- In a mixing bowl, stir together the garlic, jalapeno, shallot, lemon zest and juice, olive oil, parsley, celery leaves and capers and taste for seasoning. Season with salt as needed.

Steps:
- *Note: Use any type of chili in this recipe depending on if you want a mild, medium, hot or explosively hot salsa.
- Place all ingredients in food processor or blender and process to desired consistency using the PULSE setting. This particular salsa we like smooth, not chunky or semi-chunky.
- Transfer to a bowl, cover and allow to sit at least 1 hour.
- Before serving, taste salsa and adjust ingredients if necessary. Garnish with fresh cilantro leaves.
- Serve at room temperature.
- Yield is estimated as are the ingredient amounts.

- Preheat grill to medium heat.
- Soak corn in room-temperature water for 20-30 minutes.
- Mix soy sauce and sugar.
- Cook over medium heat for 15-20 minutes, brushing all sides with soy sauce. I like mine to have lots of soy sauce, but it's really a matter of taste.
- Serve and enjoy!

- Salsa #1: Peel and rinse the tomatillo and transfer them to a medium pot. Cover with 4 cups of water and heat to medium.
- Once they come up to a boil, reduce heat and continue cooking just until tomatillo turn from bright green to an opaque green color. Remove from heat and let sit for 20 minutes.
- When ready, add the dried chile de arbol to the blender. Add 2 cups of the water that the tomatillos cooked in to the blender. Cover blender tightly and blend at the highest speed until smooth.
