HOUSES OF PARLIAMENT MARINADE FOR CHICKEN OR PORK

While going through some old binders, I found this recipe in a booklet put out by HP. And yes, HP does stand for Houses of Parliament (the picture you see on the bottle). I don't know about its availability in the U.S., but in Canada a bottle of HP sauce is just about as common as ketchup -- all restaurants have it on hand, and it's in most homes.

Houses of Parliament Marinade for Chicken or Pork image

Steps:

  • In a mixing bowl, whisk together HP Sauce, wine, oil, worcestershire sauce and garlic.
  • Place chicken in a dish, pour marinade over, cover with plastic wrap and place in the fridge for at least 4 hours.
  • After marinating is done, drain off marinade and grill or broil chicken until done.
  • If desired, place marinade in a small pot, bring to a boil, let boil for 2 minutes, then use as a basting sauce for chicken (do not use straight from the fridge as there is a danger of bacteria; boil first).

1/4 cup HP steak sauce
1/4 cup dry wine (red or white, your choice)
2 tablespoons olive oil
1/2 teaspoon Worcestershire sauce
1 clove garlic, minced
4 boneless skinless chicken breasts (or 4 pork chops)

AMAZING PORK CHOP OR CHICKEN MARINADE

This recipe came from my sister-in-law Denise who is an awesome cook, mother and wife! Originally we were using it only for pork but last night I had boneless, skinless chicken breasts thawed and thought, "why not?" The brown sugar flavor really came through with the chicken. I'm guessing it would also be great with venison. I often double the marinade for plenty to boil and pour over the grilled meat.

Steps:

  • Mix all ingredients together. Marinade 4 Pork Chops or 3-4 Boneless, skinless chicken breasts for 1-2 hours, then grill.
  • Boil any leftover marinade for at least 5 minutes and pour over grilled meat.

Great in a slow cooker if you prefer, for an easy dinner without the grill. Be SURE to wear gloves when handling the hot peppers.

Easy Jerk Chicken or Pork Marinade image

Steps:

  • In a food processor combine all of the ingredients except for the soy sauce and vegetable oil, and process to a coarse paste.
  • With the machine on, add the soy sauce and oil in a steady stream until combined.
  • Pour marinade into a large ziplock bag and add your meat.
  • Marinate overnight and let your meat come to room temperature before grilling.
  • If using the crock pot option, add sauce to meat when you place it in the cooker and cook on low heat setting.

This recipe comes from my Uncle Tommy. He used this recipe to marinate chicken kabobs and served them over yellow rice. One tip he gave me was to put a little of the marinade in a dish with the onion halves and microwave for a minute or two. It softend them up before putting on the skewers with the rest of the meat and veggies.

Chick-N-Pork Marinade image

Steps:

  • Mix all ingredients in large zip-lock type bag by shaking vigorously.
  • HINT: I use a Magic Bullet-type chopper/blender to mix/chop all marinade ingredients & pour in bag.
  • Add chicken &/or pork of choice (6-8 med chicken breasts or chops), seal bag well & shake to distribute marinade with meat.
  • Marinate at least 4 hours in refrigerator, but overnight is the best!
  • Bring chicken/pork to room temperature before cooking.
  • Remove from marinade & grill or broil to desired done-ness. (apprx 7 mins each side, on grill, for medium boneless chicken breasts or 3/4 inch pork chops = 14 total minutes).
  • May also freeze batches of chicken or pork in marinade then thaw & cook as usual.
