CREAM CHEESE-FILLED COFFEECAKE WITH FRUIT PRESERVES AND CRUMBLE TOPPING
If you understand how to vary the recipe, you only need one basic coffeecake in your repertoire. My all-purpose version consists of four components: batter, cream cheese filling, fruit preserves and crumb topping. The last three can be changed (or in some cases, omitted) to create a custom cake.

- Adjust oven rack to lower-middle position and heat oven to 375 degrees. Spray a 9-inch square metal baking pan with cooking spray. Fold a 17-inch length of heavy-duty foil to 8 1/2 inches wide and fit in the pan bottom and up 2 sides, so you can use the foil overhang as a handle to pull the baked cake from the pan.
- Topping: Use hands to thoroughly mix ingredients in a medium bowl, pressing together to form large clumps; set aside.
- Cream cheese filling: Beat cream cheese and sugar with an electric mixer until thoroughly mixed. Beat in egg and vanilla until smooth; set aside.
- Cake: Mix flour, baking powder, baking soda and salt in a medium bowl; set aside.
- Beat butter and sugar with an electric mixer set on medium-high until light and fluffy. Beat in egg until smooth. Beat in half the dry ingredients, then the remaining yogurt. Beat until ingredients are fully incorporated.
- Spread batter evenly over prepared pan. Spread cream cheese filling over batter. Dollop fruit filling (or sprinkle chocolate chips) over cream cheese filling. Finally, sprinkle evenly with crumble topping, pressing on it lightly to adhere.
- Bake until batter is fully set and topping is golden brown, about 45 minutes. Transfer pan to a wire rack to cool for 5 minutes. Run a thin-bladed knife around the sides, then use foil handles to pull cake from pan onto the wire rack. Cool to room temperature and serve. Can be covered with foil and stored at room temperature for one day.

- In a large bowl, dissolve yeast in water. Add the milk, butter, sugar, salt, eggs and 2 cups flour; beat on low speed for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down, Turn onto a lightly floured surface; divide in half. Roll each portion into a 20x10-in. rectangle. - In a bowl, combine the flour and sugar; cut in butter until mixture resembles coarse crumbs. Set aside 1 cup for topping. To the remaining crumb mixture, add the sour cream, baking powder, baking soda, egg and extract; beat until blended. - Grease a 13 x 9-inch pan.
- In a bowl, combine flour, sugar and salt.
- Cut in the Crisco shortening with a pastry knife until crumbly; reserve 1 cup of the mixture for the topping.
- Add in baking powder, eggs and vanilla to the remaining crumb mixture.
- Beat on medium speed of an electric mixer for 2 minutes, or until smooth.
- Spread evenly into prepared pan.
- Bake for 20-25 minutes.
- For the filling and topping: beat the cream cheese on medium speed until smooth and creamy.
- Gradually add in the sweetened condensed milk, lemon juice and cinnamon; beat until smooth.
- Fold in peaches; spread evenly over cake.
- To the reserved crumb mixture, add in nuts, brown sugar and cinnamon; mix well, and sprinkle over filling.
- Bake for 30-35 minutes longer, or until set.
- Serve warm.

- Preheat oven to 350 degrees (oven rack set to second-lowest position).
- Grease a 13 x 9-inch (or an 11 x 7-inch, baking time will need to be increased slightly).

- Preheat oven to 350*F.
- Unroll crescent dough. Separate into 16 triangles, reserving 4 triangles for decoration.
- On a large round pizza pan(or baking stone), arrange 12 triangles in a circle with wide ends toward the outside edge of the pan and points toward the center. The points will not meet.
- Using a rolling pin, roll dough to a 14" circle, pressing seams together to seal. There shoud be a 3" diameter opening in center. Form a slightly raised rim along inner and outer edges of dough.

- Using a pizza cutter, cut each remaining dough triangle lengthwise into three strips. Arrange dough strips evenly in spoke-like fashion over filling. Press ends to seal at center and outer edges.
- Bake 25-30 minutes or until golden brown. Remove from oven; cool 15 minutes.
- For the glaze:.
- Combine powdered sugar and milk; mix until smooth. Drizzle evenly over the coffee cake. Cut into wedges and serve warm. Enjoy!

- Preheat oven to 375 degree F.
- Blanch peaches in boiling water for 1 minute to ease removal of skin. Pitt and slice into 1/2 inch slices. In a large bowl, toss peaches with 3 tablespoon of sugar and cornstarch. Set aside.
- In medium size bowl stir flour, baking powder, and 2 tablespoon sugar until well blended. Add whipping cream until just blended. Turn out on a lightly floured surface and knead until smooth. Using hands, press on an ungreased large cookie sheet forming a 10-12 inch round about 1/4 inch thick.
- Next using electric mixer, beat cream cheese in medium size bowl adding the 1/4 cup of sugar and almond extract. Spread mixture over dough to within 2 inches of the edge.

- Preheat oven to 400°F.
- Cut the cream cheese and margarine into the bisquick until crumbly.
- Blend in milk until it makes a dough.
- Turn dough onto lightly floured surface and kneed 8 to 10 times. Form dough into a fat rectangle shape.
- Using a rolling pin, begin to roll out the dough into a 12 x 8 inch rectangle. You may need to use flour under and on top several times to keep the dough from sticking.
- Lift dough onto a greased baking sheet.
- Spread a can of pie filling of your choice down the center of the dough.
- With a knife, cut strips about 1 inch apart down the sides. Fold the strips up and over the fruit filling at an angle.
- Mix the cinnamon and sugar. Sprinkle on the top evenly.
- Place in the preheated oven on the center rack. Bake for 15 - 17 minutes.
- Be sure and check it at about 8 minutes to see if the top is browning. If it has, place a piece of foil, lightly on top to prevent burning.
- You can also skip the cinnamon/sugar step and drizzle with a glaze instead.

- This dough is a basic sweet dough. I use it for cinnamon rolls and monkey bread, as well. Combine the milk, yeast, and sugar in a mixing bowl. Let stand for 2 minutes to proof the yeast. Add the egg, butter, nutmeg, salt, and half of the flour. Mix until smooth, then beat for 2 minutes. Stir in enough of the remaining flour to make a soft dough.
- Turn dough onto floured surface and knead just enough to smooth the dough and thoroughly combine ingredients. Kneading makes gluten, so don't overdo it, or you'll lose tenderness. Place in a greased bowl, cover and let rise until doubled, about 1 1/2 hours.
- To assemble, punch the dough down, and divide in half. Roll the dough into discs and spread into the greased pans. Cover and let rise in the pan until doubled, about 1 1/2 hours. Meanwhile, mix the sugars and cinnamon in a bowl. Canned peach slices are usually too thick. Slice them as necessary to get reasonably thin pieces, about 1/2 inch.
- When the cakes are risen, brush the dough with melted butter, and sprinkle with a mixture of sugars and cinnamon. Spread peaches over the top, covering as much dough as possible, and then sprinkle again with the sugar and cinnamon mix. You want a good, thick coating of sugar, to glaze the top.

PEACH COFFEE CAKE
A Sinful Coffee Cake that melts in your mouth from the first bite. Great to enjoy with milk in the morning or ice cream at night! Just don't get caught eating more then one bite, this is a good ol' southern recipe!

Steps:
- Preheat your oven to 350 degrees F and grease your bundt pan.
- Using a hand mixer, or if you have one of those fancy kitchens, a standing mixer, and beat your butter until it is light and creamy.
- Gradually mix in your sugar until you get a light and airy texture.
- Next add your eggs in, one at a time. Make sure each egg is thoroughly mixed in before adding the next egg.
- Go ahead and add in your vanilla and cinnamon.
- Whisk your flour, baking soda, baking powder, and salt in a large bowl.
- Next we're going to add in our flour mixture and our sour cream. Alternate these two ingredients; 1 cup flour, 1/2 cup sour cream, 1 cup flour and so on until you're out of flour and sour cream.
- Now it's time to layer your cake. Add 1/2 of your batter to the greased bundt pan. Then add your peach mixture, spreading it evenly throughout the pan. Top with the remaining batter and smooth.
- Bake on 350 degrees F for 50 minutes to an hour.
- Now this cake is already sweet enough, but who wouldn't want just a little icing on top --.

- Mix together all of your ingredients: butter, powdered sugar, jam, and vanilla to make a thick rich icing.
- You can either just ice the top of the cake or heat it up in the microwave or on the stove and drizzle it over the top.
