.
- Pour the sweetened milk over the fruit/tapioca and chill the desserts until ready to serve.
- Garnish your dessert with one of the above.
- If using flowers be sure they are pesticide free.
- If you are appealing to children, you can snip coloured marshmallows into flower shapes.
