SALVADORIAN BAKED FISH

My grandmother has been making this recipe for our family for as long I can remember. This will work on any white fish. To our family, when it comes to cooking fish, it needed to be perfect. Believe me, if you only knew! This recipe is a real winner.

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a baking dish with 1 teaspoon olive oil.
  • Rub remaining olive oil over the fish fillets and place into the baking dish. Season fish with garlic powder, salt, and black pepper; top with minced garlic. Drizzle lime juice over the fish. Arrange lemon slices, tomato slices, onion slices, and bell pepper slices atop the fish. Cover baking dish tightly with aluminum foil.
  • Bake in preheated oven until fish flakes easily with a fork, 30 to 40 minutes.

Steps:

  • Preheat oven to 425. Lightly grease or spray a 13" x 9" (or larger) baking dish.
  • Rinse fish filets and pat dry. Set them in a single layer in the prepared baking dish.
  • In a small bowl, combine melted butter, lemon juice, garlic, sugar, pepper, thyme and parsley. Stir well. Pour evenly over fish filets.
  • Sprinkle with the breadcrumbs.
  • Bake at 425 for about 20 minutes or until filets are opaque and flakey.

  • Place fish, in a lightly greased 9x13 baking dish.
  • In a bowl, combine mayonnaise, butter, onion, cheese, lemon juice, Old Bay, and pepper. Mix until a thick paste is formed.
  • Spread mixture evenly over fish filets, then top with bread crumbs.
  • Bake for about 10 minutes, or until fish is flaky.
  • To finish cooking, place fish under the broiler, for another 2-3 minutes, or until fish is golden brown.

  • Place the fish fillets in a shallow baking dish. Sprinkle with garlic, and squeeze lemon juice over them. Dot with pieces of butter.

Salonika Shrimp image

Steps:

  • Cook the orzo al dente in salted water. Drain well. Return to pot and add the butter, mix well to coat all the pasta.
  • Butter an 11 x 7 Pyrex dish.
  • Mince the dill and basil.
  • Heat olive oil in a large skillet over medium high heat. Add garlic and sauté just until translucent. Add the tomatoes, dill and basil. Cook until the tomatoes are slightly soft, about 10 minutes. Add the shrimp and cook, stirring occasionally, just until pink about 3 or 4 minutes. Remove from heat.
  • Preheat oven to 500°F.
  • While the tomato mixture is cooking, mince the oregano (or crush the dried with your fingers). Crumble feta into a small bowl. Add the oregano and toss with feta until blended.
  • Spread the orzo evenly in the buttered baking dish, top with the tomato shrimp mixture, then put the feta oregano on top.
  • Bake just until feta begins to melt, about 5 minutes.
  • Serve immediately.

Salona ( Sweet and Sour Fish) image

Steps:

  • In a large skillet, on a low flame, place cut up onions with vegetable oil and stir unil brown. Add the chunks of tomatoes and 1/4 cup water.
  • Keep stirring on low heat as you add the rest of the ingredients (not the fish). Continue cooking on low flame for 10 minutes. Taste sauce. It should have a mild sweet and sour taste.
  • Cover the bottom of a rectangular pyrex baking dish with the sauce. Lay the fish on top of the sauce and then cover the fish with the rest of the sauce.
  • Preheat oven to 400 degrees F. Bake for 45 minutes. Remove and add the sliced tomatoes over the entire top of the fish. Now broil for 10 minutes.
