GREEN SALAD WITH POMEGRANATE

Nutritious pomegranate seeds give this healthy green salad a burst of flavor.

Green Salad with Pomegranate image

Steps:

  • In a medium bowl, whisk together vinegar, orange juice, orange zest, and pomegranate molasses; slowly whisk in olive oil to form an emulsion. Season vinaigrette with salt and pepper.
  • Place greens and pomegranate seeds in a large bowl; drizzle with vinaigrette and toss to combine.

2 tablespoons rice-wine vinegar
Juice of 1/2 orange
1/4 teaspoon grated orange zest
2 teaspoons pomegranate molasses
1/3 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
8 to 10 cups mixed greens, such as bibb lettuce, green leaf lettuce, and baby arugula
Seeds from 1/2 pomegranate

Pomegranate and Bitter Green Salad image

Steps:

  • Place the walnuts in a small saute pan with the sherry and sugar. Cook over high in heat, stirring constantly with a wooden spoon until the sherry and sugar caramelize on the walnuts. Set aside to cool.
  • To make dressing, mix the olive oil, balsamic vinegar, champagne, mustard, and sea salt in a mixing bowl until smooth and creamy.
  • Place the lettuces into the bowl, top with the mango and pear, drizzle with about 1/2 of the dressing, and toss. Then add avocado slices, crumbled pieces of blue cheese, candied walnuts, and pomegranate seeds.
  • Drizzle the remaining dressing and serve immediately.

Steps:

  • Whisk together the tangerine juice, garlic and balsamic vinegar in a bowl. Add salt and pepper to taste. Slowly stream in the olive oil while whisking.
  • In a large bowl, combine the kale, tangerine segments and walnuts. Toss with some dressing and season with salt.
  • Transfer the salad to a serving platter and sprinkle the pomegranate seeds over the top. Serve.
