  • Put the cranberries in a small saucepan; add the honey and 1/3 cup water. Cook over medium heat, stirring occasionally, until the cranberries pop and the liquid thickens, about 8 minutes. Remove from the heat and let cool completely.
  • Toast the walnuts in a small dry skillet over medium heat, about 5 minutes. Transfer to a cutting board and let cool slightly, then roughly chop. Stir the olive oil and vinegar into the cooled cranberries. (Add more honey, 1 teaspoon at a time, if the vinaigrette is too tart.) Season with salt and pepper.
  • Toss the lettuce and watercress in a serving bowl; season with salt and pepper. Spoon the vinaigrette over the lettuce and top with the walnuts and herbs. Toss before serving.

Steps:

  • Dissolve gelatin in hot water, then add cold water. Cool mixture and set aside.
  • Wash and grind cranberries. Pare and chop apples (and oranges, if using) into small chunks.
  • Stir together the ground cranberries, chopped apples and oranges (or pineapple) nuts, and sugar.
  • Add to slightly thickened gelatin mixture; then pour into a mold and chill until salad is firm and holds its shape. Unmold onto salad greens.

  • In a blender, whisk egg white, mustard, lemon juice and red wine vinegar until frothy.
  • While blender is still running, slowly pour in the cranberry concentrate, allowing it to infuse gradually into the egg white mixture.
  • Mix the two oils together in a small bowl, and let it gradually stream into the blender, continuing to whisk until the dressing has emulsified, and has thickened.
  • Turn off the blender at this point, and pour dressing into a large bowl. Stir in the dill and add the salt, pepper and sugar to your liking. You might like yours sweeter or more tart than mine, so I'll leave the amounts up to you.

  • Start by making a simple syrup: dissolve the sugar in the water in a medium saucepan. Add vanilla beans and bring to a simmer.   • In a small saucepan, place berries, sugar and vinegars. Bring to a boil, turn down to a constant simmer and cook about 5 minutes- until berries start to pop. (If using frozen or dried berries, just time this for 5-6 minutes as berries will not pop.)

I came across this recipe in a local grocery store flyer a few years ago and it has easily become the most requested recipe by my friends and family. Its quick to make without a lot of preparation and it can be fun to change up the salad ingredients. I love it the way it is without any altering but I took it to our family Christmas dinner this year and instead of adding pears I used fresh mandarines and accidentally forgot the cheese - it was still a huge hit and not one bite left behind. I do prefer the flavour and the consistency of the dressing when refrigerated at least 5 hours as it will thicken up and allow the flavours to blend. I have also added one tbsp of lemon juice to regular milk instead of using buttermilk. Enjoy.

Steps:

  • Place raspberries in a blender; cover and process until pureed. Strain and discard seeds; set puree aside. , In a large saucepan, combine the sugar, cornstarch, celery seed, cinnamon and cloves. Stir in the cranberry juice, vinegar and reserved raspberry puree. Bring to a boil over medium heat; cook and stir for 1 minute or until thickened. Remove from the heat; cool. Cover and refrigerate., In a large salad bowl, combine the spinach, oranges, cranberries, onions, sunflower kernels, pecans and almonds. Drizzle with dressing; gently toss to coat. Refrigerate any leftover dressing.

Steps:

  • In a medium bowl, whisk together the gelatin mix and boiling water until gelatin is dissolved. Stir in the cold water. Transfer to a gelatin mold, or keep in a bowl; cover and refrigerate.
  • Place the oranges, lemon, apples, and cranberries into a bowl. Sprinkle the sugar over the top. Set aside so the fruit has time to bleed.
  • When the gelatin is partially set, stir in the fruit. Chill until set, preferably overnight. It becomes tastier with age!
