OLD-FASHIONED BANANA CREAM PIE
Before Cool Whip and instant pudding, this was how a cream pie was made. If you leave out the bananas, you have vanilla cream pie. If you add 1 cup shredded coconut to milk as it's being heated, you have coconut cream pie.

BANANA CREAM PIE

Time 3h25m
Yield 8-10 servings

Steps:
- Make the crust: Preheat the oven to 350 degrees F. Pulse the cones, salt and sugar in a food processor until coarsely ground. Add the melted butter and pulse until the mixture looks like coarse sand. Press on the bottom and up the sides of a 9-inch pie dish. Bake until golden, 10 to 12 minutes; let cool completely.
- Make the filling: Bring 2 cups milk to a bare simmer in a saucepan over medium heat. Whisk the egg yolks, 3/4 cup sugar and the vanilla in a large bowl until smooth and pale. Whisk in the cornstarch. Slowly whisk the warm milk into the egg mixture, then pour into the saucepan and return to medium heat. Cook, whisking constantly, until the custard thickens and begins to bubble, about 2 minutes. Stir in the butter until melted. Strain the custard through a fine-mesh sieve into a large bowl; set aside to cool, stirring frequently.
- Put the remaining 2 tablespoons milk and the chocolate in a microwave-safe bowl; microwave 1 minute. Stir until the chocolate melts, then let cool slightly.
- Spread the chocolate over the bottom and up the sides of the crust. Press the bananas into the chocolate, then pour the custard over the bananas. Cover and chill until set, at least 1 hour.
- Preheat the oven to 375 degrees F. Make the meringue: Beat the egg whites in a large bowl with a mixer on medium-high speed until foamy. Add the cream of tartar and half of the remaining 1/3 cup sugar and beat until opaque. Add the remaining sugar and beat until stiff peaks form, about 5 more minutes.
- Swirl the meringue on the pie with the back of a spoon. Bake until golden brown in spots, 5 to 8 minutes. Let sit at room temperature until set, about 1 hour, 30 minutes.
ROASTED BANANA CREAM ECLAIRS

Time 2h50m
Yield about 15 small eclairs
Number Of Ingredients 26
Steps:
- Preheat the oven to 425 degrees F.
- For the choux paste: Line a baking sheet with parchment paper. Bring the water, milk, butter, sugar and salt to a simmer over medium heat in a medium saucepan, stirring with a wooden spoon. As soon as it comes to a boil, add the flour, stirring constantly, until the dough forms a ball and pulls away from the sides of the pan, about 1 minute. Remove the pan from the heat and let the dough cool for 3 to 4 minutes, stirring occasionally.
- Transfer to a stand mixer fitted with the paddle attachment and mix on low speed to allow the dough to cool, 2 to 3 minutes. Add the eggs, one at a time, with the mixer on medium speed. When all the eggs have been incorporated, scrape the dough into a pastry bag fitted with your desired tip.
- Pipe the dough into 4 1/2-by-3/4-inch lengths on the prepared baking sheet, spacing them about 3 inches apart. You should end up with about 15 eclairs. With a damp fingertip, flatten any points. Bake until eclairs are deep golden brown and puffed, rotating the sheets halfway through, 22 to 25 minutes. They should be very light and crisp. Turn the oven off.
- Poke each eclair on either end with a toothpick to allow some steam to release. Return the eclairs to the oven, prop the door open a crack and allow them to dry out, about 15 minutes. Transfer the baking sheet to a wire rack and allow the eclairs to cool completely.
- For the chocolate glaze: Meanwhile, bring the cream to a simmer in a medium saucepan. Remove from the heat and mix in the chocolate, cocoa powder and honey. Whisk until the chocolate has completely melted. Transfer to a medium bowl and allow the glaze to cool and thicken.
- For the pastry cream: Add the milk, vanilla bean and salt to a saucepan and bring to a simmer. Meanwhile, whisk together the egg yolks, sugar and cornstarch until thick, pale and smooth. Remove the vanilla bean pod from the hot milk and scrape the seeds into the milk, discarding the pod. Temper the hot milk into the egg mixture by slowly pouring it in while whisking constantly. When combined, pour back into the pot and bring to a simmer over medium heat.
- Stir continuously until thickened, then remove from the heat and mix in the butter and vanilla extract. Strain through a fine-mesh sieve into a bowl, then set a piece of plastic wrap directly on the surface of the pastry cream to prevent a skin from forming. Let cool to room temperature, then refrigerate until cold, at least 1 hour.
- For the caramelized bananas: When the pastry cream is almost ready, preheat the oven to 450 degrees F. Line a rimmed baking sheet with parchment paper or a Silpat. Stir together the cinnamon and sugar in a small bowl, then pour into an even layer on the prepared baking sheet. Place the bananas cut-side down on the cinnamon sugar, coating them as much as you can. Using a paring knife or fork, poke the skin of the bananas a few times to allow steam to release. Bake until completely caramelized, 15 to 20 minutes. Allow to cool slightly before gently flipping them over.
- Remove the bananas from their skins and discard the skins. Place the roasted bananas in a food processor and puree until smooth. Add the pastry cream and puree until smooth. Pour into a pastry bag fitted with a small metal tip.
- For the garnish: In a large skillet, heat the oil over medium-high heat. Add the bacon and cook until crispy. Add the peanuts and salt and toast together, about 1 minute. Transfer to a paper towel-lined sheet tray to drain any excess fat. When cooled slightly, roughly chop the mixture.
- To serve, poke a small hole in both ends of each eclair using a paring knife. Fill the eclairs from both ends with the banana pastry cream. Dip the tops in the chocolate glaze, allowing any excess to drip off. Lightly sprinkle with the bacon and peanut garnish.

Steps:
- Put the banana pudding mix in a medium bowl. Slowly pour in the milk while beating with an electric mixer on medium speed. Once all the milk has been added, increase the speed to high and beat until smooth and fluffy, about 2 minutes. Add the vanilla and salt and mix until combined. Roughly chop 2 of the bananas and stir them into the pudding mixture to combine. Transfer to a 9-inch pie dish. Refrigerate, covered, until chilled, about 2 hours.
- Thinly slice the remaining banana into rounds. Decorate the outer rim of the dip with a ring of overlapping banana rounds. Sprinkle the bananas with the sugar. Use a kitchen torch to caramelize and slightly burn the sugar on the bananas. Cover the top with whipped cream, making sure not to cover the bananas. Serve with vanilla wafers for dipping.

Steps:
- For the crust: Adjust an oven rack to the middle position and preheat the oven to 325 degrees F. Spread the coconut flakes on a baking sheet and bake until it begins to turn golden, about 10 minutes. Toss and continue to bake, tossing very frequently, until all of the coconut is evenly golden brown, 6 to 8 minutes more. Set aside to cool for 15 minutes. Leave the oven on.
- Whisk the egg white, sugar, vanilla and salt in a large bowl until combined. Fold in the coconut. Coat a 9-inch pie plate with cooking spray and press in the mixture, forming a 1/4-inch crust around the bottom and sides. Bake until toasted and brown, 20 to 25 minutes. Set aside on a wire rack to cool for about 15 minutes.
- For the filling: Peel the bananas and slice crosswise into thin rounds. Set aside while you make the custard.
- Whisk the sugar, cornstarch and salt together in a medium saucepan. Vigorously whisk in the yolks, milk and vanilla until smooth. Cook over medium heat, stirring constantly, until the mixture starts to thicken and simmer, about 4 minutes. Once the mixture is simmering, continue to cook 1 minute longer, stirring constantly. Remove from the heat and pour a third of the custard over the coconut crust. Arrange the banana slices over the custard in an even layer and top with the remaining custard. Chill for 2 hours or up to overnight.
- For the topping: Beat the heavy cream with an electric mixer until it just starts to thicken. Beat in the confectioners' sugar and continue beating until stiff peaks form, then spoon onto the pie to cover the custard. Serve immediately or chill for up to 2 hours.

Steps:
- 1. Peel 2 bananas and slice into 1/2-inch-thick pieces. Melt 1 tablespoon butter in medium saucepan over medium-high heat. Add sliced bananas and cook until they begin to soften, about 2 minutes. Add half-and-half, bring to boil, and boil for 30 seconds. Remove from heat, cover, and let sit for 40 minutes.
- 2. Whisk granulated sugar, egg yolks, and salt together in large bowl until smooth. Whisk in cornstarch. Strain cooled half-and-half mixture through fine-mesh strainer into yolk mixture-do not press on bananas-and whisk until incorporated; discard cooked bananas.
- 3. Transfer mixture to clean medium saucepan. Cook over medium heat, whisking constantly, until thickened to consistency of warm pudding (180 degrees), 4 to 6 minutes. Remove pan from heat; whisk in remaining 3 tablespoons butter and 1 teaspoon vanilla. Transfer pastry cream to bowl, press greased parchment paper directly against surface, and let cool for about 1 hour.
- 4. Meanwhile, roll pie dough into 12-inch round on lightly floured counter. Transfer to 9-inch pie plate, fold edge of dough under itself so edge of fold is flush with outer rim of plate, and flute edges. Refrigerate for 40 minutes, then freeze for 20 minutes. Adjust oven rack to lower-middle position and heat oven to 375 degrees.
- 5. Line chilled pie shell with 12-inch square of aluminum foil, folding foil over edges of dough. Fill with pie weights and bake for 20 minutes. Carefully remove foil and weights, rotate plate, and continue baking until crust is golden brown, 7 to 11 minutes. Let cool to room temperature.
- 6. Peel and slice remaining 3 bananas 1/4 inch thick and toss with orange juice. Whisk pastry cream briefly, then spread half over bottom of pie shell. Arrange sliced bananas on pastry cream. Top with remaining pastry cream.
- 7. Using stand mixer fitted with whisk, heavy cream, confectioners' sugar, and remaining 1/2 teaspoon vanilla on medium-low speed until foamy, about 1 minute. Increase speed to high and whip until stiff peaks form, 1 to 3 minutes. Spread whipped cream evenly over top of pie. Refrigerate until set, at least 5 hours and up to 24 hours. Serve.
