Steps:
- In a heavy-bottomed saucepot, render the salt pork until just crisp. Remove and discard. Sweat the onion in the pork fat until tender. Add the potatoes and cover with milk. Bring to a boil and let simmer until potatoes are soft. Season with salt and pepper.
- In a separate pot, fitted with a steamer basket, bring the reserved clam juice to a boil. Add clams and cover. Steam for three minutes until all clams are open. Remove the clams as they open and transfer to a bowl. Add the steaming juices to the pot with the chowder. Using a stick blender puree to desired consistency. Adjust seasonings.
- Finely chop the drained canned clams. Fold into the chowder. Serve with steamed clams, parsley, sour cream and grape tomatoes, as garnish.
MY BEST CLAM CHOWDER

- In a large soup pot, brown prosciutto, or bacon over medium-low heat until crisp.
- Add the onion and cook until softened.
- Add the flour and stir until lightly colored, about a minute.

- Place the clams in a pot large enough to hold them comfortably and cover with water. Let sit for 30 minutes. Drain the clams and rinse with cold running water several times. (You can do this up to 7 million times and you will never remove all the sand. Let this be a lesson in life to you.)
- Place the cleaned clams in a large Dutch oven or heavy-bottomed pot and add enough wine to go about halfway up the clams, about the whole bottle. Tie the thyme, oregano and bay leaves in a bundle and add to the pot. Cover with a tight-fitting lid and steam until the clams open completely, 15 to 20 minutes, or about 8 minutes after the liquid boils. Once the clams are all opened, remove them with a slotted spoon to a sheet pan to cool for a few minutes. Strain the clam broth through a fine strainer, reserving the liquid.
- Put a large Dutch oven over medium heat and add the olive oil. Once heated, add the guanciale and prosciutto and begin to render, 2 to 3 minutes. Remove some pieces of crispy prosciutto for garnish, if possible. If not, move on. Add the onion, garlic and celery to the pot and gently sweat over medium-low heat until they begin to soften up, about 3 minutes. Add the diced potatoes and cook to allow more fat to render from the prosciutto and guanciale and for the vegetables to fully soften, another 10 to 15 minutes.
- Meanwhile, remove the clams from the shells and chop roughly; don't turn them into dust-big pieces are good. Add the clams and the Calabrian chile paste to the potato pot and add about two-thirds of the reserved clam broth. Let the chowder begin to gently heat up and come to a simmer. Once at a simmer, add the heavy cream, more or less depending on your desired taste; for brothy, add a smaller amount of the cream. Always taste the batch; it may need a touch of sea salt, it may not-some clams are saltier than others.
- To serve, place a well-proportioned ladle of chowder in a bowl and garnish with some celery leaves, reserved crispy prosciutto (if any) and cracked black pepper.

CHEF JOHN'S MANHATTAN CLAM CHOWDER
Manhattan clam chowder is usually very watery, too tomato-y, and not nearly clammy enough so I reworked the recipe into something significantly more rich, satisfying, and delicious. My secrets? - Drain baby and chopped clams. Reserve liquid in the refrigerator until needed and set clams aside.
- Place bacon in a soup pot over medium-high heat; cook and stir until well-browned and almost crispy, 7 to 10 minutes. Add onion, garlic, and a pinch of salt; cook and stir until onions start to soften and turn translucent, 5 to 7 minutes.

- Bring bottled clam juice and potatoes to boil in heavy large saucepan over high heat. Reduce heat to medium-low; cover and simmer until potatoes are tender, about 10 minutes. Remove from heat.

NEW ENGLAND CLAM CHOWDER
Since this is a classic New England dish, we're going to use popular ingredients like potatoes and little neck clams. But I'm also going to add leeks, which I think are an under-utilized, softer member of the onion family, along with dashi, which is a light, fragrant and earthy stock from Japan. This creates some lighter flavors in a traditionally thick dish. (Note: Dashi recipe included below step 1.)

- Rinse and soak clams in cold water to remove any grit, 5 minutes. Heat a heavy-bottomed saucepan with a lid over medium-low heat. Add 1 tablespoon of olive oil. Peel and chop 2 shallots and 1 garlic clove and add to the pot, along with a few parsley stems. Cook about 2 minutes to "sweat" the vegetables. Drain clams and add to pot, along with white wine. Cover and cook over high heat until clams are opened, about 5 minutes.
- Add potatoes to a medium saucepan and cover with water; add a pinch of salt. Bring to a boil and cook the potatoes until tender, about 10 minutes. Meanwhile, check the clams: put the opened ones in a bowl, then "agitate" the pot by moving it back and forth over the heat to coax the remaining ones to open. Once the clams are open and out of the pot, continue cooking to reduce the liquid to about 1 cup. (Watch for sand that may have accumulated at the bottom of the pot.) Discard any clams that haven't opened.
- Dice the leek and toss in a bowl of water to remove any sand. Dice celery and fennel (reserving the fronds). Peel and mince 1 garlic clove, 1 shallot, and the onion. Remove cooked potatoes to a bowl to cool.
- Preheat soup pot over medium heat. Drizzle 2 tablespoons of olive oil into the pot. While the pot is heating, remove the leeks from the water to a clean bowl. Then add onions, fennel, celery, and a pinch of salt to the pot followed by the leeks, a sprig of parsley and some fennel fronds. Gently stir and cook until vegetables are soft, 5 minutes. Add the shellfish cooking liquid. Add the jalapeño slice and a lemon peel to the soup. Bring to a simmer and cook, 10 minutes. Meanwhile, remove the clams from their shells and roughly chop. Cut the potatoes to roughly the same size as the clams; cut the shrimp in half or thirds, depending on size. Add dashi to the soup, followed by the cream. Taste to adjust the seasonings, and add salt and pepper if necessary. Add a pinch of Aleppo pepper and the shrimp; bring the soup back to a simmer. Add the potatoes and clams, then cover until heated through.
- Finish soup with a squeeze of lemon and chopped parsley. Ladle into bowls and serve.
- Place kombu in 1 quart cold water to soak, 30 minutes. Then discard soaking water, place kombu in a small saucepan, and cover with 1 quart fresh cold water. Over medium-low heat, bring to a simmer for 10 minutes. Turn off heat and let kombu steep, 30 minutes. Turn heat back on and bring to almost a simmer. Add bonito flakes, but don't stir. Let sit for 10 minutes, then strain, reserving the broth (dashi).

HUMMINGBIRD FOOD
This is such an easy recipe. I don't add any food color to this as I've heard it's not good for the little birds. Do not use honey or other types of sugar, the birds cannot digest them. - Take the water off the heat and add the sugar.
- Stir to dissolve completely.
- Let the nectar cool.
- Place in a clean hummingbird feeder and hang outside for the birds.
- Note:.
- Change the food at least every three to five days with a new batch to keep it fresh. Remember don't use food coloring.
- Check the bird feeder regularly and every time you change the food to see if any gray mold has formed inside the feeder base, or, any ants have crawled inside to get at the sugar water.
- If you see any take the feeder down and throw the bird food away. It's not good for the birds to drink this. Chances are they won't drink it anyway.
- Clean the hummingbird feeder by rinsing with warm water. Then, put a few drops of bleach into the water inside the feeder and clean with a bottle brush.
- Once clean, rinse thoroughly with fresh water and let dry.
- Fill up with new food and place outside.
- The birds will love you for it!

- Place a fine mesh strainer over a medium bowl and strain the 4 cans of minced clams, separating the meat from the juices.
- Using a 6-quart dutch oven or pot of similar size, fry bacon over medium-high heat until fat renders and the edges begin to crisp.
- Add onion and sauté until softened and translucent, about 3 to 5 minutes.
- Reduce heat to low and add carrots, celery and flour, stirring constantly for 3-5 minutes to avoid lumps.

THE BEST CLAM CHOWDER EVER
this recipe was given to me by a Chef in Charleston SC. You can make this with corn, clams, just potatoes, or even shrimp if you want! you could use roasted corn, frozen corn, canned corn. if you use shrimp you might want to saute them off a little first. if you use something other than clams for this recipe you will need to increase the water since you wont be using clam juice.

- line a cookie sheet with foil and lightly spray with non-stick spray. cut the bacon in half and lay in single layer on foil.
- Bake bacon at 350 degrees for about 30 minutes- just until crisp but still flexible.
- remove bacon to paper towels for later use.
- open the cans of clams and drain over a bowl to RESERVE the juice. let continue to drain while working on the base of the chowder.
- NOW put all that bacon fat in a large pot. add the onions, celery, old bay seasoning and cook until soft. careful not to burn. you will mostly use a med to medium low heat through out recipe.
- peel the skin off the cooled baked potatoes and dice (large or small pieces depending on how chunky you like your soup) use more or less potatoes depending on how chunky you want it.
- let this cook for about 10 minutes stirring often to prevent scorching on bottom of pan. you want the potatoes to "soak" up the bacon fat. once that has happened. add the butter just until melted.
- sprinkle the flour all over and keep stirring. turn the heat up just a touch and do this for about 5 minutes or so until you see some browning happening in bottom of pot.
- NOW add that broth from the can, pay attention there may be a little bit of grit in the bottom from the clams, you dont want that in the pot.
- add enough water to cover the potatoes in the pot add pepper.
- bring this up to a boil and then turn down the heat to a low simmer for about 30 minutes.
- add your clams, and the bacon crumbled up and let cook for 15 minutes.
- add the heavy cream, cajun seasoning and let simmer on low for another 15 minutes.
- taste and adjust seasoning if desired.
