YOUTIAO (CHINESE DEEP FRIED DONUTS)

This recipe is from Nanjing, China but variations are made all over the county. In some regions of China, it's enjoyed with a piping hot bowl of sweetened soy milk.

Youtiao (Chinese Deep Fried Donuts) image

Steps:

  • Mix flour, baking powder, baking soda, and salt. Stir in water.
  • Lightly knead dough. Loosely cover for about 20 minutes, or enough time for the dough to rise.
  • On floured surface, roll the dough into 2 inch wide and 14 inch long strips. Twist together in pairs, pinching the ends. Holding each end of twists, pull until 9 inches long.
  • Deep fry each twist in peanut oil until golden brown (about 25 seconds).
  • Let cool and eat.

1 1/4 cups self-rising flour
2 teaspoons baking powder
1 1/2 teaspoons salt
1/2 teaspoon baking soda
1/3 cup lukewarm water

Crispy fried chicken is a standard dish in the Cantonese cuisine of southern China and Hong Kong. The chicken is first steam and dry and fried in such a way that the skin is extremely crunchy but the white meat is relatively soft. The dish often served with side dishes of pepper salt.

Chinese Crispy Fried Chicken image

Steps:

  • Wash the chicken inside and out and dry with paper towels. Stuff the ginger, green onion and 1 teaspoon of salt inside the chicken and turn chicken over on it back and brush with Shao Hsing wine season with half of the salt and turn over breast side up and repeat this step. Place the chicken on a round dish and let stand for an hour.
  • In a large stockpot add in the chicken and fill with water and place over a high heat and bring to a rolling boil for 5 minutes and cover and turn off the heat. Do not open the cover for the next 45 minutes. Remove the chicken from the pot and place into an ice water bath to cool the chicken for an hour and pat dry with paper towel inside and out.
  • When the chicken is cool place onto a cutting broad with a clever slice the chicken in half.
  • In a large wok add oil and heat to 350° and with care place into one half of the chicken and deep fry to a golden brown and place onto a rack and repeat this step. Let the chicken set for 15 minutes and then cut up the chicken Chinese style and place the chicken pieces on a serving platter and top with green onion and parsley. Serve with pepper salt in a small dish on the side.
  • Place salt, peppercorns and white pepper in wok over medium heat, swirling wok for 2 to 3 minutes. Let cool.

Steps:

  • Mix flour, baking powder, and salt together in a bowl. Drizzle in sesame oil. Gradually add water, whisking constantly until smooth; batter should be the consistency of cream. Let sit for at least 30 minutes.
  • Fill a deep pan or wok with oil and slowly heat to 375 degrees F (190 degrees C).
  • Mix cornstarch and white pepper together in a large shallow dish. Dust chicken in the cornstarch mixture and dip into the batter, evenly coating each piece. Steps:

  • Heat a wok over medium heat until very hot and pour vegetable oil into hot wok. Let oil heat until the surface shimmers. To test heat, lower the tip of a wooden chop stick into the oil; if it bubbles vigorously, oil is heated enough.
  • Cut egg roll wrappers into 1-inch strips and gently lay strips into the hot oil, 2 or 3 at a time. When strips start to brown on one side, gently flip over and brown the other side until the strips are crisp and golden brown, 30 seconds to 1 minute.   • Be sure to add enough of oil to line the bottom of the pan a couple of inches deep.
  • Heat oil to 350 degrees.
  • Remove biscuits from can and fry a few at a time in the fryer.
  • When browned on one side, turn over.
  • When golden brown on both sides remove from oil, and drain on paper towels.
  • Pour sugar into a small container, and once the doughnuts have cooled slightly toss the doughnut into the sugar, and coat on both sides.
  • Be sure to fry only a couple at a time.
