RUNZA
Anyone from Nebraska should know this recipe. I got this particular one from the Minnesotans for Nebraska website. If you don't know what a Runza is, I suggest you either get on the next plane to Nebraska or make this recipe! Prep time differs on how you make your bread.

Steps:
- Thaw two loaves of frozen bread dough or make the equivalent amount using your favorite bread recipe.
- While dough thaws, make the filling.
- Brown the hamburger and drain, then return to pan.
- Add cabbage and onion and cook down.
- Salt and pepper to taste (1 tsp pepper recommended).
- Let dough rise, then punch down and roll a portion to 1/4" thickness.
- Cut into 4" x 8" pieces and add about 1/2 cup meat mixture to each.
- Fold dough pieces over and seal the edges, then place seam-side-down on a greased cookie sheet.
- Let rise 20-30 minutes, then bake in pre-heated 375 degree oven for 20 minutes or until brown.
- Call Nebraska natives not in attendance and gloat (taunting not advised).
CABBAGE BURGERS
This is a recipe created by Russian German immigrants. It is very popular in the Nebraska, South Dakota region where I am from. Cabbage and ground beef are encased in a neat little bread package.

- Preheat the oven to 375 degrees F (190 degrees C). Divide each loaf of frozen bread dough into 6 pieces, and roll into balls. Set aside.
- Crumble the ground beef into a large pot over medium heat. Cook and stir until evenly browned. Drain off grease. Add the water, cabbage, onion, and garlic. Cook over medium-low heat, stirring as needed, until the cabbage is soft. Season with salt and pepper to taste. I like to use more pepper than salt. Drain off any excess liquids, and set aside.
- On a lightly floured surface, roll the dough balls into 5 inch (approximate) squares. Place about 3/4 cup of the cabbage burger into the center, fold the dough over, and pinch to seal. Place on a baking sheet with the seam side down.
- Bake for 15 to 18 minutes in the preheated oven, or until golden brown. Remove from the oven, and brush with melted butter. Serve hot.

- Saute cabbage and onion in oil. Cover and steam for 30 minutes. Brown ground beef in a large pan, and drain well. Add cabbage, onion, sugar, vinegar, salt and pepper and cook for an additional 10 minutes. Flatten each Texas™ roll, or 2 dinner rolls into a 6-inch circle. Divide filling among 12 circles (about 1/3 cup). Place 1 tablespoon mozzarella cheese on top of filling. Pull edges around filling and pinch to close. Place on a large sprayed baking sheet, pinched side down. Brush tops with melted butter. Bake at 350°F 30-35 minutes. Servings: 12 Prep Time: 15 min (not including thaw time) Bake Time: 30-35 min

- Place 1-3/4 cups flour, sugar, yeast and salt in a large bowl. Heat the milk, water and shortening to 120°-130°. Pour over flour mixture; add the eggs. Beat with an electric mixer on low speed until blended. Beat 3 additional minutes on high. Stir in the remaining flour; knead until smooth and elastic, 6-8 minutes., Place dough in a greased bowl; cover and let rise in a warm place until doubled, about 1 hour., Meanwhile, in a large skillet, cook beef and onions over medium heat until meat is no longer pink; drain. Add the cabbage, seasoned salt, garlic powder and pepper; cook until cabbage is wilted., Punch dough down; divide into 12 portions and cover. Working with 1 piece at a time, roll into a 6-in. square. Place 3/4 cup meat mixture in the center of each square. Fold dough over filling, forming a rectangle. - Heat a large skillet over medium-high heat; cook and stir ground beef and onion until beef is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in cabbage and season with 1 teaspoon salt. Continue to cook and stir until cabbage is tender, about 20 more minutes. Set mixture aside to cool.
- Mix warm water and butter in a large bowl. Combine dry milk powder, sugar, 1 1/2 teaspoons salt, and yeast in another bowl; stir into butter mixture. Add egg and gradually stir in flour, 1/2 cup at a time, until dough is smooth.
- Roll dough out to 1/4-inch thick on a lightly floured surface; cut into 4-inch squares. Scoop beef mixture into each dough square. Bring corners of a dough square together at the top and pinch corners together to seal. Place on a baking sheet, seam side down. Repeat with remaining beef mixture and dough. Cover rolls with a damp cloth and allow to rise for 20 minutes.

- Thaw out frozen bread dough; cut each roll into 3 pieces and set aside. Brown beef and cabbage in a large skillet, seasoning with salt and pepper to taste.
- Preheat oven to 350 degrees F (175 degrees C).

Unique and tasty meal-buns may be frozen after cooking for great make-ahead lunch. Save prep time by purchasing pre-packaged shredded cabbage from your local produce market. Recipe is for four sandwiches-however, I make six smaller sandwiches and find them more enjoyable.

- Preheat oven to 350 degrees.
- In 10 inch skillet, brown beef over medium heat.
- Drain fat and add cabbage, onions, parsley, garlic, salt and pepper.
- Cook until cabbage is crisp/tender (5 minutes).
- Add cheese and ketchup.
- Remove from heat and set aside to cool.
- Divide each bread loaf into 4 equal pieces.
- Roll dough out on lightly floured surface into a 6 inch circle.
- Place 1/2 C of beef mixture into center of each circle.
- Pinch the edges of the dough together to enclose beef and form into bun shape.
- Seam side down, place filled bun on greased cookie sheet.
- In small bowl, mix egg and milk.
- Brush top of bun with egg mixture.
- Sprinkle top with a bit of kosher salt and cracked pepper if desired.
- Bake for 25-30 minutes or until browned.
- Serve with ketchup, mustard, barbecue sauce and relish if desired.
- TIP-buns can be frozen after cooking.
- To prepare frozen buns, remove from freezer-wrap in foil and place on cookie sheet and bake at 350 degrees for 55-60 minutes or until heated through.

CABBAGE-BEEF STUFFED BREAD BUNS (RUNZA)
I make this using my own runza bread dough (to be posted soon on this site) but using frozen thawed bread dough makes it much quicker and easier, make certain to thaw the frozen dough according to the directions on the package --- the recipe amounts stated will make 18 buns as that is what I always make, you could reduce the recipe if so desired but I would suggest to make the full amout they will be devoured quickly! the ground beef/cabbage filling may be made a day in advance, my family likes spicy so I add in cayenne pepper or dried chili flakes to the ground beef mixture, also you could add in some crumbled bacon pieces too, cooking time is for the buns only ---

Steps:
- Divide each loaf of the frozen bread dough into 6 even pieces (you will have 18 pieces).
- Roll each piece into balls; cover with a clean tea towel and set aside.
- Crumble the ground beef in a large pot over medium heat; cook stirring until no longer pink; drain all fat.
- Add in water or beef broth, cabbage, onion and garlic.
- Reduce the heat to medium-low and cook stirring occasionally until the cabbage is soft.
- Drain all liquid very well (important the you must drain very well!).
- Mix in the 1/2 cup Parmesan cheese (add 1/2 cup to start, adding in more later to taste if needed) seasoned salt, startind with 1 teaspoon seasoned salt and add in more to taste and lots black pepper; stir to combine well; set aside.
- On a lightly-floured board roll each piece of dough into 5-inch squares (does not have to measure exactly).
- Place about 3/4 cup of the cabbage mixture into the center of each square.
- Fold the dough over and pinch to seal.
- Place onto a greased baking sheet seam-side down.
- Bake at 375 degrees F for 15-18 minutes or until golden brown.
- Remove and brush each with melted butter.
- Serve hot or warm.

RUNZA BAKE
An easy to make version of the Runza. My mother gave me this recipe along with her homemade Runza recipe, and I find myself making this often because its so easy to make. I normally use only 1 pound of ground beef, though the recipe she gave me calls for two.

- Preheat oven to the temperature that is written on the tins of crescent rolls.
- In a skillet, brown the ground beef and onion, adding the salt and pepper to taste.
- Once ground beef is nearly browned, place the cabbage in the skillet and mix into the meat.
- Cover and let simmer for 20 minutes or until the cabbage is softened. Drain out grease. (For a healthier version, drain grease before placing the cabbage in).
- Roll out one tin of crescent rolls and spread onto the bottom of a lightly greased 9x13 pan.
- Take meat mixture and spread evenly across the layer of crescent rolls, then sprinkle the cheese over the top of the meat.
- Roll the last tin of crescent rolls over the top of the meat and cheese and spread evenly.
- Place pan in the oven and bake, using the time recommended by the tin of crescent rolls, or until golden brown. Then, enjoy!
RUNZA CABBAGE-BEEF SANDWICH
This is made from scratch. It was handed down to us by a family here in Lincoln, Nebraska. Our children ask for it when they come home for vacation and also ask for it when we go visit them. Its a lot of work, but worth it.

Steps:
- Shred cabbage and chop onions while meat is browning in a large pot.
- Add onions and cook until the meat looses its color.
- Then add cabbage, cover and simmer till cabbage is soft, stir often.
- Cool the meat and cabbage so it is easier to place in dough. Cool in frig.
- Soften yeast in water and add rest of ingredients and mix dough. Let rise until double in bulk. Punch down and let it rise again.
- Divide dough in half and roll it to about 3/8" thick.
- Cut into squares about 5" by 6 ". Place cabbage in center of square and bring corner together and pinch together to seal all seams.
- Place seam side down on a greased cookie sheet.
- Bake until golden brown at 425 degrees for about 12 minutes.
- These freeze well, after they cool!
