GARBANZO BEAN TOMATO SALAD

Garbanzo beans, sliced tomatoes and onion are chilled with a no-fuss dressing in this change-of-pace salad that comes from Barbara Carbee's kitchen. The Brooksville, Florida reader tosses together the refreshing medley right before serving.

Garbanzo Bean Tomato Salad image

Steps:

  • In a bowl, combine the oil, vinegar, 1/2 teaspoon salt and 1/8 teaspoon pepper. Add beans; toss to coat. Place tomatoes in a serving bowl. Top with onion. Sprinkle with basil and remaining salt and pepper. Top with bean mixture. Cover and refrigerate for at least 1 hour. Toss just before serving.

Tomato and Red Onion Salad with Lime-Cilantro Dressing image

Steps:

  • Place the lime juice, cilantro, and hot sauce in food processor and add a little salt and pepper. Turn processor on and stream in extra-virgin olive oil. Taste dressing and adjust seasonings. Pour dressing into a bowl and add onions and tomatoes. Toss gently and coat in dressing. Let stand 5 to 10 minutes and serve.

Tomato Salad With Cucumber and Ginger image

Steps:

  • Create stripes on the exterior of the cucumbers by running the tines of a fork along the length of the skin. Halve the cucumbers lengthwise, then cut crosswise into 1/2-inch pieces. Transfer to a colander and toss with 1 teaspoon salt and 1 teaspoon sugar.
  • Meanwhile, make the dressing: In a large bowl, whisk together the lime zest and juice, fish sauce, coconut oil, chile, garlic and the remaining 2 teaspoons sugar.

  • Drain beans into colander and rinse until no foaming remains. Let drain well. Mix dressing ingredients, then put beans and dressing into a plastic container with a snap-on lid and shake a few times. Let beans marinate in dressing one hour or longer. Dice tomatoes, place in colander with a small amount of salt and let tomatoes drain 10 minutes while you dice onions and chop cilantro.   • Drain beans into colander and rinse until water runs clear. Allow to drain well.
  • Whisk together dressing ingredients.
  • Put garbonzos and dressing into a sealable container. Shake a few times to distribute marinade. Allow beans to marinate in dressing one hour or longer.
  • In the meantime, dice the tomatoes, place in colander with a small amount of salt and let tomatoes drain 10 minutes. If using avocado, peel and dice the avocado and toss it with 2 teaspoons of lime juice.
  • Slice green onions and chop cilantro.
