BANANA BREAD ( WITH CAULIFLOWER)
This is a recipe found in Jessica Seinfeld's cookbook, Deceptively Delicious. This recipe, and the others found in her collection, are designed as a way to hide veggies (and other healthy elements) in your family's food.

Steps:
- Preheat the oven to 350°F Coat a 9 x 5 inch loaf pan with cooking spray.
- In a bowl mix the flours, baking soad, baking powder, salt, and cinnamon then set aside.
- In another large mixing bowl, combine sugar and oil until well combined. Mix in the egg whites, bananas and cauliflower purees, and the vanilla.
- Add the flower mix to the wet mix.
- Pour the batter into the loaf pan and bake for 55 - 60minutes, or until it passes the toothpick test.
- Let cool on rack for 5 minutes and then turn the bread out of the pan to cool further before serving.

- In a bowl or a zipper lock bag, mix the flours with the baking soda, baking powder, salt, and cinnamon, if using. Set aside.
- In a large mixing bowl, mix the sugar and oil with a wooden spoon until well combined. Mix in the egg whites, banana and cauliflower purees, and vanilla. Add the flour mixture and mix just until combined.
- Pour the batter into the loaf pan. Bake until a toothpick inserted into the center comes out clean, 55 to 60 minutes for the larger loaf, 25 to 30 minutes for the mini loaves. Let cool on a rack for 5 minutes, then turn the bread out of the pan to cool before serving.

- Remove odd pots and pans from oven.
- Preheat oven to 350º / 180º.
- Cream together butter and sugar.
- Add eggs and crushed bananas.
- Combine well.
- Sift together flour, soda and salt. Add to creamed mixture. Add vanilla.

- Pour into greased and floured loaf pan.

BREADED CAULIFLOWER
I thought this recipe would be here, but didn't see it. It's one of my favorite ways to have cauliflower. My Grandmother made this often. Frying it with breading just does something to the flavor. You can also add other spices to change the flavor, such as Italian spices, Essence, Garlic, etc. It is so easy.

Steps:
- Cut apart the florets of your Cauliflower.
- Don't cut them too small.
- Leave the smaller ones together with the stem to make them as large as your bigger ones.
- Rinse, and dry slightly with a paper towel.
- Pour about 1/2" to 1" oil in your frying pan and begin prheating the oil.
- Careful don't make it too hot, you don't want to burn the crumbs.
- In a bowl, beat eggs slightly with a whisk, slowly adding a little flour at a time.
- You want a thick enough batter to cling to the cauliflower.
- If you have made it too thick, you can always add milk, or too thin, more flour.
- Salt and Pepper the florets, or use the"Essence" for variance.
- Coat each cauliflower in the batter, then in the bread crumbs.
- Then proceed to put them in your preheated oil to fry.
- Turn to brown all sides.
- Drain on paper towels.
- Serve hot.
- Easy!

CAULIFLOWER AND BANANA PEEL CURRY
Although one may assume banana peels are the star of the show, they're minor players in this flavor-packed production, adapted from "Cook, Eat, Repeat" by Nigella Lawson (Vintage Digital, 2020). It all hinges on the performance of a concentrated paste made with shallots, ginger, garlic and a red chile of your choice. This mixture forms the base of an intensely aromatic sauce that would make anything taste good. Feel free to swap out the banana skins for their surprising doppelgänger, eggplant, and the cauliflower for broccoli, potato or parsnip. Prep makes up the bulk of the work in this recipe; the curry itself comes together in under 30 minutes.

- Bring a large pot of water to a full boil.
- Put the banana peels in a medium-large heatproof bowl. Pour in enough of the boiling water to cover, reserving the rest for cooking the cauliflower.
- Add the cauliflower florets and leaves to the pot and boil for 5 to 7 minutes, or until fork tender.
- While the cauliflower cooks, gently stir 1/2 teaspoon each turmeric and fine salt into the bowl with the soaking banana peels. Let sit until they've softened up and are cool enough to handle, around 30 minutes.
- Meanwhile, once the cauliflower is tender, drain it into a colander in the sink; set aside while the banana peels cool and you make the curry paste.
- Prepare the curry paste: Place the shallots, ginger and chile into a 4-cup liquid measuring cup or wide jar that accommodates an immersion blender.
- Using the flat side of a heavy knife, bruise the garlic to help remove the skins, then add the peeled cloves to the measuring cup followed by the cilantro stems, cinnamon and remaining 3/4 teaspoon turmeric. Use the immersion blender to turn everything into a paste. (Be patient: At first you'll never think it's going to happen, but after a while, everything will obligingly turn into a vibrantly colored mush.)
- Drain the banana skins, squeezing out any excess liquid, and either chop them into slightly smaller-than-bite-size pieces, or take a fork and, with the interior of the banana skins facing you, press the tines into the top and push all the way down so that you have long, thin strips.
- Heat the vegetable oil in a wok or medium skillet over medium-low. When the oil is hot, add the curry paste and fry for 7 minutes, stirring most - if not quite all - of the time. As it cooks, the paste will seem to condense and tighten; it will also lose its cheery brightness.
- Stir in the tomato paste and cook, stirring, for 3 minutes. Add the coconut milk, lemon juice, sugar and flaky salt. Whisk to combine, scraping the browned curry from the bottom of the pan. Cook, uncovered, for 5 minutes, letting it bubble, reduce and thicken a little.
- Add the banana skins to the pan, lower the heat and bring to a simmer for another 10 minutes, or until the sauce has thickened and the banana skins are soft. Tip in the cauliflower florets and leaves and cook until they're hot all the way through.
- Taste and adjust for salt as needed. Scatter the reserved chopped cilantro leaves over the curry and serve with rice or flatbread, if desired.
BREADED CAULIFLOWER
Not the healthiest way to eat cauliflower but we love it this way! You can also use this recipe for broccoli or mushrooms.

- Drain and set aside.
- In a bowl, mix eggs and seasonings.
- Place bread crumbs and Parmesan cheese in a resealable plastic bag.

- Put cauliflower into bread mixture and coat.
- In a skillet, melt the butter over medium-high heat.
