- For sauce: Drain whole tomatoes, reserving 1/4 cup juice.
- Chop tomatoes and set aside.
- Cook onion and garlic in olive oil in a large skillet over medium heat, stirring constantly, until tender.
- Stir in chopped tomato, 1/4 cup reserved juice, bay leaves, sugar and basil; bring to a boil.
- Reduce heat, and simmer, stirring often, 3-5 minutes or until thickened; remove from heat.
- Remove and discard bay leaves; stir in sun-dried tomatoes.
- Cover and chill at least 2 hours.
- For terrine: Beat cream cheese and butter at medium speed with mixer until creamy.
- Add parmesan and pesto; beat until smooth.
- Set mixture aside.
- Line a 3-cup bowl or mold with plastic wrap, allowing edges to overhang 6-7 inches.
- Diagonally cut 5 slices Muenster cheese in half; arrange cheese triangles in bowl, slightly overlapping to line bowl.
- Spread half of cream cheese mixture over cheese; top with half of basil-tomato sauce.
- Cut 2 slices Muenster cheese in half crosswise; arrange cheese rectangles over tomato mixture.
- Repeat with remaining cream cheese mixture, basil-tomato sauce and 2 slices Muenster cheese cut into rectangles.
- Fold plastic wrap over layers, sealing securely; place a heavy object on top to compact layers.
- Chill at least 8 hours or up to 3 days.
- To serve: Invert terrine onto a serving platter, peel off plastic wrap.

ASPARAGUS TERRINE

- Spritz a 9 by 5-inch loaf pan with water and line it with plastic wrap, leaving enough excess to fold over the top when filled.
- Combine the gelatin and water in a 1-quart saucepan and set aside to bloom for 5 minutes.
- Put the quark, cream cheese, anchovies, chives, and black pepper in the bowl of a food processor and process for 1 minute. Stop and scrape down the sides of the bowl.
- Put the bloomed gelatin over low heat until melted, about 1 minute. Remove from the heat. With the food processor running, slowly pour the melted gelatin into the cheese mixture and process for 30 seconds.
- Sprinkle the parsley evenly across the bottom of the prepared loaf pan. Pour 1/4 of the cheese mixture over the parsley. Top with 1/3 of the asparagus in a single layer, alternating direction of tips. Repeat with remaining cheese mixture and asparagus, ending with the cheese mixture. Fold the excess plastic wrap over the filling. Set a second loaf pan on top of the plastic wrap and press down to compact. Refrigerate until firm, about 2 hours.
- Serve chilled, cut into 1-inch slices, along with crackers or toasted French bread slices.
- To store, wrap in plastic wrap and refrigerate for up to 2 days.
- Pour or spritz the water onto 4 paper towels. Spread out the paper towels and lay the asparagus on top of the dampened towels. Sprinkle with the salt. Roll up the asparagus in the dampened towels. Lay the bundle, seam side down, in the microwave. Microwave on high until the asparagus is just crisp tender, about 3 to 4 minutes. Remove from the microwave using tongs and carefully unwrap.
GORGONZOLA, FIG AND PECAN CHEESE TERRINE

- Put the 1/2 cup quartered figs into a small saucepan along with the red wine and thyme. Let the mixture simmer over low heat for 15 minutes. Drain the figs, discard the thyme and wine and set the figs aside to cool.
- Put the cream cheese and butter into the bowl of a standing mixer and, using the paddle attachment, cream the mixture on medium until well blended, about 1 minute. Add the Gorgonzola, brandy and salt and beat 1 more minute. Take care not to overbeat or it won't set properly.
- Spray a 1 quart loaf pan with cooking spray and line the inside with plastic wrap. Spoon half of the cheese mixture into the pan and spread it evenly, making sure to get into the corners. Scatter the figs, pecans and chopped parsley on top evenly and cover with the remaining cheese. Give the pan a few sharp raps on a flat surface to settle the terrine, cover the top with plastic wrap and refrigerate for at least 6 hours.
- To remove the terrine from the pan, turn upside down on a flat surface and pull 1 end of the plastic wrap down. The terrine will slip out of the pan onto the top piece of plastic wrap. Slice and fan out on a platter garnished with greens. Garnish with the remaining 1/2 cup of figs, pecans and thyme. Serve with crackers.
FOUR CHEESE TERRINE
This is easy to make and a big hit as a starter or with crackers as nibbles with drinks.

Steps:
- Combine the first three ingredients in a small bowl and let them soak for about 5 mins. Then place the bowl over a saucepan with water and allow the gelatine to dissolve over a low heat. It will become transparent
- Put some cling film across two sides and the bottom of the loaf tin.
- Combine the cottage cheese and mayonnaise. Whip together until smooth
- Cut the hard cheeses into small cubes and mix in with the cottage cheese mixture.
- Whip the cream until is has thickened and forms soft peaks
- Add the gelatine mixture to the cheese mixture and stir well
- Add in the cream and the chopped herbs combining well.
- Pour into the loaf tin and allow to set in the fridge. It may take an hour or two.
- Invert the loaf tin onto a plate and ease the terrine out using the cling film.
PESTO-CREAM CHEESE TERRINE (SPREAD)
Plan ahead this must be chilled for a minimum of 12-24 hours before removing from the pan and serving, this is an amazing spread to serve at a get together with crackers. Make certain to overlap the plastic wrap in the loaf pan to allow easy removal of the spread. This loaf can be made omitting the provolone cheese slices if desired and made in a 8 x 4-inch loaf pan and line the bottom of the pan with pine nuts. Servings is only estimated.

- Line the bottom of a 9 x 5-inch loaf pan with plastic wrap, but allow about 6 inches to hang over the edges of the pan for easy removal.
- Coat the plastic wrap with cooking spray.
- Line the bottom and sides of the pan with the provolone cheese slices (cutting to fit if necessary).
- Process the mozzarella cheese with all remaining ingredients in a processor until smooth.
- Spoon the mixture into the prepared loaf pan, pressing down with back of the spoon to pack down the mixture.
- Fold the excess overhang of plastic wrap over the mixture.
- Chill for minimum 12 hours.
- Invert chilled loaf onto a serving dish and discard the plastic wrap.
- Serve with crackers.

BLUE CHEESE AND SPICED WALNUT TERRINE

- Mix salt, cumin, cardamom and pepper in medium bowl. Heat oil in heavy medium skillet over medium heat. Add walnuts and sauté until light brown, about 5 minutes. Sprinkle sugar over nuts and sauté until sugar melts and turns pale amber, about 4 minutes. Transfer nut mixture to bowl with spices; toss to coat well. Let cool. Coarsely chop nuts.
- Lightly oil 8 1/2 x 2 1/2-inch loaf pan. Line pan with plastic wrap so that plastic extends over edges. Combine 12 ounces blue cheese, goat cheese, cream cheese and butter in processor and blend until smooth. Transfer mixture to large bowl. Stir in green onions and brandy. Mix parsley and chives in small bowl.
- Spoon 1/3 of cheese mixture into bottom of lined pan, spreading evenly. Sprinkle 1/3 of remaining crumbled blue cheese evenly over cheese mixture. Sprinkle 1/3 of nuts over blue cheese. Sprinkle with 1 tablespoon of herb mixture. Repeat layering. Spread remaining cheese mixture evenly over top. Fold plastic over cheese to cover. Refrigerate overnight. Cover remaining blue cheese and herbs separately and refrigerate. Store remaining nuts at room temperature.
- Line platter with lettuce leaves. Unfold plastic from cheese. Carefully invert mold onto platter; remove pan and plastic. Sprinkle terrine with remaining blue cheese, nuts and herbs.
CREAM CHEESE TERRINE

- Blend one package cream cheese with garlic and herbes de Provence, if using; spread into a plastic wrap-lined 8"x4" loaf pan. Sprinkle with basil; chill for 15 minutes. Mix second package cream cheese with tomatoes and onion; spread over first layer. Sprinkle with parsley; chill for 15 minutes. Blend third package cream cheese with blue cheese and almonds; spread over tomato layer. Chill for 15 minutes. Combine remaining package cream cheese with pesto; spread over blue cheese layer. Cover and chill for at least one hour. To serve, gently pull up on plastic wrap; invert onto a serving platter and peel away plastic wrap. Serve with crackers.
