Bailey's Irish Cream Mousse Pie image

Steps:

  • Beat egg yolks until they are lemon-colored, then add the salt and Bailey's.
  • Cook in top of double boiler until yolk mixture thickens, and then allow to cool.
  • Beat egg whites until stiff.
  • Combine egg/Bailey's mixture, egg whites, and 2/3 of the Cool Whip, using a folding motion.
  • Fold in ¾ cup of the nuts.
  • Scrape the mixture into a baked pie shell, and cover with the remaining whipped topping.
  • Sprinkle with the remaining nuts and chocolate shavings.
  • Freeze for 4 hours, but no more than 8.

Homemade Baileys Irish Cream image

Steps:

  • Add ingredients in blender.
  • Blend until smooth.
  • Taste (!) I usually adjust the flavor at this point, adding either more half and half, more chocolate or leaving it as is.

1 cup half-and-half
1 (14 ounce) can sweetened condensed milk
1 2/3 cups whiskey (I use Jameson)
1/4 cup Hersheys Chocolate Syrup
2 1/2 teaspoons almond extract
1 tablespoon instant espresso powder
1 tablespoon vanilla extract

BAILEY'S IRISH CREAM AND MACADAMIA NUT PIE

I have no idea where I got this recipe, but it is always a hit and it's super easy. Update: Recently I decided to bring this to a party and wanted it to be more like finger food, so I used a biscuit cutter to make little pie shells and tucked them gently into a mini-muffin tin (using a fork to poke the bottom), then I placed 4 chocolate chips in each one and poured the rest of the mix over them until nearly full. They were a HUGE hit!

Bailey's Irish Cream and Macadamia Nut Pie image

Steps:

  • Preheat oven to 300 degrees.
  • With an electric mixer, cream together sugar, butter, and salt.
  • Add the eggs and mix well.
  • Add the corn syrup and bailey's and mix well again.
  • Stir in the chocolate chips and nuts by hand.
  • Pour into unbaked pie shells and bake for 90 minutes or until a knife inserted in the center comes out clean.

Baily's Irish Cream Brownie Pie image

Steps:

  • Preheat oven to 350*F.
  • Line a 9 inch pie plate with the pastry, forming a high edge. Trim and flute the edge. Chill while preparing the filling.
  • Melt the butter with the baking cocoa in a small heavy saucepan over medium low heat. Remove from heat and cool slightly.
  • Beat the eggs in a small mixing bowl at high speed until foamy. Beat in the sugar gradually in a fine stream until the eggs are thick and pale yellow coloured.
  • Reduce the speed to low. Beat in the chocolate mixture, liqueur and vanilla. Fold in the mixture of flour and salt.
  • Sprinkle the walnuts over the prepared pastry. Pour the filling over the walnuts.
  • Bake for 30 minutes or until the crust is golden brown and the filling is set. Remove to a wire rack to cool.
  • Serve with ice cream or whipped cream.
