CUBAN PORK CHOPS WITH MOJO
Steps:
- In a gallon-sized resealable plastic bag, combine 1 cup orange juice, 1/2 cup lime juice, and vinegar. Add pork and let it sit and marinate for about 1 hour in refrigerator.
- In a small mixing bowl, combine all dried spices. Pat the pork chops dry with a paper towel and rub with the dry spice mixture.
- Heat oil in a large saute pan over high heat. Place the pork chops in the pan and sear on 1 side until brown. Flip over and turn the heat down to medium-low. Add onion and saute for 2 minutes. Then add the garlic and continue to cook until garlic begins to brown. Pour in the remaining 1/4 cup orange juice, 1/4 cup lime juice, and white wine. Simmer until the liquid is slightly reduced and begins to thicken. The chops should be cooked through.
- Remove the chops from pan and put on a warm plate. Continue to reduce juices in pan by half. Pour over the chops and serve immediately.
- Garnish with watercress, tomatoes and avocado.
BUTTERFLIED CUBAN STYLE PORK CHOPS
Steps:
- Heat the grill to high.
- Whisk together 1/2 cup orange juice, 1/4 cup lime juice, 3 tablespoons oregano, the garlic, cumin, and canola oil in a large baking dish. Add the pork and turn to coat. Cover and let marinate for at least 15 minutes and up to 2 hours in the refrigerator.
- Remove the pork from the marinade and pat dry. Place the chops on a flat surface, cut-side up and season with salt and pepper. Place 1 slice of cheese, 2 slices of ham, a few slices of pickle and another slice of cheese on 1 half of the chop. Fold over brush the top with oil and season with salt and pepper. Repeat with remaining ingredients.
- Place the chops on the grill, oil side down and grill until golden brown, 3 to 4 minutes. Flip the chops over and continue grilling until the bottom is golden brown and the cheese has melted, 2 to 3 minutes longer.
- Whisk the remaining orange and lime juices, oregano, and the cilantro with the olive oil and salt and pepper, to taste. Spoon over the chops and serve.
MOJO PORK WITH SWEET PLANTAINS

- Preheat the broiler. Puree the cilantro, mint, orange juice, lime juice, garlic, jalapeno, cumin, 1 teaspoon salt and a few grinds of pepper in a blender. Transfer 1/4 cup of the mojo sauce to a large bowl. Season the pork chops with salt and pepper and add to the bowl; toss to coat and set aside.
- Bring 3/4 cup water, the rice, beans and 1/2 cup of the remaining mojo sauce to a boil in a medium saucepan over high heat (reserve the remaining mojo sauce for topping). Cover, reduce the heat to low and cook until the liquid is absorbed and the rice is tender, about 20 minutes. Set aside and cover to keep warm.
- Remove the pork chops from the marinade and arrange on a broiler pan (or a rack set on a rimmed baking sheet). Add the plantain halves cut-side up to the pan. Broil until the pork and plantains are golden and the pork is cooked through, about 7 minutes.
- Top the pork with the remaining mojo sauce and cilantro. Serve with the rice, plantains and lime wedges.

- Mix mustard, lime juice and adobo seasoning. Lightly pound pork chops with a meat mallet to 1/2-in. thickness; spread both sides with mustard mixture. Refrigerate, covered, 3-4 hours., Grill pork, covered, over medium heat 3 minutes. Turn pork and top with ham; grill 2 minutes longer. CUBAN SANDWICH WITH PLANTAIN CHIPS

- For the sandwich: Preheat the oven to 350 degrees F. Have the pork at room temperature. Season it with salt and pepper. Put the roast into a baking pan and roast until the internal temperature reaches 150 degrees F, 40 to 45 minutes. Cover the pork with foil and let it rest for 15 minutes. If not using right away, the roast can be wrapped and refrigerated for up to 2 days. When you are ready to make the sandwich, thinly slice about three-quarters of the pork roast (reserve the remaining one-quarter for Round 2 Recipe Black Bean and Pork Stew).
- Heat a grill pan over medium heat. Spread a thin layer of mustard on both sides of the bread pieces. Place 2 slices ham on the bottom half of each. Top with the sliced pork roast, then the pickles, and then the Swiss cheese. Place the top half of the baguette on top. Brush the grill with canola oil and place the sandwiches, cheese side down, onto the grill. Set a baking sheet on top of the sandwich and weigh it down with a heavy skillet or pot. Cook until the bottom is crisp and the cheese is starting to melt, 4 to 5 minutes. Flip the sandwich over, replace the baking sheet and weight, and cook another 3 to 4 minutes.
- For the plantain chips: In a 2-inch deep cast iron skillet, heat the oil to 350 degrees F.
- Peel the plantains by slicing off about 1-inch from the top and bottom of each. With a paring knife, make a slice on each side the length of the plantain, making sure to go just deep enough to cut through the skin but not cut into the flesh. Peel the skin off to expose the flesh. If you have trouble peeling the skin then cut it off in strips with the knife. Cut each plantain in half and, using the slicing side of a box grater, slice the halves into thin chips.
- Cook the plantain slices in batches until they crispy, 3 to 4 minutes. Drain on brown paper or paper towels and season with salt.

- Brown lightly salted pork chops in oil at medium heat for 2 or 3 minutes.
- Turn chops, adding garlic, lime juice and water to the skillet.
- Cook uncovered turning once or twice till done and syrupy juices remain (6-8 min).

CUBAN SPICED PORK CHOPS
This is the perfect recipe for those who love the flavors of a classic Cuban pork roast but are cooking in small quantities. Typical of Cuban fare, these are full of tropical flavors but not spicy. The garlic and lime pair beautifully in a fragrant marinade. Though you can marinade as briefly as an hour, for best results let the pork soak up to 6-8 hours. (Don't marinade overnight as the citrus cooks the pork over longer periods). Serve these with my Almost Fried Plantains #134349 for a delightful healthy meal.

- Trim excess fat from pork chops. Use a knife to cut shallow cross-hatch marks over both surfacesof the chops.
- Mix all remaining ingredients together in a resealable bag or non-reactive container. Add the chops and place in the refrigerator. Marinate at least an hour.
