Steps:
- In a medium bowl, mix together the ground beef, chorizo, onion powder, cumin and 2 teaspoons each salt and pepper. Form the mixture into palm-size balls.
- Heat a griddle or large skillet over medium-high heat. Place the balls on the griddle and smash with a spatula or the back of a spoon. Cook, flipping once, until cooked through. Divide the Cheddar and queso blanco among the burgers and let melt. Remove the burgers to a plate.
- Meanwhile, combine the mayonnaise, ketchup and lime zest and juice in a bowl; mix to blend. Add cumin, salt and pepper to taste.
- Toast the slider buns on the griddle. Serve the burgers on the buns, topped with some rosada sauce.

- Combine beans, 2 tablespoons of the chili peppers, onion and 3/4 salt.
- Add beef and mix well.
- Form into 8- 5 inch patties.
- Cut cheese slices in half.
- Place 1/2 cheese slice on each beef patty.
- Fold to seal in the cheese, forming a semicircle.
- Grill or fry 5 to 6 minutes.
- Turn and grill or fry 4 to 5 minutes more or until done.
- Serve burgers in warmed tortillas.
- Add lettuce, chopped tomatoe, salsa and remaining chilies as desired.

- Burgers.
- Empty the ground beef into a bowl. Add taco meat and mix together (not too much or the meat will get tough). Separate into 4-6 burgers.
- Grill burgers until almost done.
- Wrap burgers in the tortillas and put back onto the grill until tortillas are golden brown.
- Serve with guacamole, salsa, and sour cream.
- Guacamole.
- Mash avocado to desired consistency.
- Add all other ingredients and mix together.

EASY MEXICAN PORK BURRITOS
Pork butt roast and taco or burrito seasoning are a combination to die for! This recipe originally came from my Aunt Pennie. I've tweaked it to our liking though. My whole family loves these! When we have friends over for dinner, this is the perfect meal to prepare. I usually make about 20-24 burritos from one batch of filling. Serve with lettuce, tomato, green onion, sour cream, salsa, avocado, black olives, and Cheddar cheese, if desired.

- Bring pork shoulder roast, onion, garlic, and 1 package taco seasoning to a boil in a large pot with enough water to cover. Reduce heat to medium-low and simmer until tender and no longer pink in the center, 2 to 3 hours. Check water level every 45 minutes, adding more as needed. Reserve about 1 cup cooking liquid.
- Shred pork with a fork, discarding excess fat and bone. Stir in tomatoes, refried beans, green chiles, and remaining package of taco seasoning. If the mixture is too dry, add reserved cooking liquid.
- Spread pork mixture evenly down the center of each tortilla; sprinkle with Cheddar cheese. Fold bottom and top edges of each tortilla over filling; roll sides up to enclose filling completely.
- Heat 2 tablespoons vegetable oil a large skillet over medium heat; fry burritos in batches, seam sides down, until tortillas are golden, about 2 minutes per side. Drain fried burritos on a paper towel-lined plate.

- Preheat oven to 375°. In a small bowl, mix enchilada sauce and salsa verde., In a large skillet, cook beef over medium heat until no longer pink, 8-10 minutes, breaking into crumbles; drain.
