SUMMER ANYTIME CRISP CORN SALAD
This quick and easy salad is so tasty as a replacement for other salads at picnics, pitch-ins, and barbecues. No mayo to spoil, and goes together in a snap. I've left out the tomato and it's still great. In winter, I make this with hamburgers to remind us summer is not far away. I use super-sweet, sweet yellow and white, or Summer Crisp corn. If you use fresh sweet corn, be sure to blanch it first and then give it a bath in ice water to keep it crispy. Tasty ! Easily doubled -- this batch makes just enough for my husband and I.

- In a large pot of boiling salted water, cook the corn for 3 minutes until the starchiness is just gone. Drain and immerse it in ice water to stop the cooking and to set the color. When the corn is cool, cut the kernels off the cob, cutting close to the cob.
- Toss the kernels in a large bowl with the red onions, vinegar, olive oil, salt, and pepper. Just before serving, toss in the fresh basil. Taste for seasonings and serve cold or at room temperature.

CORNBREAD SALAD
A lady brought this to our home study group potluck and it was wonderful. She gave me the basics of what was in it and here if what I have come up with. Turned out really good. Cook time does not include the time it takes to cook bacon and the cornbread. I cooked the bacon in the microwave.

- Shuck corn and brush oil evenly on each ear, just enough so it doesn’t stick on the grille. Grill about 4 minutes and then roll to another surface until all sides have grill marks.
- Meanwhile, drain pickles on paper towels. This is a VERY important step because the pickles will continue to give off juice, and the salad will be soggy if the pickles aren’t drained before chopping.
