ITALIAN STYLE HOT DOGS

Steps:
- In a saucepan over medium-high heat, heat enough oil to cover the potatoes to frying temperature (325 to 350 degrees F), and add the potato rounds. Turn them over when they begin to stick to the pan, and fry until the potatoes are browned and crispy on the outside. (The potatoes can also be cooked in a deep fryer for 3 to 5 minutes.) Set the potatoes aside, and turn the heat down to medium.
- Add the hot dogs, onions and peppers to the remaining oil in the saucepan. Let them cook together and exchange flavors until the hot dogs are done and the onions and peppers are beginning to brown.
- To build The Single: Cut the bread into quarters. Starting at the point of one wedge, slice open through the soft middle of the bread, not across the crust and not completely in half. You should be able to peel open the bread just enough to make a pocket for the dog. Mustard can be added to the inside of the bun. Place one dog on the bottom, then pile with the onions, peppers and about half a potato worth of rounds. If the toppings are overflowing the bun, you're doing it just right. Ketchup and sprinkled red pepper flakes can be added on top. Have a fork handy!
- To build The Double: Cut the bread in half. Slice open a pocket in the middle of the half-moon. Put 2 hot dogs on the bottom and double everything, especially the potato rounds - about 1 potato's worth can fit on top!

- Grill or broil hot dog.
- Wash peel and cube potato.
- Toss potato in oil, season with salt - pepper.
- Sauté potatoes until fork tender (like home fries or they can be roasted).

NEWARK STYLE ITALIAN HOTDOGS
My inlaws were from Newark, NJ and this is a dish that my Mother-in-Law would make and something that you can get in a greasy spoon all over New Jersey. I have shared it at a covered dish at work as part of diversity day here in Houston, TX and nobody ever heard of it before but everyone loved it! Its an interesting regional way...

Steps:
- 1. boil potatoes for 15 minutes, rinse to cool and slice with or without skins on into large, bite sized pices.
- 2. In Sautee pan sautee peppers, onions and potatoes and fry until soft. add hotdogs and continue cooking, stirring occasionally until hotdogs are as cooked as you like them.
- 3. slice Portuegese rolls and spread mustard on inside. Scoop veggies into roll first and then 2 hotdogs. yummmmmm!

When we make this dish we buy 2 packages of hotdogs, throw some of mine in and some of his in and freeze the leftover ones. Yes, we really do this. We really do! It has kept the peace for 26 years! LOL
BRUNO'S ITALIAN HOT DOG
Adding the taste of Italian ingredients makes a good hot dog great. Don't even think about adding mustard or ketchup.

- Add olive oil to skillet or saucepan and heat to medium-high temperature.
- Add the sliced onion.
- Stir the onion slices and add salt and brown sugar.
- Stir frequently and cook until onion is soft and caramel colored (about 25 min).
- Wrap each hot dog with 2 prosciutto slices.
- Grill hot dogs until prosciutto is crisp (about 7-10 min).
- Place hot dog in lightly toasted roll.
- Top with provolone cheese and caramelized onions.
- Add roasted red peppers and sprinkle red pepper flakes.
- Finish with tomatoes and salt and pepper to taste.

- Pour oil in 9x13 baking pan.
- Slice each hot dog into 8 pieces and place all in the pan.
- Cut the onions into thin slices and add to pan.
- Cut pepper into chunks and add to pan.
- Add entire bag of potatoes to pan.

HOMEMADE HOT DOG
In response to a request for a hot dog without a year's worth of sodium, I found this recipe online. You add the sodium and none of the chemicals. Voila! A healthy hot dog!

Steps:
- Prepare the casings (see instructions below).
- In a blender or food processor, make a puree of the onion, garlic, coriander, marjoram, mace, mustard seed, and paprika.
- Add the pepper, egg white, sugar, salt, and milk and mix thoroughly.
- Grind the pork, beef, and fat cubes through the fine blade separately.
- Mix together and grind again.
- Mix the seasonings into the meat mixture with your hands.
- This tends to be a sticky procedure, so wet your hands with cold water first.
- Chill the mixture for half an hour then put the mixture thorough the fine blade of the grinder once more.
- Stuff the casings and twist them off into six-inch links.
- Parboil the links (without separating them) in gently simmering water for 20 minutes.
- Place the franks in a bowl of ice water and chill thoroughly.
- Remove, pat dry, and refrigerate.
- Because they are precooked, they can be refrigerated for up to a week or they can be frozen.
- Preparing the Casing.
- Snip off about four feet of casing.
- (Better too much than too little because any extra can be repacked in salt and used later.) Rinse the casing under cool running water to remove any salt clinging to it.
- Place it in a bowl of cool water and let it soak for about half an hour.
- While you're waiting for the casing to soak, you can begin preparing the meat as detailed above.
- After soaking, rinse the casing under cool running water.
- Slip one end of the casing over the faucet nozzle.
- Hold the casing firmly on the nozzle, and then turn on the cold water, gently at first, and then more forcefully.
- This procedure will flush out any salt in the casing and pinpoint any breaks.
- Should you find a break, simply snip out a small section of the casing.
- Place the casing in a bowl of water and add a splash of white vinegar.
- A tablespoon of vinegar per cup of water is sufficient.
- The vinegar softens the casing a bit more and makes it more transparent, which in turn makes your sausage more pleasing to the eye.
- Leave the casing in the water/vinegar solution until you are ready to use it.
- Rinse it well and drain before stuffing.
