Steps:

  • 1. Slice amberjack fillets on the bias into 1/4-inch thick slices.
  • 2. Serve on a plate, arranged decoratively with accompaniments and garnishes alongside.

1/2 lb amberjack fillets, sushi-grade
soy sauce, for dipping
wasabi, for dipping
pickled ginger, as an accompaniment
mizuna, or other decorative greens for garnish
