Steps:

  • First, stew the apples:
  • Peel, core and finely chop (1-2 cm cubes) the apples and put in a small saucepan with a lid.
  • Add the water and caster sugar, cover and bring to the boil, then turn down the heat to allow them to stew while you make the bases. Keep an eye on how soft they are becoming, they should be ready in about 10 minutes. Remove from the heat when they resemble apple crumble filling.
  • To make the bases:
  • Preheat the oven to 180ºC (350ºF, gas mark 4). Beat the butter and sugar together until pale and fluffy, then gradually beat in the egg.
  • Mix the flour and cinnamon, then sift into the batter. Finally add the oats and fold it all together.
  • Grease a 12-hole mince pie tin and use a tablespoon to divide the base mix evenly between them. Put to one side while you make the topping.
  • To make the topping:
  • In a mixing bowl, use your fingers to crumble together the butter and flour, until they form crumbs.
  • Add the sugar and crumble it into the butter and flour until the whole mix resembles fine crumbs.
  • Assemble and bake:
  • Flatten each spoonfull of batter, and use your finger or the back of a spoon to make an indent in each base.
  • Use a teaspoon to add the stewed apple to form a small mound on top. Leave 1-2mm of batter visible at the edges beneath the apple. Spoon the crumble topping over each pie to cover the apple and base.
  • Bake for 10–15 minutes or until golden brown. Cool slightly in the tin, then turn out onto a wire rack with the aid of a rubber spatula.
  • Serve warm, if possible.

3 medium apples
1 tbsp caster sugar
2 tbsp water
85 g butter, softened
115 g light brown soft sugar
1 egg
115 g self-raising flour
3/4 tsp ground cinnamon
55 g oatmeal

Its an old recipe that I saved from a magazine many years ago, Your Family, August 1991. very simple, and fail-proof! I use butter, and brown sugar, personal taste. Steps:

  • Make filling:
  • In a heavy 5-quart kettle simmer filling ingredients with a pinch salt, covered, until apples are fully plumped, about 15 minutes. Uncover mixture and simmer, stirring occasionally, until thick and any excess liquid is evaporated or absorbed, about 1 hour. (Reduce heat as liquid is evaporated or absorbed and stir mixture frequently toward end of cooking to prevent scorching.) Discard cinnamon sticks. Filling may be made 2 days ahead and cooled before being chilled, covered.
  • Make topping:
  • Cut butter into 1/2-inch pieces. In a food processor pulse butter, flour, and granulated sugar until crumbly. Transfer topping to a bowl and chill, covered, until ready to use.
  • Make pastry dough when filling and topping are done:
  • Preheat oven to 375°F.
  • Cut butter into 1/2-inch pieces. In cleaned food processor pulse together pastry dough ingredients and a pinch salt until mixture begins to gather together.
  • Press dough evenly onto bottom and up side of an 11-inch tart pan with a removable fluted rim. Line shell with foil and bake in middle of oven until shell is set, about 12 minutes. Gently remove foil (if foil sticks to shell, leave foil on and bake about 2 minutes more) and bake shell until edge is golden, about 5 minutes (tart shell will not be completely cooked).
  • Immediately spoon filling into shell and crumble topping evenly over filling. Bake tart in middle of oven 30 minutes, or until topping is golden. Cool tart in pan on a rack. Tart may be made 1 day ahead and kept, covered and chilled, in pan. Reheat tart, uncovered, if desired or bring to room temperature before serving. Remove side of pan.
  • Serve tart with whipped cream or ice cream.

For filling
12 ounces dried apples (preferably Granny Smith)
1/2 cup packed light brown sugar
4 cups water
2 cups apple cider
1 tablespoon fresh lemon juice
four 3-inch cinnamon sticks
For topping
3/4 stick (6 tablespoons) cold unsalted butter
3/4 cup all-purpose flour
1/2 cup granulated sugar
For pastry dough
1 1/4 sticks (10 tablespoons) cold unsalted butter
1 1/2 cups all-purpose flour
1/2 cup confectioners' sugar
Accompaniment: whipped cream or vanilla ice cream

Tarte Aux Pommes (French Apple - Custard Tart) image

Steps:

  • For crust: Roll out the dough 1/8 inch thick on a lightly floured surface turning it constantly so that it does not stick; add more flour as needed (the dough might crack around the edges, most of the cracks don't matter since the edges will be trimmed after the tart is in the pan, if there are some big ones that will show when the tart is in the pan, patch them with pieces of dough before fitting the) when the dough is rolled out, flip it over the rolling pin and transfer it to a 10-inch tart pan with removable bottom; fit it into the tart pan without stretching; roll the rolling pin over the top of the tart to cut off the dough hanging over the pan's edge; refrigerate 20 minutes.
  • Preheat oven to 400°F Place the tart pan on shallow baking sheet; fit the tart pan with aluminum foil or parchment paper, fill with beans or pie weights, and bake in the middle of preheated oven for 15 minutes; carefully remove the foil with beans and bake for another 5 minutes.
  • For filling: Turn the heat down to 375F; quarter, core, and peel the apples; cut into 1/4" lengthwise slices; toss them in a bowl with the sugar and cinnamon, then arrange them in the crust in concentric circles; bake in the upper third of preheated oven for about 20 minutes, or until they start to color and are almost tender; remove from oven and let cool while preparing the custard.
  • For custard: Beat the egg and sugar together in a mixing bowl until mixture is thick, pale yellow, and falls back on itself forming a slowly dissolving ribbon; beat in the flour, then the cream, and finally the cognac; pour the mixture over the apples; it should come almost to the top of the pastry shell; return to oven for 10 minutes, or until cream begins to puff.
  • Sprinkle with icing sugar (placed in a sieve and sprinkled evenly over) and return to oven for 15 to 20 minutes more.
  • Tart is done when top has browned and a knife plunged into the custard comes out clean; unmold the tart; cool 10 minutes and serve.

short pastry, for a 10 inch tart pan (Pate Brisee)

Steps:

  • For the Filling: In a large heatproof bowl, toss together apples, granulated sugar (use 1 cup if your apples are very tart), salt, vinegar, and spices. Let stand at room temperature, stirring occasionally, for at least 3 hours, or refrigerate (covered) up to 24 hours.
  • Stir flour into macerated apple mixture, then set a colander over another bowl and drain, reserving liquid. Transfer liquid to a small saucepan; return apples to bowl. Bring liquid to a boil over medium-high heat, whisking constantly, until thickened to the consistency of loose pudding, 1 to 2 minutes. Stir back into apple mixture.
  • For the Crust: Preheat oven to 400°F, with a rack in bottom third. On a lightly floured surface, roll out disk of dough 1/8 inch thick (about 13 inches in diameter). Fit it into a 9-inch pie dish. Trim overhang to 1 inch, fold edges under, and crimp as desired. Brush edges of crust with egg and fill with apple mixture; refrigerate for 15 minutes (to help crust hold its shape in the oven).
  • For the Topping: In a medium bowl with an electric mixer, beat butter, brown sugar, baking powder, and salt until light and creamy, about 2 minutes. Add flour and oats and beat to combine.
  • Crumble topping over filling and bake for 20 minutes. Reduce oven temperature to 375°F and bake until golden brown all over and bubbling in center, 50 to 60 minutes more. (If the top browns too quickly, tent it with foil.) Transfer to a wire rack and let cool completely, at least 6 hours.
