CHERRY COLA BAKED APPLES
My favorite soda is Diet Cherry Coke and one of my favorite fruits of the fall is apples. I was very anxious to try this recipe that pairs the two. I loved it! The only thing I tweeked was the use of raisins. I'm not much on those.

Steps:
- Preheat oven to 375 degrees.
- In a small bowl, combine raisins, walnuts, sugar, and 1/4 teaspoons cinnamon. Place apples in baking dish. Fill the center with the fruit/nut mixture.
- Pour the soda over the apples. Dot each apple with 1/2 teaspoons butter. Sprinkle with the remaining cinnamon.
- Bake until apples are tender, about 45 minutes. Serve with sauce from the baking dish.

BAKED APPLES

Steps:
- Preheat the oven to 375 degrees F.
- In a large bowl, mix together cherries, sugar, pecans, cinnamon and nutmeg. Put aside.
- With a melon scooper, core apples to hollow out the middle. Do not go all the way through. Fill each apple core with dry cherry mixture.
- Pour apple cider into casserole dish and place apples right side up. Place a pat of butter on apple hole filled with mixture. Drizzle maple syrup on top of all the apples. Bake for 50 minutes.

- Core apples. Place them in a casserole dish. Pour the entire can of soda over the apples.
- Sprinkle sugar and cinnamon over the apples. Place the dish in the oven and bake for 45 minutes or until the apples are tender.
- Top with whipped topping. Sprinkle with additional cinnamon, if you like. Enjoy!

- Preheat oven to 350 degrees F (175 degrees C).
- Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.
- Bake in preheated oven for 15 minutes, until sugar begins to caramelize and apples are tender.

This comes from my Hungry Girl cookbook, these are my personal changes - i prefer slicing the apples before baking, and i also use Gala apples (since that's what I normally eat), and i used enough soda to cover the apples (more than 12 oz.), so adapt to your preferences :-)

- Wash and thoroughly dry apples; remove stems. Insert wooden pop sticks into apples. Place on a waxed paper-lined baking sheet; set aside., In a large heavy saucepan, combine the sugar, water and corn syrup. Cook and stir over medium heat until sugar is dissolved. Bring to a boil. - Combine cherries and cherry brandy in bowl. Let stand until cherries plump, at least 20 minutes and up to 2 hours.
- Preheat oven to 350° F. Using melon baller, hollow center of each apple half. Arrange apples cut side up in glass baking dish. Fill centers with cherry mixture, dividing evenly. Combine brown sugar, maple syrup and butter in heavy small saucepan. Bring to simmer, stirring until melted. Drizzle sauce over and around apples. Bake apples until tender, basting frequently with sauce, about 55 minutes. Arrange apples on plates. Place scoop of frozen yogurt alongside. Drizzle sauce over and serve.

- Preheat oven to 350 degrees. Core apples with a melon baller, making a 3/4-inch-wide cavity, stopping 1/2 inch from the bottom. Peel top inch of apples; fill with cherries and walnuts. Arrange in an 8-inch square baking dish.
