This is really right on for Amaretto!! It's hard to tell it from the real thing!

Steps:

  • Combine water and sugars in a saucepan over medium heat. Heat until the mixture is boiling, and all of the sugar is dissolved. Remove the pan from the heat and let the mixture cool for 10 minutes.
  • Stir vodka, almond extract and vanilla extract into the mixture. Store in a sealed bottle.

I had this dish years ago at an ex-boyfriend's house while I was there for Thanksgiving dinner and his mom shared her recipe. I am usually pretty traditional and old-fashioned with my Thanksgiving menu, but always make these because they are so good! My relationship didn't last, but this recipe continues to be a favorite, years later!

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Mix crushed cookies with 1/2 cup butter in a bowl. Mash sweet potatoes with 1/4 cup butter in separate bowl; add brown sugar, marmalade, amaretto liqueur, and ginger to sweet potatoes. Mix well. Pour sweet potato mixture into a 9x9-inch baking dish; top with cookie mixture.
  • Bake in the preheated oven until cooked through and bubbling, about 30 minutes.

  • Combine water and sugars in a very large saucepan over medium heat.
  • Heat until the mixture is boiling and all sugar is dissolved.
  • Reduce heat to low and continue to simmer for approximately 2 hours until mixture is thickened and syrupy and lightly coats a spoon.
  • Remove pan from heat and allow to cool for 10 minutes.
  • Add vodka and extracts and stir well.
  • Pour into a bottle and seal.

Almond-Amaretto Cheesecake image

Steps:

  • Combine first four ingredients. Press into bottom and 1 3/4" up side of a 9" springform pan which has been coated with coaking spray.
  • In a large bowl beat beat together cream cheese and 1 cup sugar until light and fluffy.
  • Add eggs one at a time beating well after each addition.
  • Lower speed to medium and add whipping cream., 1/4 cup amaretto and 1 teaspoon vanilla beating well.
  • Pour into prepared crust and bake at 350 for 15 minutes and reduce over to 225 degrees, bake for 1 hour.
  • Cool on rack for 5 minutes.
  • Combine next 4 ingredients. Spread evenly on cake and cook additional 5 minutes. Cool, cover lightly and chill overnight.
  • To serve, remove side of pan and garnish with almonds.

  • Peel and halve pears; scoop out core.
  • Place in a solution of 1/4 cup lemon juice in 4 cups water.
  • Prepare 5 500 ml (1 pint) preserving jars.
  • In a large saucepan, combine orange and pineapple juices, sugar and cinnamon stick.
  • Bring to a boil and simmer 5 minutes.
  • Drain pears; add to hot liquid; simmer 5 minutes.
  • Remove from heat, add amaretto.
  • Place section of cinnamon stick in each jar.
  • Pack hot fruit snugly in jars; fill with boiling syrup to within 1/2 inch of top rim.
  • Remove air bubbles.
  • Readjust headspace.
  • Apply lids and screwbands.
  • Process 500 ml (1 pint) jars in boiling water canner 20 minutes.
  • Remove jars from canner.
  • Check seals when cool.

Steps:

  • Preheat oven to 350 degrees F.
  • Cook yams in boiling water long enough to soften, but still firm.
  • Peel and cut into 1/2" slices. Peel and core apples; slice thinly.
  • In a butter casserole dish, altenate layers of yams, apples and pineapple, dotting with butter, sprinkling with cloves and sugar--until all are used.
  • Pour Amaretto over all.
  • Cover and bake for 30-40 minutes or until apples and sweet potatoes are tender.
