Steps:

  • In a large bowl, combine the flours, sugar, baking powder, cinnamon, baking soda and salt. In another bowl, whisk the egg, apple juice, applesauce and oil until smooth. Stir into dry ingredients just until moistened. Fold in pecans. , Pour into 2 greased 8x4-in. loaf pans. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks.

Grandma Carr made quick breads and enjoyed them, especially for breakfast, year round. The flavor depended on what she had on hand but all of them were good! Here's her applesauce version.

Grandma's Applesauce Bread image

Steps:

  • Pre-heat oven to 350 degrees. Grease an 8 by 4 inch loaf pan. Put flour, brown sugar, cinnamon, baking powder, baking soda and salt in the bowl of a mixer and beat on low just to combine.
  • Add the applesauce and egg. Mix briefly to combine but do not mix for more than a minute or so. Stir in the nuts by hand. Pour into the prepared loaf pan.
  • Bake for 45 - 50 minutes at 350 degrees. Cool in pan on a rack for 20 minutes, then remove from pan and let cool completely.
  • NOTE: I recently made this recipe with blueberry flavored applesauce and it was awesome. I plan to try the peach or raspberry flavors, too. :)

  • Cream together butter and sugar.
  • Add eggs and vanilla.
  • Dust raisins in cocoa and set aside.
  • Mix in dry ingredients and applesauce.

  • Preheat oven to 350°. Coat a 13x9-in. baking pan with cooking spray., In a large bowl, beat sugar, eggs, applesauce, oil and vanilla until well blended.   • Soak raisins in coffee until plump. Do not drain.
  • Cream together the shortening, sugar and eggs. Blend in molasses and vanilla.
  • In a large bowl mix together the cinnamon, nutmeg, cloves, ginger, flour, baking soda, and salt. Make a well in the center of the bowl.
  • Add the liquid ingredients to the well in the dry ingredients. Stir in coffee with raisins and nuts. Pour batter into a greased 9x5 inch loaf pan.

  • Bag the bananas and seal the baggie, getting as much air out as possible. Then, using your hands, just start squishing and squashing, mashing the bananas to a pulp. "Smoosh" the bananas out of the baggie and into the Bread Machine's Pan.
  • Put about a 1/4 cup of the Bread Flour in a bowl and stir the Blueberries around in it. This helps keep the Blueberries from clumping together in the dough.

  • Preheat the oven to 300 degrees F (150 degrees C). Grease a 9 inch tube pan and one 9x5 inch loaf pan.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  • Whisk the egg and milk together in a large bowl, and stir in the croutons. Allow the croutons to soak up the milk mixture for about 2 minutes. Lightly stir in the applesauce, onion, garlic, Cheddar cheese, and salt and pepper, and mix in ground beef with your hands until thoroughly combined. Form the meat mixture into 1 1/2-inch balls, and place into the prepared baking dish. In the same bowl, whisk together the cream of celery soup with evaporated milk. Pour the sauce over the meatballs.

Steps:

  • Prepare pastry for 2 crust pie shell, using your favorite recipe for pie shells.
  • Roll out 2 balls of dough until they measure large enough to fit your pie pan.
  • Line bottom of 8" pie pan with one of the rolled out pastry pieces.
  • Set the other rolled-out dough aside for a bit.
  • Bake the shell for 10 to 15 minutes at 375 degrees; set aside.
  • In a mixing bowl, combine beaten eggs, applesauce, sugar and seasonings.
  • Pour mixture into 8" prepared pie shell.
  • Add top pastry to pie and seal edges.
  • With tines of a fork, prick holes on top of pie shell to vent.
  • Bake at 450 degrees for 10 minutes, then turn oven down to 350 degrees and continue baking 30 more minutes.
  • Note: If you like a more custard-y pie, try adding 1/2 to 1 cup of milk to the above ingredients before pouring into the pieshell (use a 9" shell in this case).

Steps:

  • Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. Select cycle; press Start. Let the dough mix for 3 to 5 minutes, until all ingredients are thoroughly combined. If necessary, use a rubber spatula to push the dough from the sides of the bread pan. After 3 to 5 minutes have passed on the clock display, press Stop. Smooth out the top of the loaf with the rubber spatula. Select Bake setting and press Start.
  • To test the bread for doneness, insert a toothpick into the center top. Remove the toothpick. If the bread is done, the toothpick will come out clean. If there is dough on the toothpick, reset the machine to Bake and continue an additional 10 to 15 minutes. Test again with toothpick to assure the bread is completely baked. Remove the pan from the machine but allow the bread to remain in the pan for 10 minutes before removing the bread and placing on a wire rack to cool.

Steps:

  • Put raisins in a bowl. Pour boiling water over raisins; soak until raisins have flavored the water, about 20 minutes. Drain raisins, reserving the water. Discard raisins.
  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan with butter.
  • Bring reserved water to a boil in a small saucepan. Measure 3/4 cup boiling water into a bowl. Stir baking soda into water.
  • Put dates and prunes in a large bowl. Pour baking soda-water over dates and prunes; add unsalted butter and stir until melted. Stir sugar and vanilla extract into the fruit mixture; let cool to room temperature.
  • Stir egg into the fruit mixture to evenly coat. Mix flour and salt together in a small bowl; add to fruit mixture and stir. Fold walnuts into the mixture and pour into the prepared loaf pan.
