BLUE CHEESE CHICKEN
My husband created this dish on Valentine's day our second year of marriage. We didn't have a lot of money and he wanted to create something special for me. It has been a favorite ever since. Easy to make and delicious!

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Stir cream cheese and blue cheese together in a bowl. Beat egg in a separate bowl. Pour bread crumbs into a third shallow bowl.
- Spread cheese mixture over each chicken piece. Roll each piece of chicken around filling; dip into egg and press into bread crumbs until coated. Arrange chicken rolls on a baking sheet or baking pan.
- Bake in the preheated oven until no longer pink in the center and the juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Cheese mixture will start to run out when done. Serve chicken over cooked rice.

HERBED BALSAMIC CHICKEN WITH BLUE CHEESE
This dish requires just four ingredients (aside from oil, salt, and pepper). Serve with an arugula salad.

- Place chicken in large resealable plastic bag. Whisk vinegar, 3 tablespoons oil, 1 1/2 teaspoons coarse salt, and 1 teaspoon pepper in small bowl. Add to chicken; seal bag. Chill 2 hours, turning bag occasionally.
- Prepare barbecue (medium-high heat). Brush grill rack generously with oil. Arrange chicken on grill. Sprinkle with herbes de Provence, 1/2 teaspoon coarse salt, and 1/2 teaspoon pepper. Grill chicken until cooked through, about 6 minutes per side. Transfer to plates; top each with slice of cheese.
- Sold in the spice section of supermarkets and at specialty foods stores.
KEY LIME CHICKEN LA PALAPA
Steps:
- Preheat oven to 425 degrees F.
- Using a hot pan, saute the shallots and ginger in the butter for approximately 3 minutes. Add the key lime juice, white wine, honey, salt, and pepper. Reduce the mixture by 50 percent and remove from heat. Brush the glaze over the chicken or chicken pieces. At this point the chicken may either be roasted in the oven or cooked on a grill.
- For the garnish, heat the olive oil in a skillet. Add the portobellos, peppers, lima beans, balsamic vinegar, and salt, and pepper and saute for approximately 5 minutes.
- To serve, place the chicken on a platter or individual plates and surround the chicken with the cooked garnish.
KEY LIME-BLUE CHEESE CHICKEN
Like all fun discoveries, this dish was created by accident: I made it on a whim while vacationing in Key Largo, Florida, out of "whatever was in the refrigerator." But who would have guessed that blue cheese and key lime are divine together?! This dish can be made with any limes, but Key Limes are sweeter and more fragrant. We also learned that partially grilling the chicken added a lot to the flavor!

Steps:
- Marinate the raw chicken breasts in the lime juice for at least 1 hour. Save the marinade.
- Using a large skillet, sauté the onions in the margarine/butter until caramelized. Then remove the onions, leaving the oils in the pan.
- Use a grill (or the skillet) to cook the chicken breasts until they are halfway done (still pink in the center). Remove the chicken from heat and let them cool enough to handle.
- Cut a horizontal slit in each breast to make a pocket. Fill the pocket tightly with the blue cheese crumbles, and secure the chicken with a toothpick.
- Put the stuffed chicken breasts back in the skillet, and add the leftover lime juice marinade to the pan. Cook on medium-low heat until the chicken is done and the cheese is melted (about 10 min.) When it's time to flip the chicken breasts, remove the toothpicks.
- Right before serving, put the sautéed onions back in the pan, and add the mushrooms, capers, yoghurt, and parsley. Stir them into the sauce, and then taste the sauce: Add salt or pepper if desired.
- When serving, top each serving of chicken with the mushroom/onion sauce.

- Tip the rice into a large pan with 600ml water, the bouillon powder and bay. Cover, bring to the boil, then reduce the heat and simmer for 20 mins. When the rice has been cooking for 10 mins, heat the oil in a large frying pan or wok, and stir-fry the chicken for a couple of minutes over a medium-high heat until just cooked. Remove from the pan, then fry the leek until starting to colour. Add the courgette, stir-fry for a few minutes more, then add the peas.
- When the rice is cooked, tip it into the vegetables along with any liquid from the pan. Return the chicken to the pan or wok, then cover and cook for 5 mins more. Stir in the walnuts and cheese, and serve hot.

- Coat chicken breasts with egg, and dip in bread crumbs. Place on a wire rack, and allow to dry for about 10 minutes.
