UPSIDE-DOWN POPOVER PIZZA
This is a great brunch alternative. The popover batter replaces the pizza crust. If you're craving pizza this is a simpler alternative and the upside-down puffy crust is a nice change of pace. Recipe from My Great Recipes (1988 or 1989). Feel free to substitute ground beef or turkey for sausage and add salt, pepper, or any other seasonings you prefer.

Steps:
- In a large skillet, cook sausage until browned and pour off any excess fat.
- Add onion and green pepper. Cook for a few minutes.
- Stir in flour, basil, marjoram, and tomato sauce.
- Heat well, then pour into 9x13" baking pan. Arrange mozzarella slices on top.
- POPOVER BATTER:.
- Beat together the eggs and add flour, milk, oil, and salt. Whisk together until combined.
- Pour popover batter over all and sprinkle with Parmesan cheese.
- Bake at 425 for 25 to 30 minutes or until well browned and serve at once.

- In a large skillet cook ground meat, onion, and sweet pepper until meat is brown and vegetables are tender. Drain off fat.
- Stir in pizza sauce, pepperoni, mushrooms, fennel seeds, oregano and basil.
- Bring to boiling, reduce heat.
- Simmer, uncovered, for 10 minutes, stirring occasionally.
- Meanwhile, for topping: In a small bowl combine eggs, milk and oil.
- Beat with an electric mixer on medium-speed for 1 minute.
- Add flour; beat about 1 minute more or until smooth.
- Preheat oven to 400*.
- Grease the sides of a 3-quart rectangular baking dish. Spoon meat mixture into prepared dish.
- Arrange mozzarella cheese over meat mixture.
- Pour topping over mozzarella cheese, covering completely.
- Sprinkle with Parmesan cheese.
- Bake for 25 to 30 minutes or until topping is puffed and golden brown.
- Serve immediately.

UPSIDE DOWN ONE PAN PIZZA RECIPE BY TASTY
This upside down deep dish pizza recipe comes together in one pan. Cook the onions and green bell peppers, then assemble the pizza in the same pan - just cover with dough and put in the oven for 20 minutes. Be extremely careful and be sure to wear oven mitts when flipping the pizza out of the pan.

- Preheat the oven to 400°F (200°C).
- Heat 1 tablespoon of olive oil in a 12-inch (30 cm) cast-iron skillet over medium-high heat. Once the pan is hot, add the onion and cook until softened, about 4 minutes. Remove from the pan and set aside.
- Add the green pepper and cook until softened, about 5 minutes. Remove from the pan and set aside.
- Turn off the heat. Grease the pan with nonstick spray.
- Arrange the pepperoni in an even layer on the bottom of the pan. Top with the green peppers, onions, Parmesan, and mozzarella. Arrange the provolone slices over the shredded cheese in an even layer. Top with the pizza sauce and spread evenly.
- On a lightly floured surface, roll out the pizza dough to a 12-inch (30 cm) round. Gently lay the pizza dough over the pizza sauce, making sure the dough reaches to the edges all around. Brush the dough with the remaining tablespoon of olive oil.
- Bake for 25 minutes, until the dough is golden brown.
- Carefully remove the skillet from the oven. Place a large baking sheet on top, then quickly invert the pizza onto the pan.
- Return to the oven and bake for another 20 minutes, until the pepperoni begins to crisp.
- Slice into 8 wedges, then serve.

- Preheat the oven to 425°F (220°C).
- In a blender, combine the eggs, egg whites, milk, and tomato paste. Blend until smooth. Add the oregano, garlic powder, salt, 2 tablespoons of melted butter, and flour and blend on high speed for 2-3 minutes, until completely smooth. Transfer the batter to a liquid measuring cup with a pour spout and let rest at room temperature for 20 minutes.
- Meanwhile, place the popover pan in the oven to preheat.
- After resting, fold ¼ cup (30 g) Parmesan and ¼ cup (35 g) chopped pepperoni into the popover batter.
- Remove the popover pan from the oven and brush ¼ teaspoon melted butter in each cup, then fill ¾ of the way full with batter. Sprinkle with the remaining pepperoni and remaining 1½ tablespoons Parmesan cheese.
- Bake the popovers for 25-30 minutes, or until they appear puffed and dry (do not open the oven door to check).
