  • Strain Marinate beef or game for 12-24 hours in refrigerator.

1 onion, chopped
1 carrot, chopped
2 stalks celery, chopped
3 cups red wine (only use stuff you would drink yourself)
2 cups water
2 bay leaves
2 tablespoons fresh thyme, chopped
3 tablespoons fresh basil, chopped
1/4 cup chopped fresh parsley
5 cloves garlic, peeled and crushed
14 peppercorns
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1 teaspoon soy sauce

A pretty simple combination of flavors that explodes in your mouth. Use the best vinegar and fresh rosemary whenever possible. Generally I like to eyeball my measurements, so adjust the amount to your taste. This is my standby for romantic dinners and has always had great success ;)

Knock Your Socks off Pork Chops image

Steps:

  • coarsely chop garlic.
  • in a shallow dish, combine the garlic and olive oil.
  • Using a pestle, crush the garlic in the oil, allowing the flavors to mesh. Of course, if you're a normal person like me and don't own a pestle, any instrument with a blunt end will work, such as the base of a glass or back of a spoon. I use a shot-glass.
  • Add the rosemary and vinegar to the oil-garlic mix.
  • Rub the pork chops with a little salt, then add them to the marinade, being sure to coat them well. Cover and refrigerate for one hour.
  • Place the meat in a skillet on medium-low heat, pouring any remaining marinade on top. Cook for about ten minutes, then turn and cook for another five minutes or until done.

We used this marinade today on some antelope tenderloin and smoked it for 2 hours with charcoal - fabulous! It is so quick and easy to throw together. I marinated the meat for 3 hours. You can just grill with it too. Found this online on a hunters site.

  • Combine all ingredients and mix well. Place meat in freezer ziptop bag or covered container. Pour marinade over meat.

WILD GAME MARINADE

This is another wild game recipe from "The Washington cookbook", published in 1982. I have not tried it but it is posted in response to a request in the wild game forum! The original recipe does not call for refrigerating the meat and marinade, just letting it sit. I can't imagine that this is safe, though, so I added the refrigeration part. And the recipe recommends barbequeing the meat after it is marinated. Yield and cook time are approximate.

Steps:

  • Marinate chicken 2-3 hours in white wine, covered.
  • Remove chicken and save marinade.
  • Sauté chicken in butter until golden brown.
  • Remove chicken and set aside.
  • Add onion and garlic to skillet.
  • Sauté 2 minutes, then sprinkle with flour.
  • Cook and stir for 2 more minutes.
  • Add reserved marinade.
  • Put chicken back in the skillet and add salt, pepper, paprika, basil and parsley.
  • Cover and simmer 30-35 minutes.
  • Remove chicken and place on a serving platter.
  • Mix together half and half, egg yolk and 2-3 tablespoons sauce from the skillet.
  • To skillet add the sliced mushrooms and the half and half mixture.
  • Cook and stir to thicken sauce.
  • Adjust seasoning to taste.
  • Pour over chicken, serve.
