FRIED VIDALIA ONION

Fried Vidalia Onion image

Steps:

  • Heat oil in a deep-fryer to 350 degrees F.
  • Whisk together the egg and the milk in a medium sized bowl.
  • In a separate bowl combine the flour, salt, peppers, oregano, thyme, and cumin.
  • Slice 1/2-an inch off the top of the onion and the bottom of the onion. Slice the onion in half, about 3/4-of the way down without slicing all the way through. Slice into quarters, then into 1/8s. Repeat this until you have cut the onion into 14 sections. Spread the "petals" of the onion apart and dip the onion in the milk mixture. Then coat it liberally with the dry ingredients. Separate the "petals" and sprinkle the dry coating between them.
  • Place the battered onion in the hot oil and fry until golden brown, about 10 minutes. Remove to a paper towel lined sheet tray and season with salt and pepper.
  • In a small bowl, combine ingredients and whisk together. Season with salt and pepper, to taste. Serve with Fried Vidalia Onion.

1 Vidalia onion, skin removed
2 eggs
1 cup milk
1 cup all-purpose flour
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 1/2 teaspoons cayenne pepper
1/4 teaspoon dried oregano
1/8 teaspoon dried thyme
1/8 teaspoon ground cumin
Peanut oil, for frying
Creamy dill dipping sauce, recipe follows
3/4 cup buttermilk
1/4 cup mayonnaise
1 tablespoon freshly chopped dill leaves
1/2 lemon, juiced
Salt and freshly ground black pepper

Corn Dog-Style Onion Wedges image

Steps:

  • Fill a large Dutch oven fitted with a deep-fry thermometer with 2 inches of oil and heat to 350 degrees F over medium heat. Line a baking sheet with paper towels.
  • Whisk the cornmeal, flour, garlic powder, mustard powder, baking powder, cayenne pepper, 2 teaspoons salt and a generous amount of black pepper in a large bowl. Whisk in the milk, egg, 1 tablespoon oil and 1 tablespoon honey.
  • Working in 3 to 4 batches, put the onions into the batter and use a spoon to submerge them completely so they are fully coated. Let any excess batter drip back into the bowl and transfer the onions to the oil with your hands or a fork.
  • Fry, flipping halfway through, until the batter is deep golden brown and the onions soften, 4 to 5 minutes. Transfer with a slotted spoon to the prepared baking sheet. Repeat with the remaining onions, returning the oil to 350 degrees F between batches.
  • Meanwhile, whisk together the ketchup, yellow mustard, hot sauce and remaining 1 tablespoon honey in a small bowl. Serve the onion wedges with the sauce.

  • In a small saucepan, mix the first four ingredients. Add grated onion (small to medium, depending on your taste), add the olive oil and vinegar. Heat until sugar is melted. Cool and refrigerate.
  • Reheat and use to wilt lettuce or serve cold on salad. Keeps in refrigerator indefinitely. Enjoy!

Steps:

  • Preheat oven to 400 degrees.
  • Saute onions in butter until golden brown and tender.
  • Separate rolls into triangles.
  • Place in ungreased round 8-inch pan, pressing together to form an even crust on bottom and half way up the sides.
  • Spread onions on top of dough.
  • Season well with salt and pepper.
  • Beat egg slightly: add evaporated milk
  • Pour over onions.
  • Bake for 20 50 25 minutes.
  • Serve hot.
  • Serves 6 to 8.

  • Quarter onions halfway through and open slightly. Place each on a 18x12-in. piece of heavy-duty foil. Place 2 teaspoons butter in center of each onion; sprinkle with salt, pepper and, if desired, garlic salt. Fold foil to seal tightly. Bake at 350° until onions are tender, 50-60 minutes. Open foil carefully to allow steam to escape.
