GRANNY SMITH APPLE CAKE

Slightly modified version of a recipe in Everyday Food magazine. This cake is SO good, especially while it's still warm (or reheated). Great for breakfast. Or topped with whipped cream or vanilla ice cream. I choose Granny Smith apples for their tartness and because they hold their shape after baking. The apples come out completely soft after baking. I love the tartness of the apples mixed with the sweetness of the cake. Optional: Add 1/2 cup chopped walnuts if desired. Note: The original recipe called for 1/2c of butter, but I reduced that to 1/4 and added in 1/4 applesauce to lower the fat in the recipe. You won't even miss the extra butter at all.

Granny Smith Apple Cake image

Steps:

  • Preheat oven to 350. Butter a 9 x 13 inch baking pan, set aside.
  • In a large bowl, whisk together flour, sugars, baking soda, salt, cinnamon, ginger, and nutmeg.
  • Add the apples, butter, applesauce, and eggs; stir just till combined. Batter will be VERY chunky, mostly apples.
  • Spoon batter into pan, smooth with a spatula. Bake 40 to 45 minutes, or until a toothpick inserted in center comes out clean. Cool in pan.

  • Unroll and stack 2 pie crusts; gently roll or press together.
  • Fit pastry into a 9 inch deep-dish pie plate.
  • Toss together apples and lemon juice in a large bowl.
  • Combine brown sugar, granulated sugar, and next 3 ingredients; sprinkle over apple mixture and toss to coat.
  • Spoon into prepared pie crust.
  • Unroll and place remaining pie crust over filling.
  • Fold edges under, and crimp; cut slits in top for steam to escape. (I also cover the crimped edges of my crust with foil to prevent burning).

  • Preheat oven to 350°. Let egg yolks stand at room temperature for 30 minutes. Starting 1/2 in. from 1 end, cut apple halves lengthwise into 1/4-in. slices, leaving them attached at the top so they fan out slightly. Set aside., Cream butter and sugar until light and fluffy, 5-7 minutes. Add egg yolks, 1 at a time, beating well after each addition. In another bowl, sift flour, cornstarch, cream of tartar, baking powder and salt twice. Gradually beat into creamed mixture.   • To cook the apples: Place butter and sugar in a large fry pan over low-medium heat. Stir to dissolve sugar. Add apple slices and cook for 8-10 minutes or until apples are lightly caramelized. Remove apples from pan and let cool completely.
  • To make the cupcakes: Preheat oven to 325°F Line 24 4-fl-oz-capacity muffin wells with paper liners.
  • Sift together flour, baking powder, cinnamon and salt. Set aside dry ingredients.
  • In the bowl of a stand mixer, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Scrape down the sides if the bowl occasionally. Beat in the vanilla and grated zest.
  • On low speed, add the flour mixture and mix until flour is barely incorporated. Add the milk and mix until just smooth.
  • Divide the batter among lined muffin wells, filling each well about 2/3 full. Top with the apples.
  • Bake at 325F until a cake tested comes out clean, about 15-20 minutes. Remove from pan and cool cupcakes on cooling racks. Make sure cupcakes are completely cooled before frosting.

  • Put the apples in a large bowl, add the lemon juice, and toss to coat.

  • Peel, core, quarter and slice the apples very thinly.
  • Set aside.
