YEAST FREE WHOLEMEAL BREAD
This is so far the BEST yeast free bread that I have baked for my daughter who has candida. It tastes really nice, holds together well and is so quick and easy to make. I adapted this recipe from an Irish Soda Bread recipe called Wheaten Bread which I found on an untitled web site.

Steps:
- Pre-heat oven to 200 deg.celsius (392 deg. fahrenheit).
- Combine all dry ingredients then mix butter through well with a fork.
- Add milk (and sweetener if it is a liquid) mix until well combined.
- Put mixture into a greased loaf tin and bake for 50 minutes.
- Remove bread from tin and cool on a rack.

Steps:
- Mix dry ingredients.
- Do not sift the flour!
- Mix liquids and add to dry.
- Stir until there is no more dry flour.
- Depending on the humidity of the air where you live you may need a little bit more or less liquid.
- The dough should be moist but not sticky.
- It may take a few minutes for the flour to fully absorb the liquid, so don't rush to add liquid or flour to it.
- Score lightly the surface in a diamond or X shape to prevent splitting of the crust.
- This is a country style bread that should be sliced thick.
- It is important not to overwork the dough.
- Shape into a ball or an oval, with oiled hands.
- Place on clean baking sheet.
- Bake for 40 minutes at 400°F.
- Variations: Rub the dough ball with virgin olive oil and sprinkle sea salt and oregano for a foccacia flavor.
- For tea time add a tsp pure cane sugar.
- The liquid can be replaced for orange or other fruit juice if the bread is to be used for teatime and you can even add dried chopped fruits.
- For a savory bread the liquid can be tomato juice and you can add chopped sundried tomatoes to the dough.
- Sprinkling of seeds in the dough or on top of the bread is also possible.

- Preheat oven to 400F. Grease a 6 1/2-inch bottom diameter cast iron skillet (or 7-8 inch round baking pan) and set aside.
- Prepare the seed mixture and set aside (I used 2 Tbsp sunflower seeds, 2 Tbsp sesame seeds, 1 Tbsp flaxseed and 1 Tbsp poppy seeds)
- In a large bowl, whisk together the flour, baking powder, baking soda and salt. Add the butter pieces to the bowl and using your fingertips, rub the butter into the flour until the mixture resembles coarse crumbs.
- Add enough buttermilk to the flour mixture to form a soft, sticky dough (I usually use all of the 1 1/2 cups). Turn dough onto a floured surface and knead gently a few times, just until smooth. Shape dough into a 7-inch-ish round.

- In a medium bowl, mix together the oats, yogurt, milk, oil, honey, and egg until well blended. Set this mix aside for at least 45 minutes to allow the oats to hydrate.
- In a separate large bowl, stir together the whole-wheat flour, all-purpose flour, baking powder, baking soda, and salt.
