APPLE BRAN MUFFINS

This is a nice change from a plain bran muffin. It's somewhat healthier, because it's made with yogurt. I always double the cinnamon sugar on top (personal preference). Sometimes I add some chopped pecans (or walnuts). Don't let the long list of ingredients scare you - these come together fast.

Steps:

  • Preheat oven to 400*. Mix flours, bran, cinnamon, baking powder, baking soda & salt together in a large bowl.
  • In another bowl, whisk together the egg, brown sugar and oil. Stir in the yogurt, apple juice & apple.
  • Stir the wet ingredients into the dry until just moistened.
  • Spoon into greased (I use cooking spray) muffin tins, filling each to the top.
  • TOPPING: Mix together & sprinkle over muffins before baking.
  • Bake @ 400* for 18-20 minutes until firm to touch.

Steps:

  • In a skillet, saute apples in butter until tender, about 10 minutes. Combine cereal and water in a large bowl; stir in buttermilk, eggs, sugar, raisins and apples with butter. Combine dry ingredients; stir into apple mixture just until moistened. Refrigerate in a tightly covered container for at least 24 hours (batter will be very thick). Fill greased or paper-lined muffin cups three-fourths full. Bake at 400° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

Steps:

  • Preheat the oven to 400 degrees F. Coat a 12-capacity standard muffin pan with cooking spray.
  • In a small bowl, mix together the pecans, 2 tablespoons of the brown sugar and the cinnamon.
  • In a medium bowl, whisk together the all-purpose and whole wheat flour, baking soda and salt.
  • In a large bowl, whisk the remaining 3/4 cup sugar and the oil until combined. Add the eggs, one at a time, whisking well after each addition. Whisk in the applesauce and vanilla.
  • Whisk in the flour mixture in two batches, alternating with the buttermilk. Whisk just until combined. Gently stir in the apple chunks.
  • Pour the batter into the prepared muffin pan and sprinkle with the pecan mixture. Tap the pan on the counter a few times to remove any air bubbles. Bake until a wooden pick inserted in center of one of the muffins comes out clean, 20 to 25 minutes.
  • Let cool on a wire rack for 15 minutes. Run a knife around the muffins to loosen them and unmold. Cool completely on the rack.

Steps:

  • Preheat oven to 400°F. Mix cereal, milk, applesauce, oil and egg in large bowl. Let stand 10 minutes to soften bran.

I love apples and I love baking with apple butter. I searched zaar looking for a muffin recipe that used both as ingredients but found nothing so I decided to experiment and create my own recipe using the ingredients that I like. This was the end result and I was so pleased with how they turned out that I had to share! You could add 1/4-1/2 cup of nuts or raisins if you'd like but I like them just the way they are. Enjoy!

Apple Bran Muffins With Apple Butter image

Steps:

  • Preheat oven to 375°.
  • Grease a large muffin tin (I use my "Texas" sized muffin pan).
  • In a medium bowl combine flour, baking soda, baking powder, salt, sugar, and cinnamon and mix to blend.
  • In another bowl add wheat bran and milk and blend well.
  • Then to the bran mixture add eggs, apple butter and 2 tbsp oil and mix to blend.
  • Let bran mixture sit 5-10 minutes.
  • Meanwhile, peel, core and shred the apples.
  • Squeeze out any excess moisture from apples with your hands.
  • Add shredded apples to the bran mixture and mix well to blend.
  • Add wheat bran mixture to flour mixture and stir to blend (batter will be thick).
  • Spoon batter into muffin cups evenly.
  • Bake at 375° for 25-30 minutes or until they just begin to brown and test done with a toothpick.
  • Cool muffins in pan on a wire rack 5-10 minutes.
  • Remove muffins from muffin pan and cool completely.
  • *** Preparation time includes preparing the apples. You can make 12 standard size muffins instead of six large but you'll need to reduce baking time to approximately 15-20 minutes or until they test done.
