Curried Chickpeas image

Steps:

  • In a saute pan, warm the oil over medium heat, and sweat the onion until just translucent. Add the carrot and garlic, and stir. After the garlic has browned slightly, sprinkle over the curry powder, and stir. Add the white wine to deglaze the pan. Add the tomatoes and chickpeas to the pan, then stir.
  • Pour in the chicken stock, and bring the mixture to a simmer. Cover the pan with a lid, and cook for 10 minutes. Season the chickpeas with the sugar, and salt, to taste. Remove the pan from the heat and finish the chickpeas by stirring in the cold butter.

Steps:

  • In a large skillet, heat 1 tablespoon of oil and butter.
  • When hot, saute onions and garlic till soft, remove onions and garlic.
  • Add more oil if needed and brown 4 boneless chicken breast.
  • Add to chicken cream of mushroom soup and 1/2-cup water.
  • Return onions and spices back to pan with chicken mixture; cover and simmer until done.
  • If you'd like you can top with Gourmet crispy fried onions (Chirag) Found in the Indian food section.

Steps:

  • In a large frying pan, heat the butter and saute the onion, garlic, and ginger until the onion is soft, but not brown. Add the curry powder and chiles, stirring so that they do not stick or burn. Add the vinegar. There should be enough to make a smooth paste.(You may need up to 1/4 cup more vinegar.) Cover the chicken pieces with the paste and place them in a covered bowl in the refrigerator. Allow the chicken pieces to marinate for at least 2 hours. When ready to cook, place the chicken pieces in a large frying pan and add enough water to reconstitute the paste and prevent scorching. Cover and cook over low heat for 30 minutes. (You may find that you will have to add more water to prevent scorching.) After 30 minutes, add the potatoes, cover and continue to cook for an additional 15 minutes, or until the potatoes and chicken are done.

Steps:

  • Combine first 10 ingredients in a small sauce pan.
  • Bring to boil, stirring constantly.
  • Remove from heat and set aside.
  • Place washed chicken breast side up in a shallow roasting pan.
  • Brush skin with oil or melted butter.
  • (if using duck, prick skin all over to allow fat to drain).
  • Roast chicken, uncovered for 1 1/4 to 1 1/2 hours (duck, 1 3/4 to 2 1/4 hours- goose, 2 1/4 to 2 3/4 hours).
  • In the meantime, cook potatoes and carrots in boiling salted water until nearly done.
  • Drain.
  • The last 20 minutes, drain the fat from the roasting pan of chicken.
  • Arrange vegetables and the uncooked apples around the bird.
  • Spoon honey mixture over chicken, vegetables and apples.
  • Roast 20 minutes longer or until a meat thermometer registers 185 degrees and vegetables and apples are tender.
  • Baste occasionally with honey mixture during roasting and again before serving.

Steps:

  • In a large, heavy skillet, heat 2 tablespoons of the oil over medium-high heat. Add the meat or fish in a single layer. Cook for about 5 minutes on each side or until browned; transfer to a plate and set aside.
  • Add the pears and cook, stirring, for about 2 minutes; remove from the skillet.
  • Add the onion and the remaining oil to the skillet and cook until soft, stirring occasionally, about 2 minutes. Stir in the curry powder and flour. Add the broth and ketchup and heat to boiling.
  • Return the meat or fish and pears to the pan and coat with the sauce. Reduce heat to medium-low and simmer, covered, 15 to 20 minutes for the chicken, 25 to 30 minutes for the pork, or 10 minutes for the salmon. Season with salt and pepper to taste and divide among 4 plates.

Sweet and Spicy Curried Chicken image

Steps:

  • Heat butter and oil in a large skillet. When hot, add chicken and saute (in a couple of batches, if necessary, to avoid crowding) over medium to high heat for a total of 6 to 7 minutes, until brown on all sides. Transfer chicken to a large casserole or Dutch oven and discard all but 2 to 3 tablespoons of the accumulated fat in the skillet.
  • To the hot fat in the skillet add onions and saute for 2 to 3 minutes over medium heat, stirring, then add flour, curry powder, cumin powder, cayenne pepper, black pepper, salt and garlica and mix well with the onions. Add the water, stir, bring to a boil and pour mixture over chicken.

Steps:

  • Heat ghee in a large skillet, preferably cast iron, over medium-high. Season chicken with salt and pepper and cook, turning occasionally, until skin is golden brown and crisp, 8-10 minutes. Transfer to a plate (it will not be cooked through).
  • Add onions to same skillet and cook, stirring occasionally, until softened and golden, 6-8 minutes. Add garlic, lemongrass (if using), vadouvan, and cayenne and cook, stirring often, until fragrant, about 2 minutes. Add broth, coconut milk, lime juice, and 1/2 cup cilantro, then return chicken to skillet and gently push down into liquid. Bring to a boil, then reduce heat and simmer, uncovered, until chicken is tender and cooked through and sauce is thickened, 40-45 minutes. Be sure to turn chicken a couple of times while it's cooking so all sides get exposed to the curry sauce.
  • Just before chicken is done, cook noodles according to package directions. Rinse noodles under warm water, then toss in a large bowl with a little bit of the curry sauce. This will help to prevent them from sticking.
  • Divide noodles among shallow bowls. Place drumsticks on top and ladle curry sauce over. Top with crispy shallots and remaining 1/2 cup cilantro. Serve with lime wedges for squeezing over.

  • Heat the oil in a heavy-bottomed pan. Fry the cumin, chillies, clove, cinnamon and bay leaf together until the cumin starts to crackle. Tip in the onion, turmeric and a pinch of salt. Cook for 2 mins until starting to soften, then add the garlic.
  • Continue cooking 4-5 mins until the onion is soft, then add chickpeas, paprika, black pepper and ground coriander. Give everything a good stir so the chickpeas are well coated in the spices.
  • Add the tomatoes and 2 tbsp water. Cook on a medium heat until tomatoes are soft and the sauce is thick and pulpy. Take off the heat and sprinkle on the coriander.

Steps:

  • Combine 1 1/2 cups water with rice in heavy-bottomed pot. Bring to boil, reduce heat, cover, and simmer over low heat, cooking a total of 17 minutes, until water has evaporated and rice is cooked.
  • Meanwhile, wash, dry and cut the chicken into small chunks.
  • Heat the oil in nonstick skillet and cook the chicken until it begins to turn golden. Remove and set aside.
  • Meanwhile, chop the onion, mince the garlic, and saute them in the pan with the cumin, fennel, coriander, turmeric, ginger and pepper until the onion begins to soften.

I found this in a newspaper years ago. It is tasty & quite fragrant. The curry will permeate any fabric nearby, so don't leave your laundry in the kitchen! If I don't have any shallot, I substitute about 3/4c onion, and I've used less or more celery and carrot depending on what I have on hand. We like the stew with crusty bread and a dollop of sour cream; while my neighbor prefers hers with rice.

Steps:

  • In a large non-stick saute pan, sear chicken breasts on each side for 1 minute; set aside.
  • In the same pan, saute shallot, celery and carrot in 2t oil on low for about 5 minutes or until softened.
  • Sprinkle with curry powder; mix well.
  • Slowly add beer and stir as curry begins to thicken.
  • Remove from heat and set aside.
  • In a 8qt stockpot, saute garlic in remaining 1t olive oil over med heat for 1 minute.
  • Add chicken, bay leaves& tomatoes; cover& simmer for 20 minutes, stirring occasionally.
  • Add curry mixture to the chicken and tomatoes, along with the chile pepper, parsley, and peanut butter/water.
  • When all is well combined, add stock and simmer, covered, for 30 minutes.
  • Remove bay leaves.
  • Remove chicken breasts, cool (enough so that it can be easily removed from the bone) and dice the meat.
  • Return chicken to stockpot.
  • If desired, add sugar and cilantro.

  • Pour flour into a wide, shallow bowl. Dredge chicken pieces in flour to coat completely.

Steps:

  • Place the chicken pieces in a bowl and toss with the lime juice. Drain, rinse the chicken with cold water, and drain again. Remove the chicken from the bowl and pat dry with paper towels.
  • Place the chicken in another bowl with the Green Seasoning, salt, chili pepper, and garlic. Toss well to coat and refrigerate for at least 30 minutes but ideally overnight.
  • Combine the curry powder with just enough water to form a thick paste. Heat the oil in a heavy-bottomed pot. Add the curry paste and onion. Cook, stirring constantly, for 1 to 2 minutes over medium-low heat-do not allow the curry to scorch. Add the chicken pieces and stir well to coat. Add the stock or water, cover, and simmer for 30 to 40 minutes, or until the chicken is tender.

Steps:

  • Make the crust: In a food processor, pulse together flour, sugar, and salt. Add butter and pulse until mixture resembles coarse meal, with a few pea-size pieces of butter remaining. Sprinkle with 3 tablespoons ice water. Pulse until dough is crumbly but holds together when squeezed (if necessary, add up to 2 tablespoons ice water); do not overmix. Form dough into a disk, wrap tightly in plastic, and refrigerate until firm, 1 hour or overnight (or freeze, up to 1 month).
  • Preheat oven to 375 degrees. Make the filling: In a large pot, melt butter over medium-high. Add onion and cauliflower and cook until softened, 8 minutes. Add garlic and curry powder and cook until fragrant, 30 seconds. Add flour and stir to coat vegetables. Slowly add broth, whisking constantly until sauce is smooth. Bring to a boil, reduce heat, and simmer until thickened, 5 to 7 minutes. Stir in green beans. Season with salt and pepper, then stir in chicken. Pour filling into a 2-quart baking dish.
  • On a floured work surface, roll out dough to 1/8-inch thickness. Place dough over dish and fold overhang inward while pinching to crimp edge. Cut vents in dough. Place dish on a rimmed baking sheet and bake until crust is golden brown and filling is bubbling around edge, 45 to 50 minutes. Let cool 15 minutes before serving.

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Arrange the chicken pieces in a single layer in a 9x13-inch baking dish. Season the chicken liberally with salt, pepper, and the paprika; set aside.
  • Melt the butter in a skillet over medium heat. Add the apple and onion to the melted butter, season with the curry powder, and cook and stir until the apple and onion are tender, 7 to 10 minutes. Stir the mushroom soup and half-and-half into the mixture until completely combined; spoon over the chicken pieces.
  • Bake in the preheated oven until no longer pink at the bone and the juices run clear, about 75 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C).
