Steps:

  • Mix fruit, honey, and 1/3 cup crystallized ginger in medium bowl. Spoon 1/2 cup yogurt into each bowl. Top each with 1/2 cup granola, then 3/4 cup fruit mixture. Spoon remaining 1/2 cup yogurt in dollops over fruit. Garnish with more chopped crystallized ginger and serve.
  • *A thick yogurt; sold at some supermarkets and at specialty foods stores and Greek markets.

3 cups diced peeled tropical fruit (such as pineapple, mango, and kiwi)
1/3 cup honey
1/3 cup finely chopped crystallized ginger plus additional for garnish

  • Mix the the fruit, honey and ginger in a bowl.
  • Spoon 1/2 cup yogurt into each serving bowl (4 dishes) and top each with 1/2 cup graola, and 3/4 cup fruit mixture, top with 1/2 cup yogurt over the fruit. Garnish with more chopped ginger, if desired. Repeat with remaining bowls.

3 cups tropical fruit, peeled and diced (pineapple, mango and kiwi or your favorite tropical fruit)
1/3 cup honey

Steps:

  • In a small saucepan over medium heat, add 1 cup water, the ginger, honey, orange juice, lemon zest and lemon juice. Bring to a boil, reduce the heat and simmer about 10 minutes.
  • Put the fruit into a large bowl and pour the ginger sauce over top. Toss gently to combine. Place 1 cup Greek yogurt into 4 individual serving cups. Top with some granola and spoon over some of the fruit and sauce. Serve immediately.

Steps:

  • Preheat the oven to 375 degrees F. Lightly spray the tart tins (or muffin pan) with cooking spray and set aside.
  • In a large bowl, combine the rolled oats, pecans, spices and salt. In a separate bowl, combine the honey, coconut oil and vanilla, mixing well. Add the honey mixture to the dry ingredients mixing well and making sure everything is well combined.
  • Begin adding spoonfuls of the granola into the tart tins (or muffin pan) and gently press the granola down firmly and up the sides of the pan to form a bowl. Bake the granola bowls for 25-30 minutes until they are golden brown and have become firm. Remove from oven and allow to cool.
  • When ready to serve, spoon the Greek yogurt into each granola bowl, top with fresh fruit and drizzle with pure maple syrup. Serve immediately.
