APRICOT-GLAZED TURKEY WITH ONION AND SHALLOT GRAVY

I first made this 5 years ago and it's become a Thanksgiving staple ever since. The turkey is always very tender and the gravy is to die for.

Apricot-glazed Turkey with Onion and Shallot Gravy image

Steps:

  • For Glaze: Combine all ingredients in small saucepan and bring to boil.
  • Reduce heat to medium-low and simmer until thickened and reduce to 1 1/4 cups, about 15 minutes.
  • For Herb Butter: Blend all ingredients in small bowl.
  • Set aside.
  • For Onion Mixture: Melt butter in large skillet over medium heat.
  • Add onions and shallots and sauté until very soft and light brown, about 20 minutes.
  • Cover separately and chill.
  • For Turkey: Place rack in lowest third of oven and preheat to 400° F.
  • Pat turkey dry with paper towels.
  • Season turkey cavity with salt and pepper.
  • Place turkey on rack set in large roasting pan.
  • Slide hand under skin of turkey breast to loosen skin.
  • Spread half of herb butter over breast under skin.
  • If stuffing turkey, spoon stuffing into main cavity.
  • Place remaining herb butter in small saucepan.
  • Stir over low heat until melted.
  • Brush butter over outside of turkey.
  • Tie legs together loosely to hold shape of turkey.
  • Roast turkey 30 minutes.
  • Reduce oven temperature to 325° F.
  • Roast turkey 1 hour 30 minutes, basting occasionally with pan drippings.
  • Tent turkey with heavy-duty foil; roast 45 minutes longer.
  • Add onion mixture, 1 can broth, thyme and sage to pan.
  • Roast 15 minutes.
  • Bring glaze to simmer.
  • Brush 1/2 cup glaze over turkey.
  • Continue to roast turkey uncovered until meat thermometer inserted into thickest part of thigh registers 180° F.
  • or until juices run clear when thickest part of thigh is pierced with skewer, brushing occasionally with glaze and adding more broth to pan if liquid evaporates, about 40 minutes longer for unstuffed turkey (about 1 hour 10 minutes longer for stuffed turkey).
  • Place turkey on platter, tent with foil.
  • Let stand 30 minutes.
  • Reserve mixture in pan for gravy.
  • For Gravy: Pour contents of roasting pan into strainer set over large bowl.
  • Spoon fat from pan juices in bowl.
  • Transfer onion mixture in strainer to blender.
  • Add 1 cup pan juices to blender and puree until smooth, adding more pan juices and chicken broth if necessary to thin sauce to desired consistency.
  • Transfer sauce to heavy large saucepan and bring to boil.
  • Cook until color deepens, skimming off any foam, about 5 minutes.
  • Season with salt and pepper.
  • Serve turkey with gravy.

Orange and Maple-Glazed Turkey with Thyme-Shallot Gravy image

Steps:

  • Preheat the oven to 425 degrees F.
  • For the turkey: Pat the turkey dry, inside and out. Place the onion and orange quarters into the cavity, tie the drumsticks together and tuck the wings under the bird.
  • Rub butter all over the skin, then sprinkle generously with salt and pepper. Place the turkey on a rack set over a roasting pan. Roast for 25 minutes.
  • Meanwhile, bring the orange juice and maple syrup to a boil in a small saucepan. Remove from the heat.
  • After 25 minutes, turn down the oven to 375 degrees F and glaze the turkey with the orange-maple mixture. Continue to roast, glazing the turkey every 25 minutes, until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F, 3 to 4 hours more, depending on the oven. Let rest for 15 minutes.
  • For the gravy: Meanwhile, Heat the olive oil and butter in a thick-bottomed saucepan or Dutch oven over medium-high heat. Add the shallots and thyme, and cook until brown. Add the flour; cook for 1 minute.
  • While whisking, slowly add the turkey drippings. Bring to a boil and cook, whisking, until thickened, 5 minutes. Taste and season with salt and pepper if needed.
  • Carve the turkey and serve with the gravy.

Make-Ahead Turkey Gravy with Onions & Sage image

Steps:

  • Melt the butter in a large saucepan over medium heat. Add the onion and garlic and saute, stirring often, for 15 to 20 minutes, until the onion becomes browned and starts to caramelize. Sprinkle on the flour and cook, stirring constantly, for 1 1/2 minutes. Stir in the chicken stock, Cognac, sage leaves, bay leaves, 2 teaspoons salt (depending on the saltiness of the chicken stock), and 1 teaspoon pepper. Bring to a boil, lower the heat, and simmer for 20 minutes, stirring occasionally. Set aside at room temperature for 1 hour and strain, pressing the solids lightly and then discarding them. Refrigerate until ready to use.
  • After the turkey is cooked, remove it to a carving board to rest while you finish the gravy. Place the roasting pan on the stovetop over medium heat and add the wine. Bring to a boil, lower the heat, and simmer for 2 minutes, stirring and scraping up all the bits clinging to the bottom of the pan. Slowly whisk the gravy base into the pan. Simmer for about 5 minutes, until the gravy is smooth and slightly thickened. Taste for seasonings and serve hot.

Steps:

  • Mix butter, chopped parsley, chopped sage, chopped thyme, 3/4 teaspoon salt and 1/2 teaspoon pepper in medium bowl to blend. (Can be prepared 3 days ahead. Transfer herb butter to small bowl; cover and refrigerate. Bring butter to room temperature before using.) Position rack in bottom third of oven and preheat to 350°F. Sprinkle main cavity of turkey with salt and pepper. Place whole parsley, sage and thyme sprigs and 4 shallot halves in cavity. Starting at neck end, carefully slide hand between skin and breast meat to loosen skin. Spread 3 tablespoons herb butter over breast meat under skin. Tuck wing tips under; tie legs together to hold shape. Place turkey on rack set in large roasting pan. Rub 4 tablespoons herb butter over turkey. Cover only breast area of turkey with sheet of heavy-duty foil. Scatter remaining shallots in pan around turkey.
  • Roast turkey 30 minutes; baste with 1/2 cup broth. Continue roasting turkey for 1 1/2 hours, basting with 1/2 cup broth every 30 minutes. Remove foil from over turkey breast. Continue to roast turkey until golden brown and thermometer inserted into thickest part of thigh registers 180°F, basting with pan juices every 20 minutes, about 1 hour longer. Transfer turkey to platter. Brush with 1 tablespoon herb butter. Tent loosely with foil; let stand 20 minutes.
  • Using slotted spoon, transfer shallots from roasting pan to plate. Pour pan juices into medium bowl; spoon off fat and discard. Add wine and 1 cup chicken broth to roasting pan. Set pan directly over 2 burners and bring broth mixture to boil, scraping up any browned bits. Continue to boil until reduced by half, about 3 minutes; pour into large glass measuring cup. Add degreased pan juices. Add enough broth if necessary to equal 3 cups liquid.
  • Blend flour into remaining herb butter. Pour broth mixture into heavy medium saucepan and bring to boil. Gradually whisk in herb butter mixture. Add any accumulated juices from turkey platter. BROWN SUGAR-CURED TURKEY WITH WILD MUSHROOM-SHALLOT GRAVY

I love to try new turkey recipes during the year to experiment before the holidays. I'm finally getting around to posting some that I've tried before. This one is quite good, but a little more work than most. However, parts of it can be prepared a day ahead. Plan ahead for this one - the turkey needs sit in the refer for 24 hours with the herb mixture before cooking.

Brown Sugar-Cured Turkey With Wild Mushroom-Shallot Gravy image

Steps:

  • TURKEY:.
  • Rinse turkey inside and out.
  • Pat dry with paper towels.
  • Place turkey on platter.
  • Mix brown sugar, salt, onion powder, garlic powder, allspice, cloves and mace in small bowl to blend well.
  • Rub brown sugar mixture all over outside of turkey.
  • Refrigerate turkey uncovered 24 hours.
  • Position rack in bottom third of oven and preheat to 300.
  • Arrange onion quarters in large roasting pan.
  • Place turkey atop onions.
  • Tie turkey legs together.
  • Tuck wings under turkey.
  • Sprinkle turkey with pepper.
  • Cover loosely with foil.
  • Roast turkey 2 hours.
  • Uncover; roast 30 minutes.
  • Add 1 cup broth to roasting pan; baste turkey with broth.
  • Roast turkey 1 hour, basting occasionally.
  • Add 1 cup broth to roasting pan; continue to roast turkey until dark brown, basting with broth every 20 minutes, about 1 hour.
  • Cover turkey loosely with foil; continue to roast until thermometer inserted into innermost part of thigh registers 180, about 1 hour 30 minutes longer.
  • Transfer turkey to platter.
  • Tent with foil and let stand 30 minutes.
  • Serve with Wild Mushroom-Shallot Gravy.
  • GRAVY:.
  • Preheat oven to 300.
  • Combine oil, shallots and garlic in small glass baking dish.
  • Cover dish with foil.
  • Bake until shallots and garlic are very tender and pale golden, about 1 hour.
  • Cool slightly.
  • Thinly slice shallots and garlic; reserve oil in dish. (Can be prepared 1 day ahead. Cover separately and refrigerate).
  • Transfer 1 tablespoon oil from baking dish to heavy large saucepan.
  • Heat oil over medium-high heat.
  • Add mushrooms, rosemary, thyme, sage, and roasted shallots and garlic to saucepan; saute until mushrooms are tender, about 5 minutes.
  • Add Marsala and sherry; boil until syrupy, about 6 minutes.
  • Add stock; boil until liquid is reduced by half, about 10 minutes.
  • Add cream; boil until mixture thickens to sauce consistency, about 5 minutes.
  • Season with salt and pepper.

ARE YOU COOKING WITH THE BEST TYPE OF ONION? PROBABLY NOT.

All onions are not created equal - which is why it's frustrating when a recipe calls for "an onion.?? Sure, it's not the end of the world if you use a red onion when the recipe writer had a yellow one in mind, or vice versa, since pretty much every onion will cook the same way. But using the best onion for the job can really add a depth of flavor to your meals that using a sub-par type just...well, won't.

Are You Cooking With the Best Type of Onion? Probably Not. image

  • RED ONIONS (PURPLE): For most of the year, you'll find red storage onions at the supermarket, which are pungent and spicy. In the summer months, you'll often find fresh red onions, which are much more mild, and lack a bit of the "onion-y?? flavor you'll find in their yellow and white cousins. They do much better raw than cooked. If you find the taste of raw red onions (and really any other type of onion) too sharp, you can soak red onions in water for 30 minutes-1 hour. Best For: Salads, sandwiches, burgers, pickling, salsas. YELLOW ONIONS: The gold standard onion and usually the cheapest one at the market. If you're using a recipe that doesn't specify what type of onion to use, a yellow onion is your best bet. Yellow onions are particularly hardy, and their flavor complex and spicy. They also have more sulfur than other onion varietals, so they're much more pungent, difficult to eat raw, and more likely to make you tear up. Yellow onions keep for a very long time. Best For: Dishes that cook for a long time on low heat, like soups, including French onion soup, stocks, risotto, sauces and stews. Anything sautéed, too. WHITE ONIONS: Of all of the main types of onion, white onions are the least common. Sharper than yellow onions, crisp and clean white onions are great raw and cooked. You can cook white onions like you would yellow onions. White onions have a slightly shorter storage life than yellow onions, but should not be kept in the fridge. Best For: Mexican food, white sauces, pasta salads, raw in salads, in chili, and potato salads. SWEET ONIONS: They tend to be larger, and have thinner skin, than other types of onions. Some are so sweet that you can actually eat them like an apple. You may have seen sweet onions called Vidalia, Walla Walla, and, less commonly, Texas sweet onions and Maui onions. Sweet onions are much less pungent, and yes, sweeter, than yellow onions. They break down quickly and aren't very complex, so it's best not to use them in lieu of regular yellow onions as an aromatic flavor. Unlike other onions, sweet onions spoil quickly and should be stored in the fridge. Best For: Gratins, roasted vegetables, onion rings. They're also great raw on salads and sandwiches. My favorite? On the grill with a little olive oil, salt and pepper!

Apricot-Glazed Turkey with Roasted Onion and Shallot Gravy image

Steps:

  • For Glaze:
  • Combine all ingredients in heavy small saucepan and bring to boil. Reduce heat to medium-low and simmer until thickened and reduced to 1 1/4 cups, about 15 minutes.
  • For Herb Butter:
  • Blend all ingredients in small bowl. Set aside.
  • For Onion Mixture:
  • Melt butter in heavy large skillet over medium heat. Add onions and shallots and sauté until very soft and light brown, about 20 minutes. (Glaze, herb butter and onion mixture can be prepared 1 day ahead. Cover separately and chill. Bring herb butter to room temperature before continuing.)
  • For Turkey:
  • Position rack in lowest third of oven and preheat to 400° F. Pat turkey dry with paper towels. Season turkey cavity with salt and pepper. Place turkey on rack set in large roasting pan. Slide hand under skin of turkey breast to loosen skin. Spread half of herb butter over breast under skin. If stuffing turkey, spoon stuffing into main cavity. Place remaining herb butter in small saucepan. Stir over low heat until melted. Brush butter over outside of turkey. Tie legs together loosely to hold shape of turkey. Roast turkey 30 minutes. Reduce oven temperature to 325° F. Roast turkey 1 hour 30 minutes, basting occasionally with pan drippings. Tent turkey with heavy-duty foil; roast 45 minutes longer. Add onion mixture, 1 can broth, thyme and sage to pan. Roast 15 minutes. Bring glaze to simmer. Brush 1/2 cup glaze over turkey. Continue to roast turkey uncovered until meat thermometer inserted into thickest part of thigh registers 180° F. or until juices run clear when thickest part of thigh is pierced with skewer, brushing occasionally with glaze and adding more broth to pan if liquid evaporates, about 40 minutes longer for unstuffed turkey (about 1 hour 10 minutes longer for stuffed turkey). Place turkey on platter, tent with foil. Let stand 30 minutes. Reserve mixture in pan for gravy.
  • For Gravy:
  • Pour contents of roasting pan into strainer set over large bowl. Spoon fat from pan juices in bowl. Transfer onion mixture in strainer to blender. Add 1 cup pan juices to blender and puree until smooth, adding more pan juices and chicken broth if necessary to thin sauce to desired consistency. Transfer sauce to heavy large saucepan and bring to boil. Cook until color deepens, skimming off any foam, about 5 minutes. Season with salt and pepper.
  • Serve turkey with gravy.

3/4 cup (1 1/2 sticks) unsalted butter, room temperature
3 tablespoons chopped fresh thyme or 1 tablespoon dried
3 tablespoons chopped fresh sage or 1 tablespoon dried rubbed sage
1 1/2 teaspoons salt
1 teaspoon ground black pepper

2 tablespoons (1/4 stick) unsalted butter
3 large onions (about 2 pounds), thinly sliced
6 ounces shallots (about 6 large), thinly sliced
Turkey
1 21- to 22-pound turkey
1 14 1/2-ounce can (or more) low-salt chicken broth
1 teaspoon chopped fresh thyme or 1/2 teaspoon dried
1/2 teaspoon chopped fresh sage or 1/4 teaspoon dried
Gravy
1 14 1/2-ounce can (about) low-salt chicken broth
